Chocolate Whoopie Pies

  • Ingredients
  • 1 C Shortening
  • 1 C Sour Milk
  • 2 C Sugar
  • 4 Eggs
  • 1/2 C Hot Water
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 3/4 tsp salt
  • 1 Tbsp Vanilla
  • 1 C Cocoa
  • 4 C Flour
  • Icing
  • 1 1/2 C Milk
  • 2 Tbsp Cornstarch
  • 2 tsp Vanilla
  • 1/2 C Shortening
  • 1/2 C Butter
  • 1 C Granulated Sugar
  • Instructions
  • In a medium size bowl combine flour, baking powder, baking soda, salt, and cocoa
  • In a large bowl mix the eggs and sugar until they are a light yellow color
  • Create the sour milk by adding 1 tablespoon of vinegar to 1 Cup milk and let sit for 5 to 10 minutes
  • Add the shortening, sour milk, and vanilla to egg and sugar mixture
  • Slowly add dry ingredients to wet ingredients
  • Once all combined add hot water
  • Scoop batter onto a parchment lined cookie sheet and bake at 400° for 9-11 minutes
  • I used a 2" cookie scoop and it made 22 Whoopie pies
  • Icing Directions (I suggest making icing first)
  • You may need a double batch of icing for this recipe depending on how full you fill your whoopie pies. I filled 17 whoopie pies with a single batch of icing and used about 2 TBSP per whoopie pie.
  • Cream together butter, shortening, vanilla, and sugar for 10 minutes
  • Over medium/low heat in a sauce pan heat 2 Tbsp of Cornstarch and milk stirring constantly
  • Let milk thicken. It will take about 10 minutes
  • Let milk cool and then add to creamed mixture
  • Beat until smooth.
  • It will seem like the milk won't mix but it will. Take your time. Keep scraping the sides of the bowl and mix on medium speed until it incorporates. It could take 5 to 10 minutes, It will be worth it. Trust me!!

[xpost r/cooking] For a batch of tins of sardines in tomato sauce. What do?

sardines

I flaked it up in a bowl, added homemade oliveoil mayo, a chopped chilli salt & pepper and 5 drops of tobasco. Had it on a bed of lettuce and spinach.

What else can be done? Post what you like, but personally i don't eat grains, so no sardines on toast for me, no matter how tasty it sounds.

Ginger marinated shitake I put on the menu at work today (vegan/vegetarian)

200g dried shitake mushrooms Soy sauce to taste Ginger to taste (i use about a thumb sixed wad, thin sliced) Sweetener to taste (honey if you arent vegan, sugar, maple syrup, be fuckin creative here, sugarbeet juice?) 100ml vinegar, i use chinkiang but you can dilute 1pt balsamic into 2pts white wine/apple Lapsang souchong tea if you want, you can substitute or skip entirely.

Chuck the shrooms in a pot with a lid and set aside.

In a separate kettle or w/e, boil enough water to cover the shrooms.

When water boils, cover the shrooms and cover the lid.

Go do something else for 20 min.

When you get back, drain off all but 2cups of the water, use what you dont need as stock for something else. It's tasty fucking shitake stock.

Boil more water and make very strong lapsang tea if youre doing that bit.

Dump the vinegar, 2cups you saved of shroomjuice, ginger, and mushrooms back in the pot over medium low heat, covered. Add the lapsang tea (or water) until there is enough to cover the mushrooms, which will float so dont go too cray here.

Sweeten and soy-en to taste, let em cool and put them in a jar with the juice in a fridge and they'll keep for a week, if you slice the ginger thin it's a super interesting alternative to pickled sushi ginger.

Eat these cold, grill them as vegan meat, dumpling stuffing, vegan sausages, sandwich or sushi fillings, they're pretty versatile.

Save the juice too, you can use it in the next batch and just add a little of the other ingredients to save the flavor, or as a marinade for tofus, meats, etc.

For the gravy: *500 gms roughly slit tomatoes *100 gms roughly cut onions *1 tbsp garlic paste *50 gms cashew *1 tsp kasoori methi *1/2 tsp garam masala *4 tbsp sugar *2 tbsp kashmiri chilli powder *5 tbsp butter 3 tbsp cream *2 tbsp malt vinegar / 1.5 tbsp White Vinegar *Salt to taste

Directions 1. Marinate the chicken with ginger paste, garlic paste, red chilli powder and salt and keep it aside for 15 to 20 minutes 2. In a pan heat some oil then fry the marinated chicken pieces in it,once done place it into a bowl. 3. In the same pan add onion, oil, spoonful of butter and once the onions are cooked add tomatoes and cashew nuts 4. Add some water and garlic paste, salt, malt vinegar, sugar, garam masala powder and chilli powder. Evenly mix it and let it simmer for 15-20 minutes - Churn the mixture into fine puree. 5. Strain it back into the same pan make sure there is minimal wastage. 6. Add butter, cream, chicken and kasoori meethi and let it simmer for 5-7 minutes. 7. Garnish it with cream and kasoori meethi Butter Chicken is ready to be served!

Favorite Breakfast Recipe: Cheesy Ham and Eggs on Toast

Ingredients:

 1. 4 Eggs 2. Shredded cheddar cheese 3. Thin sliced ham (I used honey ham from the deli) 4. Bread (Good ole’ white bread works just fine!) 5. Pam cooking spray 6. Salt and Pepper 7. Spinach 8. Small spoon 

Instructions:

1. Preheat oven to 350. 2. Use a greased cookie sheet at work surface so you don't make a huge mess. 3. Take a small spoon and create a well in the bread. Gently press the spoon all round the edges of the bread until the entire middle is a perfect little bowl for your ingredients. Season your bread with salt and pepper generously, but not excessively. 4. Next, take a slice of your ham and cut it into quarters. Take two quarters of ham and place them into the little well you created in the bread. 5. Now, carefully crack an egg on top of the ham. It will spread but it should stay nicely on top of the ham. Season the egg with salt and pepper as well. 6.Layer shredded cheese along the edges on the bread. 7. Garnish with very finely chopped spinach. 8. Put these into the oven for 20 minutes or until the cheese is a golden brown and the eggs are nice and cooked, but still a little gooey. 

That’s it! These are really a pretty quick breakfast and there are a ton of different ways you could make it your own.

  • Crust
  • 18 Oreos finely crumbed
  • 2 TBSP melted butter
  • Filling
  • 4 8oz Cream Cheese
  • 12oz Melted Dark Chocolate
  • 1 C Sugar
  • 4TBSP Kahlua
  • Topping
  • 2 C Heavy Whipping cream
  • 2 TBSP Sugar
  • 2 to 4 TBSP Kahlua
  • Instructions
  • Take 18 Oreos and blend them into fine crumbs.
  • To the Oreo crumbs add melted butter and stir until it resembles wet sand.
  • Place the crumbs into a greased 9” spring for pan.
  • Cover the entire bottom of the pan and press firmly.
  • Bake the crust at 350° for 10 minutes.
  • Let the pan cool completely before filling.
  • Take your cream cheese (let it sit out in room temp approx. 30 min) Cream together in the mixer.
  • Next, melt 12oz of dark chocolate chips.
  • To the cream cheese add the melted chocolate, sugar, and Kahlua. Mix thoroughly.
  • Place the filling in the spring form pan on top of the crust.
  • Smooth out so the filling is even and flat. Chill in the refrigerator for 4 to 24 hours
  • Once the Cheesecake has had time to set up, remove from the spring form pan and then add the whipped topping.
  • Whip on med/med high until stiff peaks form.
  • You can easily just spread on top of the cheesecake for a more rustic look or pipe it on top for a fancier up do

Delicious Mac ‘N’ Cheese recipe

Ingredients

1 brown onion 40 g cheddar cheese 100g crème fraiche 40g Italian hard cheese 150g macaroni 30g panko breadcrumbs 80g tenderstem broccoli 150g tin of sweetcorn 1 vegetable stock cube Olive oil Salt & pepper 

Preparation

Preheat the oven to 240°C/ 220°C (fan)/ 475°F/ Gas 9. Boil a kettle. Peel and finely chop the onion. Heat a large, wide-based pan (preferably non-stick) with a drizzle of olive oil over a medium heat and once hot, add the chopped onion with a pinch of salt and cook for 5 min or until it’s softened Meanwhile, add the macaroni to a pot of boiled water with a large pinch of salt and bring to the boil over a high heat. Cook the macaroni for 5 min Meanwhile, reboil a kettle. Chop the tenderstem broccoli roughly. Grate the cheddar cheese. Grate the Italian hard cheese Once the macaroni has been cooking for 5 min, add the chopped tenderstem broccoli and cook for a further 2 min or until it’s tender. Once done, drain the macaroni and broccoli Meanwhile, dissolve the vegetable stock cube in 150ml boiled water. Drain the sweetcorn Add the vegetable stock to the softened onion and bring to the boil over a high heat. Add the drained macaroni and broccoli to the pan with the grated Italian hard cheese, half the grated cheddar, and half the crème fraîche Remove the pan from the heat and add the drained sweetcorn. Season with a generous pinch of salt and pepper and give everything a good mix Transfer the macaroni mixture to an oven-proof dish. Top with the panko breadcrumbs and remaining grated cheddar. Put the dish in the oven for 10 min or until golden and bubbling Serve the mighty mac ‘n’ cheese. Enjoy!

This recipe for butternut squash pasta using linguine pasta in a creamy butternut squash sauce, topped with chicken, bacon and herbs. An easy and delicious dinner that's perfect for fall!

Ingredients 10 ounces dry Barilla Classic Blue Box linguine pasta 1 pound of cooked chicken breasts (grilled, roasted, rotisserie, etc), sliced 1/2 cup cooked crumbled bacon 1 1/2 cups butternut squash puree (fresh frozen or canned).
1/4 cup heavy cream 1/3 cup freshly grated parmesan cheese salt and pepper to taste 1/4 cup chopped parsley

Instructions Bring a pot of salted water to a boil; prepare the pasta according to package instructions, cooked to al dente. Drain the pasta, reserving 1/4 cup of the cooking liquid, and return it to its cooking pot.

Place the pot over medium heat and add the butternut squash puree, heavy cream, parmesan cheese. Stir to coat the pasta evenly; season to taste with salt and pepper.

Cook for 3-4 minutes, stirring occasionally, until sauce is heated through and is starting to thicken. If you prefer a thinner sauce, add the cooking liquid, one tablespoon at a time, until desired consistency is reached.

Arrange the chicken and bacon over the top of the pasta and sprinkle with parsley. Serve immediately.

Notes: To make fresh butternut squash puree, steam 2 cups cubed peeled squash until tender then puree in a food processor with 2 tablespoons water. Season with salt to taste.

  • 1 Angel Food Box mix
  • Filling
  • 1 C Vanilla Pudding
  • 1 C Whipped Topping
  • 1/2 C Flaked Coconut

  • Instructions
  • To start, mix the angel food cake per the box instructions.
  • Scoop enough batter into the cupcake liner to fill it about ¾ of the way. I will say that this box mix will make almost 48 cupcakes, however, the recipe I am giving you will finish up to 24 cupcakes.
  • Once the cupcakes are filled, bake at 350° for about 15 minutes.
  • Prepare the filling.
  • Combine 1 cup of whipped topping, 1 cup of vanilla pudding, and ½ to 1 cup flaked coconut.
  • Prepare the topping.
  • Take about ½ to 1 cup of flaked coconut and toast it until it is golden brown. You can either do this in your oven or on the stove top. The other half of the topping is simply the whipped topping.
  • Once your cupcakes have cooled completely it is time to fill and top them.
  • Use a knife and put a slit down the middle of the cupcake to create a hole for the filling.
  • Using a pastry bag or ziplock bag, fill the cupcakes.
  • Ice the top with the left over whipped topping and then top with the toasted coconut.

Icelandic cod casserole the way I do it (professional cook in iceland)

500g cod (this is good for using frozen cod that has lost its texture, dont shell oht for fresh on this one) 350g boiled potatoes ~400ml FRESH whey (important this is fresh, old whey has a sour taste) i like goat 200g óðalostur/havarti cheese (you can use most nordic style white cheese) 125g butter Half a yellow onion 3-4tbs flour (i use buckwheat, but w/e) 4-6tbs milk (sheep or goat or cow or whatever) Salt Pepper Dried thyme (preferably blóðberg icelandic thyme if you can get it)


Marinate cod overnight in fridge in enough fresh sheep or goat whey to cover it and a few big sprigs of dried blóðberg/thyme. No salt in the whey.

Light your grill, put a little wet birch bark/oak chip mix on them when the kolin burns evenly but is not flaming.

You want to keep the fish off direct heat so it cooks through but stays really moist, getting enough smoke to brown the outside but not overcooking it.

Take it off heat and shred it, put it aside.

preheat your oven to 210c with a rack mid height.

Mince onion

In a pot on medium heat, melt butter and keep it movingand from sticking while it comes to a boil. When it starts to brown, add the onion, thyme, some black pepper and salt.

As the onions begin to carmelize, sift in flour and whisk at the same time so it doesnt go all clumpy (easier with 2). When its basically thick onion gravy, remove from heatc mash in the shredded fish and potatoes.

Transfer to a 20x20cm glass baking dish and top with cheese (i like to cut it into strips 1cm square and lattice them, this way the edges burn a bit and add texture/flavor).

Add a little salt on top (some people swear by a little normal sugar too) and put in oven.

Turn down to 180 and bake until the cheese and potatoes on top is turning golden, i like to let mine get a little burned even, maybe 10-12 min, just watch it.

Take it out, let it sit for five min and serve. Traditionally served with danish style ryebread and butter.

  • Icing Recipe *1 C Shortening *4 C Powdered Sugar *4 Tbsp water *2 Tbsp milk
  • Cake *Pre heat oven to 425° *In a large bowl combine and mix all wet ingredients EXCEPT HOT WATER *In medium size bowl combine dry ingredients *Add ½ dry ingredients to wet ingredients and mix. Repeat with 2nd half of dry ingredients. *Add Hot water and mix *I used a 2” cookie scoop for the whoopie pies. Use a lightly greased or parchment covered cookie sheet. *Bake for 6 to 7 minutes.
  • Icing *Using a mixer combine shortening and powdered sugar *Add powdered sugar 1 cup at a time adding 2 Tbsp of water with each cup and ending with the 2 Tbsp of milk *On med/high speed mix icing for 5 minutes *Scrape sides of bowl with spatula *On high speed mix icing for another 5 minutes *Fluff with spatula

Indian flatbread name and recipe?

Hi guys, I love flatbreads and have been trying to make them, but there is one I just cannot remember the name of, and thus can't find the recipe. My mom's indian colleague used to make them for me when I was younger, and I absolutely loved them. The best i can do is give a description (or try,from what I remember), and hope someone recognizes it. I've asked indian friends but none of them seem to know what I'm talking about.

They were small (about palm sized) ,thin and very soft and fluffy. You could pull the middles apart, they were so airy. Like a naan, but smaller, not as "chargrilled" , still not sure if they were maybe fried? as they didn't have the crispiness or "burn marks" you usually have on naan or chapati.

Nothing I have looked up matches this, they tend to be either naan or chapati or parantha (sp??) which are all harder in texture than this.

I don't know if that's an accurate enough description, but anything similar is very welcome, dying to have something light and soft with my next curry.

I've been trying for the longest time to bake a nice chocolate cake that's both moist AND fluffy. I can get either or down, but I can never get it down in one cake. It's either fluffy and dry or moist and dense. Is there a way to get both into one cake?

[request] enchilada recipe. From scratch. And I mean scratch.

I spent the last 10 minutes looking for enchilada recipes online. I read a lot of people life stories. Almost all of them at some point ask for an 'ingredient' that is actually several dozen ingredients pre-prepared. Can someone please just hook me up with a nice enchilada recipe? Homemade Spicy Fusion Beef Burgers with Onion Rings recipe

Beef mince can be substituted with chicken mince and sriracha hot sauce can be substituted with your favorite hot sauce. But I personally recommend sticking to the original recipe as Beef is an excellent source of various vitamins and minerals. These include vitamin B12, zinc, selenium, iron, niacin, and vitamin B6

Written recipe: INGREDIENTS: Burger meat: 1/2 kg Beef Mince 6 Garlic cloves 5 Green chillies 1/2 Thumb size Ginger 1 slice of Bread 10 Kariyapak or Curry leaves 1/4 bunch Kothmir leaves 1/2 teaspoon Nutmeg powder/Ground nutmeg 1 teaspoon Salt (adjust based on taste) 1/2 teaspoon Cayenne pepper 2 teaspoons Crushed black pepper Lemon/Lime juice from 1 lime 1 teaspoon Butter Cheese slices (minimum 1 per burger patty) Oil for frying Sauce: 2 tablespoons Mayonaise (full fat) 3 tablespoons Cheese sauce (preferably Kraft) 1 teaspoon Horseradish paste 2 teaspoons Crushed black pepper 1/2 teaspoons Cayenne pepper 1 teaspoon Mustard sauce (optional/recommended) 1 teaspoon Sriracha hot sauce (optional/recommended) Fried onions: 1/2 big White onion 2 tablespoons Corn flour 3 tablespoons Tempura batter flour/ Tempura flour/ Tempura batter/ Tempura 1/2 can cold Soda (can be substituted with cold beer) 1 teaspoon Salt (adjust based on taste) 1 tablespoon Sriracha hot sauce 1/2 teaspoon Cayenne pepper 1 teaspoon Crushed black pepper (recommended) Oil for deep frying Others: 1 pack Burger buns 1 tablespoon Butter (per bun) 1 teaspoon Sriracha hot sauce (per bun) Tomato slices (optional) Lettuce (optional)

METHOD: Step 1: - Chop the garlic cloves, green chillies, ginger, bread slice, kariyapak or curry leaves and kothmir leaves into tiny pieces - Mix the above mixture with the washed mince, nutmeg powder, lime/lemon juice, salt, cayenne pepper and the crushed black pepper thoroughly - Take out a small piece to fry for tasting for lack of salt of spices - Adjust the salt and spices accordingly and let the meat marinate for minimum 30 minutes Step 2: - Mix all the ingredients mentioned above and set aside (Mayonaise, Cheese sauce, horseradish paste, black pepper, cayenne pepper with optional mustard and sriracha hot sauce) - Toast the buns on the top, middle and bottom and let it cool down. Apply the butter on 1 side and the sauce on the other side Step 3: - Chop the onion in big thick circles - Mix the corn flour, tempura, salt, sriracha hot sauce, cayenne pepper, black pepper and the cold soda/cold beer Tip: Tempura batter needs cold liquid as it helps absorb less oil and make it more crispy - Add the onion rings to the batter and give it another mix - Heat oil in a pan for deep frying. The level of the oil should be atleast 1 inch thick - Fry the onion rings till they are golden brown and then take them out and set them on paper towels to absorb the excess oil Step 4: - Take the meat (the size of your palm) in your hand. Mash it together and roll it into a big ball. Now flatten it to the size of your palm. Make sure the mixture is tight and not falling apart. That is 1 patty. Do the same for the rest of the meat. - Heat a pan with oil on high heat. Once the pan is smoking hot put the patties on the pan - Fry each side on high heat for 30 seconds, then reduce the temperature to medium and fry on each side for 1 minute. The patty should be firm and no blood should come out when pressed slightly - Add the butter on the top of the patty. Spread it out all over the patty then turn it. Now add the cheese slices on top and cover with a lid for 30 seconds so that the cheese melts around the burger - Overall each side would have cooked for 3-5 minutes - Let the patty rest without heat Step 5: - Put the patty on top of the bottom half of the bun. Then top with tomatoes or lettuce (optional) and a few onion rings. Put the top of the bun and place 1the rest of the onion rings on the side of the burger and serve hot

What did I do last night bars (xpost from BestofLegalAdvice)

A couple users in BOLA were sharing stories about trying to cook on Ambien and I decided to craft a recipe based on the ingredients. It got a little love there, so I figured I'd share it here. Please feel free to critique; I haven't actually made this (but I intend to try it this weekend when I have time).

In the tradition of BOLA - IANAC I am not a (professional) cook

Oh crap, what did I do last night bars

1 cup melted butter (2 sticks), reserve 2 Tbsp

1 cup brown sugar

.5 cup maple syrup

2 eggs beaten

1/4 cup heavy cream

2 tsp vanilla extract

pinch salt

1.5 cups chopped pecans (toasted)

2-2.5 cups Crispix cereal

In a medium/large saucepan combine butter, maple syrup, and half the brown sugar. Slowly heat to medium and stir until smooth. Raise heat slowly until mixture bubbles and then remove from heat. In a mixing bowl combine eggs, cream, vanilla, salt, and slowly mix in remaining brown sugar with a whisk. Combine with saucepan, mix until even throughout, and return to low heat.

Grease a 13x9 baking pan. Preheat oven to 350. Place approximately 1/3 to 1/2 of Crispix in a mixing bowl and crush, then add reserved butter and mix. Spread evenly in baking pan to create a crust. In saucepan add remaining Crispix and pecans, mixing thoroughly. Pour mixture evenly on prepared crust. Sprinkle additional Crispix on top if desired. Bake in oven for 25-30 minutes. Remove and allow to cool completely before cutting into bars.

[REQUEST] Carolina Reaper Salsa Recipes?

I'm growing some reapers and I'm just trying to figure out what exactly to do with them. I have 3 plants, and they're producing fairly well. Any ideas on salsa recipes? I've been thinking Tomatoes, Garlic, Onion, Jalapeños, Habaneros, A reaper, of course, and cilantro. I may make a batch thats sweeter with either strawberries or mangoes. I'd also like to keep the bright red coloring of the reaper apparent in the sauce.

So the Polly Waffle is an Australian chocolate bar that wasn't being eaten until it was discontinued in 2009, now everybody wants to get their hands on it. I do as well, but they don't exist anywhere anymore.

So, why not make it myself? Well, no recipe exists that I can find, so I have to start from scratch.

Here is an image of the middle of the Polly Waffle. It's described as "a waffle wafer tube filled with marshmallow and coated in compound chocolate". Now I daresay that "wafer tube" is similar to a wafer stick, hollowed out, and either stuffed with marshmallow, or, more likely, made and allowed to set around a shaped marshmallow. I'd say it is then dipped in chocolate.

Does anyone have any idea how i can go about creating a recipe? How difficult would it be to make the marshmallow, shape it into a tube, cover it in wafer, then dunk in chocolate?

For this sunny orange colour, we prefer to use soda water which gives a nice and fizzy texture adding more to the rich color of the cuddles on beach mocktail.

Ingredients

(measuring cup used, 1 shot = 30 ml)

1 Cup Ice Cube 2 Shots Orange Juice 1 Shot Cranberry Juice 1 Shot Soda Water Orange (fruit) wedge – for garnishing Step by Step Cuddles on Beach Mocktail Recipe: 1: Take an empty Wine glass and take an extremely chilled ice cubes. Now Put some ice cubes in glass so that the glass is half filled with ice cubes.

Easy/cheap recipes for college student?

I'm currently living off campus for the first time with a few other roommates and I really need help with my food situation. Ive recently been eating nothing but mac n cheese and toaster strudels so its safe to say I need to start eating some real food. I used to just use a food card at my school, but now that I'm off campus I want to save some money and try making food myself since I have a kitchen and stove now. I'm looking for some stuff on the cheap and healthy side. I have a crock pot and rice maker if that helps. Ive never used the crock pot in my life though. My cooking skills are slim to none and my roommates are in the same boat as me. So preferably nothing super complicated for cooking. I'm not very picky, I love a lot of asian or rice based foods. I don't eat much meat except chicken. And I really love pasta however I should probably take it easy on pasta since that's all I've been eating.

Request: Some kind of "Learn to cook in 365 days" book

I have no idea how to cook other than following isolated recipes, but one thing I've been sensing is that cooking really boils down to a few skills and learning how to use them together. So I'm picturing a book that builds on itself and factors for slowly stocking the spice shelf/pantry, so day one would be a very simple recipe with only a few ingredients, day two would use the same "add-ons" in a different way, etc, then in week two you'd add another spice, maybe a new technique, and it'd just build from that so by the end you know how to mix and match your spices, oils, core ingredients and techniques to cook pretty much anything.

Does such a book exist?

In short it'd slowly phase in increasingly complex recipes, but also consider what the grocery list for the week was. I hate buying one spice and never using it again, or a big bag of some vegetable but only having the one recipe that uses it, etc.

Grilled Artichokes

Grilled Artichokes

Easy to prepare, grilled artichokes are an easy and impressive appetizer or side dish.

Ingredients

2 whole artichokes 1/2 lemon

Marinade

  • 3 TBS olive oil
  • 1 1/2 TBS lemon juice about 1/2 of a large lemon
  • 1 clove garlic minced finely
  • 1 TBS rosemary chopped fine
  • 1 tsp salt
  • 3 TBS butter

Instructions

  • Prepare Marinade
  • Combine olive oil, lemon juice, garlic, rosemary and salt and set aside
  • Prepare Artichoke Artichokes will brown where cut quickly, so don't start preparing them ahead of time.
  • Fill a bowl with water just enough to cover the artichokes and squeeze the other half of the lemon into the water
  • Trim the leaves just to cut the points off (optional)
  • Cut of the very tip of the whole artichoke
  • Cut the artichoke in half and scoop out the bristles in the middle with a soup spoon.
  • Immediately drop the artichoke half in the lemon water before you start on the next half.
  • Prepare a pot with a steamer rack over boiling water.
  • Place your artichoke halves on the steamer rack, reduce heat to medium, cover pot and let steam for 20 minutes
  • Prepare your grill.
  • Set aside 2 teaspoons of marinade
  • After 20 minutes, remove the artichoke halves and brush the olive oil marinade over the halves...tucking the sauce between the leaves.
  • Place the artichoke halves, cut side down on the grill and cook for 10-15 minutes.
  • Remove from the grill and serve with butter dipping sauce.

To enjoy the artichokes, pull the leaves off and and use your teeth to draw the meat (closest to the stem) off of the leaf. Eat as is or dip it in your favorite sauce. Once you've enjoyed all leaves, the nugget of meat in the middle...the heart...is pure goodness. Close your eyes and savor.

Butter Dipping Sauce

Place butter in microwave safe container and melt until almost liquid. Add in the reserved 2 teaspoons of herb oil and microwave on medium for another 20-30 seconds. Microwave strengths vary, you don't want it to sizzle and pop...just a slow warming until the flavors meld.

Re-warm as necessary before serving

I bought a jar of pickled beets and then realized I'm not crazy about them (I don't hate them but don't ever have a strong desire to eat them). I've been slowly adding it to salads but that's it. Is there anything else I can add them too to go through this jar more quickly?

What's a good classic Italian recipe that has pasta, vegetables and chicken?

I'm trying to cook something that fits the criteria in the title, but I can't find anything. I'm looking for a one-dish meal. Everything seems to be either "meat and pasta" (e.g. chicken parmesan) or "vegetables and pasta" (e.g. pasta primavera).

Is there a classic recipe out there that fits my criteria? Hopefully also reheatable and quick to cook?

How do I (quickly) get my beans as soft as the ones from a can?

I'm sorry for such a simple question, but I have a lot of bagged beans, and I've followed their instructions on the bag to cook them, but they never come out as soft as the ones straight from a can.

I soak my beans in water for at least 8 hours. Sometimes I replace the water during that period, if I happen to be home and thing about it. Afterwards, I grab the beans that I want to cook, and I place them in a pot on medium to high flame and just constantly add water until they're soft-ish. Even when I got them to their softest that I've yet to taste, they're still not as soft as the ones from a can, and they're very dry.

If the answer is just to keep them on the heat for longer, than I shall do that, but for how long and at what temp? If I need to add something, please share. I've bought a lot of beans because they're cheap, but it's hard to eat cheap if you're unsatisfied with your cooking, haha.

Chicken Penne With Spinach, Ricotta & Basil Pesto

I love chicken & pasta dishes. They are a great combination and go so well with a wide range of sauces to accompany the meal. For this dish, a wonderful spinach and basil pesto sauce provides the real tangy flavour. The chicken and penne are a great combination and perfect base for this dish. The real flavour to this meal comes from the wonderful pesto that coats the chicken and pasta. The pesto is an amazing blend of spinach, garlic, basil, parmesan, olive oil, ricotta and pine nuts. The pesto provides a rich creamy burst of flavour to this meal and is further enhanced by a sprinkling of additional parmesan prior to serving. A very tasty pasta dish!

Ingredients:
• 3 Chicken Fillets breast fillets cut into bite size pieces
• 350 g Penne Pasta
• 200 g Baby Spinach
• 1 clove Garlic crushed
• 1 tbsp Pine Nuts
• 1/4 cup Parmesan cheese grated
• 3 tbsp Olive Oil
• 200 g Ricotta Cheese
• 1/4 cup Basil Pesto
• Salt to season
• Pepper to season
• 1 bowl Iced Water

Instructions:
1. Cook penne pasta according to packet instructions.
2. Cook chicken in a frying pan over medium high heat until browned. Set aside and keep warm
3. Add water to a large saucepan and bring to a boil.
4. Add spinach to saucepan and boil for about 1 minute.
5. Using a clotted spoon, remove spinach from saucepan and place into a bowl of iced water. This process of boiling and then placing in iced water will blanch the spinach.
6. Drain spinach from iced water. I also spin the spinach in a food spinner to remove any excess water, however don't get too concerned if you don't have a food spinner, just try to remove as much water as you can.
7. Once drained, roughly chop the spinach.
8. In a blender, add spinach, garlic, pine nuts, parmesan cheese, oilive oil, salt, pepper, ricotta cheese & basil pesto. Blend until a smooth puree is produced.
9. Drain the penne and add back to saucepan, add chicken and pesto puree and mix to coat both the chicken and pasta with the pesto.
10. Serve and garnish with extra parmesan and pine nuts.

[Request] Looking for a good cajun gravy recipe for shrimp and grits (I think).

I'm looking to recreate a shrimp and grits dish from a place called Boudreaux's Cajun Kitchen. I think I have it mostly worked out, other than the sauce/gravy the shrimp is served in.

The grits are formed and fried (obviously).

As for the sauce, I imagine it begins as a roux with some stock added. After that, I'm completely lost. And I really have no idea how to describe it other than "delicious" and "Cajun."

Typing "cajun gravy recipe" into google yields me nothing other than copycat popeye's chicken gravy recipes, and this is nothing like that.

So, I know it may be a long shot....but any ideas?

Alrighty folks, for those of you without power who are living off the last of the thawing freezer rations and your solar charger, what's your best recipe to date?

Mine : a traditional texas brisket rub mixed 50 50 with Chipotle powder rubbed very thick on "am I sure this steak is still good?"

Cooked medium rare and then smothered with slightly bubbling coconut flavored yoghurt. Washed down with the last of a fifth of Armagnac donated by a fleeing neighbor. Most excellent.

Best Free Recipe Logger Websites?

I cook a ton and have been blogging my recipes on blogspot for years. However, I feel that it's probably an outdated way of keeping track of them and I bet there's some great recipe logging sites out there now. I liked the look of the Recipe Keeper App, but it costs money to sync it and I don't want to risk someday losing everything that I logged (not willing to pay). Would prefer something that displays large photos of the uploaded images, and would be nice to have something that lets you categorize recipes into types. Hope something is out there, thanks! :)

Lady at the grocery store makin me cringe

While shopping today I overheard a woman talking with her 2 teenage daughters about spices.

"we don't need to buy paprika" she said

"It's just a mild form of cayenne and we already have cayenne"

To be fair, until I had good paprika just a few years ago I though paprika was just for adding color, lol.

Anyone have an eastern Carolina slaw (vinegar based) recipe that will impress?

I usually just shred cabbage, carrot, and green pepper... And add cider vinegar, s&p, dry mustard, a squirt of Dijon, and a pinch of sugar. Let sit 24 hours and serve.

It's good... But not really spectacular. Wondering if anyone has any ideas on how to make it a total hit. Additional stuff I could shred and add, spice recommendations, etc.

It'll be paired with smoked brisket and ribs for a labor day cookout.

[Question] Looking for a simple sauce for recipe

I was going to make some crispy baked tofu, broccoli, and Jasmine rice for lunch, but it doesn't seem complete without a sauce.

I'm not really practiced in making sauces, so simpler is most helpful. The tofu is tossed in just olive oil, soy sauce, and cornstarch. I was going to roast the broccoli with just some olive oil and salt. I have honey, soy sauce, olive oil, and typical American kitchen condiments (ketchup, mustard, etc) at my disposal, but I have to get tofu at the store anyway, so I can pick up a few things. Any suggestions?

I made two trays of nachos using 3 pounds of beef and lots of cheese and chips. Are there any good recipies I can turn a left over tray into?

More specifically, half the chips are chipotle flavored, the other are hint of lime. The cheeses are mexican taco blend, and a small ammount of sharp white cheddar. Ground beef with taco mix was the meat, and 2 out of three pounds was made using the "cheesey" mix. I have a slow cooker, oven, microwave, stovetop, and toaster oven. If that helps at all. Looking for a crawfish boil with other sea creatures recipe.

Is this even the right name for what I'm describing? I'm also cooking for three people and this will happen in my kitchen.

I want so use crawfish, Dungeness crab, clams and shrimp (with the head still attached). I also want do to potatoes, corn and sausage. What kind of potatoes and sausage should I use and do I cook those before adding it to the pot or is it served separately?

I'm also looking for how I'm suppose to season it and the cooking process.
