Looking to spice up a recipe for French Beef Stroganoff

This recipe comes from a Julia Child cookbook. It's one of my family's favorite meals, and I have enjoyed it everytime I or someone else has made it. However, I am looking to see if there is anything I can do differently to make this dish any better. The main thing I am looking to improve is the beef itself. Most of the time, I find that not much of the sauce is absorbed into the beef, despite the fact that the beef is basted in the sauce. We season the beef with salt and pepper, but nothing else beyond that. What can I do differently to make this dish better?
