I'm thinking about buying a new Cookbook and wanted to know your opinions about these tree books

So I'm set on buying a Mark Bittman Cookbook after using How to Bake Everything and following on social media.

I'm thinking about buying either How to Cook Everything (very tempting due to its fame, and the huge amount of recipes, but also I'm not sure if I would be interested in that many), VB6 (because I'm interested in reducing meat and diary from my diet and wanted to have different recipes, but I'm not sure how much is recipe and how much is talk about the method) and VB6 The Cookbook (I like that this has more recipes, but I'm not sure if I need VB6 first).

I am a pretty good homebaker, and I cook a lot, but this would be my first cookbook. Mostly I look for recipes online or follow my mom's old recipe binder, but after buying a baking cookbook and finding it incredibly useful, I'm really interested in having a physical cookbook.
