Looking for super detailed Brazilian Stroganoff recipe

Hey folks,

I've been trying to recreate a childhood food of my husband, which is a Brazilian Stroganoff. I've found many recipes online, but none seem to be right. I've never had it, so I don't know what it's supposed to taste like.

The main ingredients for the sauce seem to be ketchup, mustard, and creme fraiche (I'm clueless as to the ratios or how to make that tasty). Apparently the sauce needs to be pretty thick and brown-grey in colour.

My question is for the most detailed recipe ever. Specific ketchup and mustard brands, amounts in weight, which kind of beef, how much fat? Also which kind of mustard? French, English, yellow, Dijon? 'To taste' isn't really helpful because I don't know what it's supposed to taste like.
