Birthday Party Menu!

Hey Folks,

I'm celebrating my birthday on Saturday (one of two real celebrations I have a year) and I've narrowed down the food I'll be making to some level but I need some help with the finishing touches. Turning 27 and it's been a huge year for me (engaged, serious career growth, hoping to buy a house end of year, etc) so I wanna do it right.

For background: Pretty informal..probably 25ish people. some will bring food as well. We will all be very drunk. The night will end in shitty pizza on South st no matter how good or how much food there is. Celebration will go from probably 11am - 3am. Someone is bringing their dog for part of it so any advice on what I can do for the doggo would be good too. There will also be 1-2 Vegetarians/Vegans.

Equipment: Sous vide, Roasting Pan, Sheet pan, A non-stick sauce pan I've had since I was 19, a new cast iron set I found in my folk's basement (still in box..from some sale x years ago).

Plans: Build it yourself tacos with multiple sauces so you can try different flavors!

Proteins: I have a 3.5lb pork shoulder in the sous vide @165 right now that will be done by tonight (lime onions, garlic powder salt). After that will go a ~2lb chuck roast. Then some ground beef and maybe chicken. Also I'll probably get a bunch of mushrooms (maybe portabellas? ) for the veggie folks. I have some ribs int he freezer I can throw in too if it makes sense.

Toppings: I'll probably make some queso in my knockoff instapot and then chop up lettuce tomatoes onions cilantro shredded cheese etc. Need suggestions on other toppings depending on the sauces!

Sauces: This is where I need the most help! I'm keeping the proteins kind of generic so we can just mix up whatever toppings and sauces we want and have good variety throughout the night. I was thinking something mexican, something mex-american (like the classic taco sauce), something koreanish, and something indianish. Hit me with ideas and recipes please!

I'm going to be prepping stuff in between cleaning, buying booze, and working (from home today and tomorrow)!
