Plant Milk for Cow Milk

I've recently been making the switch to plant based milks recently, mainly because it just agrees with my stomach better. I will still buy cow milk for use in cooking, but because I use so little, it goes bad beforw I've used most of it.

I'm wondering if I can swap it for the plant milk so I don't have to waste it or go through the hassle of trying to plan around buying it for one recipe. Also when can I NOT swap plant for cow milk?

Ingredients

6 Tbsp EVOO

3 cups arborio rice

1 cup dry white wine

4 Tbsp butter

6 cups chicken broth

2 lbs asparagus cut on the bias

4 Tbsp heavy cream

1/2 cup lemon juice

1/2 cup parmiggiano

Salt and pepper and garlic powder to taste

Directions

Sautee asparagus in 2 Tbsp butter and 2 Tbsp EVOO season with salt pepper and garlic powder ( if using margarine use less salt as salt is added to the margarine). Cook about 3 minutes add in lemon juice and allow to come to a low boil. Turn off heat and set aside.

In a deep sauce pot heat butter and oil then add onion. Generously season with salt and add pepper. Allow onion to become soft and translucent over medium low heat about 10 minutes stirring with a wooden spoon.

Add in rice and increase heat to medium and stir continuously cooking about 2 minutes then add in wine and stir. Gradually add in broth as needed when rice absorbs liquid. It should take about 20-22 minutes for the rice to cook. About 17 minutes in, add in the asparagus with all the liquid and finish the cooking. Just before serving stir in the cream and the cheese .

Vegan, Gluten-Free Coconut Cream Pie

Bake Time: 20 min for crust, 20 for filling at 325 and 350 respectively

Crust: - 2 cups nuts -2 teaspoons coconut oil -1 tbsp sugar

-1/2 cup sugar-24 oz firm tofu -1 cup coconut milk (thick, chilled works best) -1 cup shredded coconut + ½ cup shredded coconut, toasted for top-2 scoops vanilla protein powder (check to make sure it is egg white powder/has no gluten) -1 tsp vanilla + ½ -coconut extract to taste

Preheat oven to 325. Food process the nuts, melted coconut oil, and sugar. Press mixture into a pie pan and bake for 20 min. Meanwhile, toast the ½ cup of coconut and set aside. Food process or blend all of the other ingredients together. Once the crust comes out of the oven, increase temp to 350. Pour the filling into the crust and bake in over for an additional 20 min. Sprinkle the toasted coconut on top. Refrigerate for at least 4 hours (best overnight).

Ingredients

2 cups chickpea flour

1/4 tsp xanthan gum (or 1 scoop egg white protein powder)

1 tsp baking soda

1 cup coconut oil

1 1/2 cup sugar

2 eggs

1 tsp vanilla

1 cup chocolate chips

1 cup chopped almonds

1/2 cup flaked coconut

Directions

Mix together the first 4 ingredients. Cream the coconut oil and sugar; add in eggs one at a time. Add vanilla to egg mixture. Gradually mix in the flour mixture to the egg mixture. Fold in the chips, nuts, and coconut. Makes about 20 cookies. Bake at 375 for 10 minutes or until golden brown.

Deconstructed Chilaquiles

I've been messing with this recipe for a little while, and I wanted to see what changes or additions might be made. It's fairly simple and makes for a fun breakfast. The base recipe uses Gordon Ramsay's French-Style scrambled eggs, with my own twists. I grew up in San Diego and the Inland Empire, so Mexican food has a special place in my clogged heart

Ingredients - 3 eggs - 1 Tbsp butter - 2 Tbsp cooked Chorizo (pork or beef) - 1 Tbsp Mexican Crema - Cotija cheese - Red or Green enchilada sauce - Cilantro - Corn or Flour Tortilla Chips (FRESH is better if you know how to make them, but don't get some name brand if you buy them, get the bags made fresh from your local Mexican restaurant or grocery, get a hearty chip, no super thin ones) - (optional) refried beans - (optional) small can of diced green chiles

Directions

First saute the Chorizo until fully cooked and crumbly. Remove from pan to paper towel lined plate to remove excess grease. Set aside

Prepare the scrambled eggs as shown here. The only substitution would be using the Mexican Crema instead of Créme Fraiche to halt/shock the eggs from overcooking. Fold in the cooked Chorizo and season to taste. Fold in green chiles at this point as well for added heat. Move to serving bowl and top with cotija and cilantro

Warm the refried beans and sauce in separate small serving bowls.

Serve almost like a Chip-Dip Bar. Dipping your chip first in the Red or Green sauce, then beans, and finally scooping up some of the scrambled eggs

The Hamptons Home Cook (Anthony Ashmore)

Step One

We Ingredients

  • Four Eggs
  • Two Tablespoons of Half and Half
  • One Teaspoon of Salt
  • One Teaspoon of Black Pepper

Dry Ingredients

  • One Package of thin Chicken Cutlets (Not Tenders)
  • Four Cloves of Grated Garlic
  • The Zest of one Lemon
  • A Quarter of a cup of Freshly Grated Parmigiano Reggiano Cheese
  • Two Tablespoons of Fresh chopped Basil
  • Two Tablespoons of Fresh chopped Parsley
  • Three-Fourths of a Cup of Italian Breadcrumbs
  • One Tablespoon of Salt
  • One Tablespoon of Black Pepper
  • One heaping Teaspoon of Adobo Seasoning (The “Surprise Ingredient).

Tip: I use Adobo in almost every recipe. Adobo itself has NO flavor. However, it genuinely enhances the natural flavor of whatever you add it to.

Grate your garlic, cheese and lemon — then finely chop your basil and parsley.

Add them into the breadcrumb mixture.

Step Two

Remove Chicken Cutlets from package and place on a clean plate.

Whisk your Eggs with your half and half — and salt and pepper.

Dip Chicken Breasts in the egg mixture — and then into the bread crumb mixture.

Ensure that you coat each cutlet thoroughly.

Once breaded, place on a new clean plate.

Step Three

  • A Quarter of a cup (or Less) of Extra Virgin Olive Oil
  • A Pad and a Half of Butter

In a Cast Iron Skillet or Frying Pan, add your oil and butter.

Place on a Medium-High heat until oil begins to lightly bubble.

Place Chicken Cutlets into Pan, for 3–5 Minutes on each side, or until golden brown.

Serve on a clean plate over a bed of Arugula.

Suggested Dressing: Lemon, Olive Oil, Drop of Balsamic Vinegar, Salt, Pepper, Fresh Basil.

  • Zucchini
  • Tomato sauce (no sugar added)

  • Pepperoni
  • Spices (Oregano, Basil, Garlic)

Directions

  • Slice zucchini into round slices (thickness is your preference, but at least 1/8th inch thick) and spread on a foil-lined baking sheet
  • Spread a 1/2 teaspoon of pizza sauce on each zucchini slice
  • Top each slice with mozzarella cheese
  • Top with pepperoni (slices or diced)
  • Sprinkle with Italian seasoning, garlic powder, salt, and pepper

Has anyone tried making pesto replacing basil with carrot greens?

We cannot find basil anywhere but i was told you can cut the tops off carrots, place them in an inch of water and the carrot tops will sprout and grow an abundance of leafy greens which can be used as a basil replacement. Has anyone tried this? I have cut carrot tops in water and have some leaves poking out (2 days after cutting them and putting in water). Thanks.

Vegetarian chocolate

So I've been getting a little more conscious of what I've been eating. And I've been wanting to get a little more healthy, so I'm starting to change my diet. I'm gonna have one day out of the week where I don't eat any animal products, but there is an issue I like desserts especially chocolate. Hey all,

I’m putting out an emergency call for a good chocolate buttercream icing recipe. I’m currently quarantined as I’m high risk for Covid-19 but my wife is out for the day. I want to make her a birthday cake since we didn’t get to do anything special for her birthday. I am not a baker, but have a pretty good cake recipe. I definitely remember making buttercream frosting with my mom when I was a kid and it being super easy, but I don’t know the ratios, and I’ve never made a chocolate one before. Any help would be much appreciated. I’m probably also going to cross-post this with r/cooking so for posterity sake if you find this post later check there too.

Easy Apple Cake Recipe (Delicious and Easy)

Ingredients:

4 Apples

1 cup of Sugar

1 cup of Milk

3 eggs

1/2 cup of Vegetable Oil

Teaspoon of Cinnamon

Teaspoon of Baking Powder

Pinch of Salt

3 cups of Flour

Preparation:

Oil or butter the cake pan and then coat it with flour

Set your oven at 356 F or 180 C

Slice 2 and 1/2 of the apples

The rest of the apples cut in cubes or how your prefer

In a bowl whisk the sugar and the eggs

Add the oil and whisk until mixture is homogeneous

Add the milk, salt and cinnamon and whisk very well

Then start adding the flour one cup at the time

add the apples in cubes, mix and then add the banking powder, and mix

Add mixture to the cake pan and the put the slice apples on top (you can be creative here)

Put in the oven for about 40/45 minutes

Done!

Serve with ice-cream or honey

I love hard-boiled eggs. I know how to make them well, I just want suggestions on what to do with them besides egg salad, deviled eggs, and salad topping.

I also eat them plain...sprinkle some MSG on them and you have a real treat. I’m not scared.

But I’d love to hear some suggestions, I always have some in my fridge for the above recipes (and feel free to give me your suggestions for egg salad, etc, I’m not excluding those in my question), but I’d like to expand my use of hard eggs.

Step One

  • Two to Three Large Zucchinis

Slice each Zucchini in half vertically.

With a teaspoon, core out a moderate amount of the pulp in the middle of of each zucchini.

TIP: This is what helps the Zucchini to crisp up in the Oven and not turn out watery.

Once cored, chop each half into halves.

Step Two

  • A Quarter of a Cup of Melted Salted Butter
  • A Quarter of a Cup of Extra Virgin Olive Oil
  • One Tablespoon of Freshly Minced Garlic
  • One Tablespoon of Freshly Minced Basil
  • One Tablespoon of Freshly Minced Parsley
  • One Teaspoon of Red Pepper Flake
  • One Tablespoon of Grated Parmesan
  • One Teaspoon of Salt
  • One Teaspoon of Pepper
  • Half a Teaspoon of Dry Oregano
  • Half a Teaspoon of Dry Basil
  • One Teaspoon of Garlic Powder
  • Half a Teaspoon of Granulated Sugar
  • Half a Teaspoon of Onion Flake

Place the Zucchini wedges onto a baking sheet that has been lightly greased with Olive Oil.

Mix all the aforementioned ingredients together into a Measuring Cup and whisk.

Once Combined, Brush each individual Zucchini wedge until each side is fully coated.

Once each wedge is coated, drizzle any left over marinade into the bottom of the sheet pan.

Step Three

  • A Half a Cup of Bread Crumb
  • Four Tablespoons of Parmesan Cheese
  • One Teaspoon of Flour
  • One Teaspoon of Salt
  • One Teaspoon of Pepper

Combine Bread Crumb Mixture together in a small bowl and sprinkle over each individual zucchini wedge.

Place into a 425 Degree Convection Oven for 20–25 Minutes, until golden brown with crispy edges.

Making a site/app that doesn’t suck

Ok so you know how every time you go to look up a recipe it’s a pain? I usually just click on one of the first 5 google results and then you get to the page, which is a pop-up nightmare and then you have to scroll through a mile of text to finally get to the recipe. Everyone knows this experience, I’ve heard 1000 people and at least 3 stand up comics make the same observation. So how has no one come up with a good website or app yet? I’m thinking like a recipe Wikipedia

Here’s my pitch. So I would make a site/app that is kinda like reddit in a way where you can make a profile/user name. The site would be as plain as possible and have no pop ups or obnoxious ads period. Just a simple search bar and a few category tabs at the top. Every recipe page would be white screen/black text and just be a list of ingredients and a short step by step instructions.

All the recipes would be user submitted and if they were a recipe they got from somewhere else they would be strongly encouraged to post a link at the bottom of the recipe. Then it would be an up/down voting system like reddit where the best recipes would rise to the top. Also in the ingredients/amounts section of the recipe users could add or minus ingredients if that’s how they made the recipe and they thought it turned out better. You could get like a user average and that would be shown in parenthesis. Ex: 2 cloves garlic (6 cloves-user average). So then all the recipes would be tweaked by 1000s of cooks, hopefully resulting in great recipes. I often check the comments under a recipe and find this happening anyway, like 5 different people will say, “recipe says bake for 30 minutes, but I ended having to keep it in for an hour”, so this could kind of stream line that.

Anyway does something like this exist? Hopefully it does could if love to use it!! If not, do you guys think it’s a good idea? Would you use it, and do you have any suggestions to make this idea better? Lemme know!! Thanks!!
