Looking for Healthy-is rad trip foods!

My kiddo (and doggo) and I are headed our on a two + day road trip in a week or so. I'd love some of your favorite on-the-go recipes. I was thinking an oat/fruit/nut butter bar, a trail mix, and some cheese and apples. I would like to avoid lots of carbs, but still have a decent amount of fiber.

Any recipe that you love for unrefrigerated fun would be greatly appreciated!

Homemade pizza for the kiddos.

You know those pizza lunchables? I'm 20 years old and still love those. I wanted to make my own pizza lunchable that was huge and more fulfilling. So here's what I did:

I took a piece of pita bread, set it on a plate, took 1/4 cup of pizza sauce, poured it on my pita bread, spread it, took 1/3 cup of mozzarella cheese, spread it evenly on my pita bread, took some pepporoni, and spread it evenly on my pita bread. Now we have a huge lunchable pizza that I didn't take a picture of but believe me, it's great. I prefer mine uncooked but you can pop it in the oven on 425 degrees for ten minutes and you're good. Hope you enjoy.

Recipes for those unsure of their schedules

So I live alone and only need to provide for myself. Im usually on a short schedule so I often only know where I'll be hours before. Because lf this, I sometimes hesitate to buy many ingredients for the fridge because they'll go bad if I end up being out for the week; nobody else is home to use them.

Still, I find myself wanting to try more than just steak and eggs I bought an hour before cooking. What are your suggestions?

My wife has severe dietary restrictions, and I am running out of ideas on what to cook.

I'll start with her dietary restrictions. She has had a lung transplant, so he is unable to eat any meat that hasn't been cooked all the way through (kills most beef and lamb recipes), any soft cheeses, any deli meats, or any sort of sprouts. She is also in the early stages of pregnancy, and is a type 1 diabetic. This means she is really watching her carbs, so pasta and rice dishes are out. She doesn't like any fish or shellfish either. Another restriction, is that it is summer and hot as hell here in Australia, so the Oven is to be used sparingly.

Currently planned for the week is a beef stir-fry (not sure what to use in place of rice), pork schnitzel with veggies, apricot chicken, and I dunno, maybe lamb korma. I feel like I'm going to be cooking the same things over and over, and I would love some ideas on how I can change up the nightly dinner.

Looking for a recipe that I think I found on Reddit

So a couple years ago, I stumbled across an appetizer dish. Here is what I recall, it had salami, pepperoni, sliced mozzarella, sliced provolone, banana and pickled red peppers and crescent rolls. You would put all the ingredients in the opened crescent roles, then wrap the roles over top and bake. If anyone knows the recipe I am referring to could you please send it or post it because it was delicious.

What can I add to spice up this Teriyakisauce salmon recipe?

Hi, my mom found this recipe for teriyakisauce coated salmon long time ago and I've had it from time to time. Last night was the first time I had it in awhile, it was good, but the woked vegetables just lacked something extra and tasted a little bland. I hoped you could help suggest something I could add to give it something a little extra.

Here is the recipe as is:

Teriyakisalmon with woked vegetables

Recepie for two people.

  • 250g salmon fillets

  • 2 tablespoons teriyakisuace

  • 1 tablespoon seasameseeds

  • 1,5 dl brownrice

  • 1 red bell pepper, shredded

  • ½ yellow or regular zuccini, shredded

  • 100g broccoli

  • 1 teaspoon rapeseed oil

  • ½ tablespoons redwinevingegar

-Divide the salmon fillets in two.

-Coat the salmon with teriyakisauce and sprinkle sesame on all sides.

-Put the files in the oven for 15 minutes at 200°C.

-Boil the rice meanwhile.

-Shred the bellpepper in about 5 cm long lengths.

-Divide the broccoli in small bouquets.

-Heat the oil in a wok or fryingpan and fry the vegetables until they've softened, but still have some chewing resistance to them.

-Mix the vinegar.

-Serve the vegetable wok warm with the salmon and rice.

Traditional Irish Porridge Recipe. This recipe is low in fat and is Low-GI so it is perfect to fuel you through the day while helping control blood sugar levels.

Recipe serves 4 people.

1 litre Water 1 litre = 4 Cups

115 g / 1 cup Pinhead Oatmeal

A good pinch of salt

Add the water, pinhead oatmeal and salt into a heavy based pan and bring to the boil over a medium heat while stirring with a wooden spoon. Once it starts to thicken reduce the heat to a simmer.

Cook the porridge on a simmer for 25 minutes stirring regularly until the porridge is cooked to a smooth and creamy consistency.

Serve hot with a drizzle honey and milk or add some dark chocolate nibs (my daughters favourite). I love to add the milk to my porridge after it has been cooked to make it even more creamier. It also helps to cool it down slightly so you can eat it without scalding your mouth. You just can't beat that!

Homemade Beef Burgers

Title: Burgers Yield: 8 burgers Cooking Time: 20 minutes Preparation Time: 10 minutes Category: Mains Cuisine: American Rating: 4/5 stars

Ingredients:

  • 500 g Minced beef
  • 4 slices Bread
  • 1 Egg
  • Milk
  • Seasoning

Method:

  1. Tear up the bread into small pieces (could use a large cheese grater to do this)
  2. Add a little milk to the bread and mix to stick together (all the milk shoud get absorbed so not too much)
  3. Add the mince, egg and seasoning and mix together (with back of a fork)
  4. Form into burger shapes and grill at 180 for 20 minutes

Notes:

Seasoning usually is salt pepper and mixed herbs, but could make Cajun burgers by replacing this with Cajun spice. Also for those who wish to look, I have a few more recipes on my blog (and will be adding many more as I try new things) which can be found here.

Hollandaise Sauce Improvements

Hey all. I've been cooking as a hobby for a bit now and my favorite thing to do for a fancy dinner night in is a filet, medium rare with a Bernaise sauce. The thing is, the sauce is getting a little boring.

I'd love to improve upon it's flavors or take a hollandaise sauce to a new level, maybe with a sweet carrot puree blended in or something else. I tried looking online for help but every site I saw just lists how to do a basic hollandaise. Does anyone have a suggestion for a new twist on hollandaise that might fit something savory like a steak? I'm okay with spicy.

Chinese Five Spice Pork & Broccolini Stir-Fry

This is a great chinese stir-fry that is cooked in the wok and all done within about 30 minutes. The pork is initially cooked in a lovely blend of five spice and ginger before being mixed with a nice combination of broccolini and snow peas. Finished with the rice stick noodles and oyster sauce to provide a wonderful depth of flavour. Sprinkled with coriander & almonds for a great crunchy finish. 2. In a large bowl, add pork, red onion, ginger and chinese five spice. stir to mix and coat pork with the spice mixture.
3. Heat sesame oil in a wok over medium high heat.
4. Add pork and stir-fry until browned. Cook in batches, remove from wok and set aside. Add more sesame oil as required.
5. Add broccolini and snow peas to wok and stir-fry for about 2 minutes and tender yet still crisp.

Substitute for bleu cheese in a dessert recipe?

So I'm making some desert for valentine's day that involves a sauce made of white chocolate and Roquefort cheese. I didn't realize, in my ignorance, that Roquefort is a bleu cheese, which my date is highly allergic to.

What cheese substitutes might be possible, that would still work with white chocolate? I realize that this might be a very difficult question, as bleu cheese has such unique characteristics. For context, this "sauce" is going to be piped into some bready balls (think munchkin donuts) with cinnamon, sugar, and a side of cognac jelly.

Recipe asking for vanilla beans, question

So I plan on making some infused liquor as wedding favors and I came across this recipe:

BANANA/VANILLA RUM

INGREDIENTS:

1 1.75L bottle good dark rum

1 extra (empty) 1.75L bottle

5 cups water

1 cup light brown sugar

2 vanilla beans, split and cut in half

2 ripe bananas, halved and split, the long way, in quarters (so they will fit in the bottles)

DIRECTIONS:

Heat, sugar & split/halved vanilla beans in the water, stirring constantly, just until all the sugar is dissolved.

I heat it til it just reaches a light simmer.

Allow mixture to cool.

Split the rum equally between the two 1.75L bottles.

Split the Vanilla/Sugar mixture equally and add to the bottles.

(make sure you add the vanilla beans and any seeds to the rum bottles!)

Add one of the prepared bananas to each bottle.

..... My question is does the size of the vanilla beans matter? Is there a good length I should consider? I don't want it to not be enough and then on the flip side overpower it either.

Jalapeno Pepper Wine Jelly Recipe

Jalapeno Pepper Wine Jelly

Course: Appetizer

Prep Time: 20 minutes Cook Time: 1 hour Total Time: 1 hour 20 minutes

Servings: 5 1/2 pint jars

Ingredients

  • 5 Jalapeno Peppers, chopped finely Can use hotter peppers for more heat
  • 1 750 ml bottle white wine, I use a Sauvignon Blanc
  • 2 cups sugar divided, 1 1/2 cups and 1/2 cup
  • 1 pkg Less or No Sugar Needed Pectin I used Sure-Jell...in the pink box
  • 1/2 cup White Balsamic Vinegar or other White Wine Vinegar at least 5% acidity

Instructions

  • Prepare canner, jars and lids. See The Ball Complete Book of Home Preserving for guidance. If you are using Weck Jars, I do boil the glass jars and lids for at least 10 minutes and put the rubber rings separately in boiling water for 2-3 minutes. After the 2-3 minutes, I leave the rings in the hot water until ready to use them.
  • Chop jalapenos finely. I removed the white pith, which also removed a good number of seeds. I recommend wearing rubber gloves (that you have cleaned well) for this step
  • Put plate with 4 spoons in the freezer to be able to check the gel state of your jelly.
  • Mix 1/2 cup of sugar with package of pectin.
  • Add wine to wide bottom pot, I use a Kilner Jam Pan
  • Stir in pectin/sugar mix and whisk well until fully dissolved.
  • Add chopped peppers and remaining sugar and whisk well until sugar is dissolved.
  • Stirring frequently, bring to a rolling boil that can't be stirred down. Boil hard for 2 minutes.
  • Turn off heat and add balsamic vinegar. Stir well.
  • Put a dollop of jelly on your plate and put back in freezer for 1 minute. After a minute, if you can push the jelly and it wrinkles, it is done and ready to be canned.
  • Spoon your jam into hot jars, leaving 1/4 inch headspace if using Ball/Kerr jars or 1/2 inch if using Weck jars
  • Remove air bubbles and wipe rim with white vinegar.
  • Center lid on jar and screw band down until resistance is met, then increase to fingertip tight. Or, if using Weck Jar, place rubber gasket, glass lid and metal clips on the jar.
  • Place jars in canner, making sure they are completely covered with water by at least one inch.
  • Cover pot and bring to a boil
  • Boil for 10 full minutes, or adjust for altitude via Ball Complete Book of Home Preserving. The time to bring your pot to a boil should not be counted in the minute boil time.
  • Turn heat off, remove lid and let sit for 5 minutes
  • Remove your jars from the pot and let them sit, undisturbed for 24 hours. Your Ball/Kerr jar lid centers should pop down when sealed and the orange tab on the Weck jars will slightly curve down.
  • Now...here's where I might have gone off of the USDA reservation a bit...and it's completely up to you on if you want to follow me. Most likely, unless you have been blessed by the canning fairy who skipped over me, your peppers will be floating at the top of your jelly. The USDA would recommend that you just let it be and stir it up when you open the jar. Once I knew that my jars had sealed, within a half hour of removing them from the pot, I shook them a couple of times to disperse the pepper pieces throughout. I chatted with a representative from Ball who told me the risk of doing what I did was that I might cause the seals to break. I checked my seals and they were still intact 24 hours later, so I am not concerned. I am not recommending anything...just telling you what I did. I'm sure a lawyer would advise me to tell you to do so at your own risk or something to that extent. Consider yourself told.

Recipe Notes This recipe assumes some knowledge of proper and safe canning techniques. Please see the Ball Complete Book of Home Preserving for guidance.

Roasted Tomato Fettuccine Carbonara

I really love fettuccine carbonara and whenever we go out to Italian restaurants, it’s hard for me to not choose carbonara from the menu. I can be a little bit predictable sometimes! I prefer the egg based carbonara over the non-egg based version. This is a really nice variation to the more traditional carbonara. Prosciutto instead of bacon is grilled to a nice crispy finish before adding to the dish. Grilled Cherry tomatoes add a wonderful colour and burst of flavour. All finished in a creamy sauce of sour cream, egg & parmesan. Garnished with parsley and you have a very tasty fettuccine meal.

Ingredients:
• 250 g Cherry Tomatoes
• 2 tsp Olive Oil
• 6 slices Prosciutto
• 1/2 cup Sour Cream
• 3 Eggs Whisked
• 1/2 cup Parmesan grated
• 1/2 cup Parlsey Leaves chopped
• 375 g Fettuccine
• Salt to season
• Pepper to season

Instructions:
1. Preheat a fan forced oven to 200°C (390°F).
2. Line 2 baking trays with baking paper.
3. Cook fettuccine according to packet instruction. Drain, return to saucepan and set aside
4. Place cherry tomatoes on baking tray and drizzle with olive oil.
5. Place prosciutto slices on the second baking tray.
6. Place cherry tomatoes into oven and roast for 10 minutes.
7. Add prosciutto to the oven after 5 minutes to roast with the cherry tomatoes for the remaining 5 minutes.
8. In a bowl, add sour cream, egg, parmesan and parsley and stir to combine.
9. Add sour cream mixture to the pasta, stir to mix through and return to heat for about 2 minutes to allow the egg to cook through.
10. Break prosciutto into bite size pieces.
11. Add prosciutto & roasted tomatoes to the pasta mixture and toss to combine.
12. Season with salt & pepper
13. Serve with additional parmesan.

[Looking For] Strawberry recipe

For Valentine's Day, I usually make my mom chocolate covered strawberries but recently. she's become lactose intolerant. She request chocolate strawberries this year but I really don't want to make them for her if she can't eat them.

I was wondering if anyone had any recipes that's fruity and sweet, doesn't involve milk and isn't very hard to make, a little fancy?

Thanks.

Finding recipes for the queen of allergies

Hi All,

My sister has a rare genetic disorder that makes her allergic to basically everything. Like seriously, we don't keep a list of things she can't eat... we keep a list of things she can. As you might imagine, food is very difficult for her, and whenever she stumbles on a new way to combine the 13 foods she can eat it's a very exciting day. Which brings me to my question today:

My sister just had a baby, and as a present for her I thought it would be cool to make a little cookbook of recipes just for her. I need help coming up with recipes made solely with these 13 ingredients:

  • Beef (including rendered beef fat)

  • Salmon

  • Sardines

  • Quinoa

  • Black Rice

  • Chickpeas (including chickpea flour)

  • White Potatoes

  • Lettuce

  • Cocoa Powder

  • Super Dark Chocolate (only occasionally and in small amounts)

  • Safflower Oil

  • White Sugar

  • Salt

Two examples of things we've tried that worked out:

  • Chickpea tamales

  • Dhokla

The food list changes from time to time as she eats one thing too much and then starts reacting to it (for example she used to be able to eat eggs) or when she doesn't eat something for a long time and then can eat it again for a while. My most recent revision of the food list is from about a year ago so I'll check and if anything has changed I'll edit this post.

Recipes for easy to portion 'bowl' meals?

I'm looking for recipes that it's very easy to get close to exact calories, preferably without needing a kitchen scale for the time being, that are easy to be frozen and reheated in a single bowl similar to the frozen Stouffer's "FitKitchen" or HealthyChoice steamer bowls?

[Looking for] Actually good Ranch dressing recipe?

I have tried and tried to find a decent recipe for ranch dressing, but never can find one. I'm looking for that ranch that's really runny, that just takes salad to the next level and makes you feel like you could put it on a shoe and at least power through eating it. And it tastes NOTHING like what comes out of a bottle that I've ever tasted...

Every recipe I've ever found ends up tasting like a slightly worse Hidden Valley and that's not what I'm going for. I'm going for THAT ranch. The one that makes you come back to a restaurant just for the salad even when the rest of the food kinda sucks.

Please help. I need that ranch and the local bar that has one I'm talking about won't even SELL their recipe...

Looking for a good pecan pie recipe

Hi, everyone! I did see a post with a similar request from a few years ago, but I was wondering if anyone had a good recipe for pecan pie. I love to bake, but I’ve only ever made one pie. I prefer cake, but my sweetheart hates it. He has Asperger's and hates all cake because he says it all has the consistency of mud. He has a very difficult time with any perceived mushiness, even if he likes the overall taste. With Valentine’s Day coming up, I wanted to make him a pecan pie because A) he loves it and B) he’s dealing with the anniversary of the passing of a loved one, and I want to cheer him up. Any recipes or tips are appreciated. Thank you in advance!

Chopped Competition

I need y’all’s help! My office is having a ‘Chopped’ competition, and i’m pretty stumped as to what I should make! The ingredients (below) must all be incorporated into one dish (appetizer, entrée or dessert).

  1. Buddha’s Hand

  2. PB & J sandwich

  3. Rice Krispies

  4. Chicken thighs

My idea right now is to make chicken and waffles, using the rice krispies as breading. Topped with a spicy pepper jelly (made from the Buddha’s hand), and a peanut sauce to drizzle over top.

I feel like this might end up tasting alright, but also has the potential to be pretty foul.

Anyone got any other ideas?

What would be an acceptable substitute for the Ortolan?

My mother's birthday is coming up and I would like to make Ortolan for her, my father and myself. We are German, but all living in the United States are there is no Ortolan here, and there is no way to purchase it live, I've had it once and it an amazing delicacy, definitely extravagant but worth it.

If you're unfamiliar with the recipe, you take the Ortolan, a tiny bird, feed it oats in the dark until it is 4 times it's weight, drown it in Armagnac brandy, roast it for 8 minutes and then eat it whole. What bird that's available in the midwestern United States could be an acceptable substitute?

[Discussion] I'm working on a tool to save, categorize and discover new recipes and I'd love your feedback!

Hi there!

I wanted to share something that I've been working on for a while now. It's called Recipeboard and I originally built this for my better half, who was struggling to keep her recipes organized in her head. While building it I thought this could be useful for others as well so started polishing the UI and adding some extra features.

So basically Recipeboard allows you to add new recipes to your board, categorize them with custom tags (e.g "healthy", "snack", "quick", etc.), add ingredients & preparation and also allows you to pin recipes from other people's boards to your own.

What do you guys & girls think? I'd love feedback on the idea (which I know, is not new) and if you think it would be useful for you. All the other tools that I came across generally don't look very nice IMO, so I'm hoping this will evolve into something that would be super easy to use.

There's also functionality built-in that will allow people to discover new recipes. I'm not quite there yet though, and for now you can only share your personal Recipeboard URL with anyone else that also has an account.

Please let me know what you think. Thanks!

Swiss meringue buttercream that doesn't taste like straight up butter

Basically the title. Most recipes call for a pound of butter and 1tsp of vanilla and to me and most of my friends it tastes just like sweetened butter.

Will adding more flavour/extract help the case? I want the consistency of Smbc but not the greasy buttery taste. I've scoured the Internet for this and it seems like people love the taste of butter in their buttercream. I'm planning to do a rosewater flavoured frosting. Any tips/recipes? Perhaps a recipe that uses less butter?

The cake needs to be pink and white so I can't use any flour based frosting (which I usually love) Coz I've read that they don't take colour very well. Or do they? And Abc is not an option because its Abc.

Crosspost.

Chawanmushi

I love chawanmushi. It probably will seem a little weird at first if you've never encountered a savory custard before. But it's delicious, kinda soothing in a way, and once you have the basic technique down, you can make all kinds of little variations, so as long as you've got eggs, you're in business.

Ingredients

  • 2 cups warm broth
  • 3 eggs

Directions

  1. Warm the broth gently. Your liquid should be a little warm, but not hot enough that it cooks the egg. You can use any clear broth you have on hand. Dashi is the most common, but chicken stock works great to. I've even used tomato water (basically just tomato puree, filtered to a clear liquid).

  2. Get a steamer setup going on just barely a simmer. You'll need to be able to put the heat-safe container that you plan on using to serve your chawanmushi into the steamer, so you need it to have some room and be stable. You don't want a full boil, because it might break your custard or it could end up leaving little bubbles in the surface.

  3. Whisk the broth into the eggs. Check the flavor. You might want to add a little salt or soy sauce or something. Obviously, this is raw egg. I don't mind consuming a little raw egg personally, but if you have concerns, skip this step, or make sure you season before adding the egg.

  4. Pass the egg/broth mixture through a fine strainer. I actually like to pass it twice. In my experience, this step helps ensure that the egg is fully incorporated. Otherwise you can end up with some weird little strings of egg in your custard.

  5. Now pour the mix into a heat-safe dish. You serve it in the container it was cooked in, so you kinda want a nice little ceramic dish of some kind.

  6. Cover your container with a little foil. This mostly helps avoid possible dripping from the lid of your steamer into the custard, which will mess up the surface.

  7. Place your dishes into the steamer. Let them steam for about 8 minutes. This is a little tough. Cook time will vary depending on the container you use, the depth of your custard, and the temperature of your steamer. You'll have to check it out to see if it's done. But if it's done, it's easy to tell. The surface of your custard should be sealed.

  8. There you go. It does take some practice to get these babies to set well reliably.

Cheap & Easy Indian recipes?

The other month me and my international Indian friend went to a local Indian restaurant and I was absolutely blown away. The amount of flavor in one dish was almost overwhelming but I loved it. He would complain and say that American food was bland which I totally believe him after trying food that he's used too.

I had chicken curry and he had butter chicken. I would like to recreate either of these dishes (To the best of my ability atleast).

I understand that these dishes typically have a lot of ingredients so they aren't necessarily cheap or easy to make. I have a lot of the "basic" herbs & spices that typically go into American, Spanish & Italian dishes. I'd be fine with paying about 10 bucks on the ingredients (Excluding chicken).

Thanks for the recommendations!

Some bomb-ass Creamy Enchilada soup.

So after finding a great recipe for the stuff online, I made a few tweaks and now I have a new comfort food. Hope you guys enjoy this soup as much as I do. It's akin to crack cocaine.

Ingredients

  • 2 or 3 chicken breasts (boneless and skinless)
  • 1 White onion
  • 1 quart (4 cups) of chicken stock
  • 5 cloves of garlic
  • 2 cans of enchilada sauce
  • 2 cans of corn
  • 1 or 2 cans of pinto beans or black beans (Or one can of each)
  • 1 Poblano pepper
  • 2 Jalapeno peppers
  • Salt
  • Pepper
  • Oregano
  • Cumin
  • 1 Block of cream cheese
  • Shredded cheese (Monterey Jack is good. You can also use pepper jack, cheddar, or Mozzarella. Whatever your preference)
  • Tortilla chips

Directions

  1. MUY IMPORTANTE: Take out block of cream cheese now and let sit until about room temperature.
  2. Rub chicken breasts with salt and pepper.
  3. In a large soup pot, sautee all veggies, until aromatic.
  4. Add the chicken stock and enchilada sauce. Stir to combine.
  5. Add in (raw) chicken breasts. Cover pot and boil for 20 minutes.
  6. Remove chicken breasts from pot, and use two forks to shred. Return to pot.
  7. Add in corn and beans. Make sure you drain them first.
  8. Cut half the block of cream cheese into about 1-inch cubes and add to the water. Boil until melted. Stir to combine.
  9. Reduce heat. Add oregano, cumin, and picante sauce to taste.
  10. Serve topped with shredded cheese and side of tortilla chips.

Optional

  • Serve topped with avocado and chives.
  • Picante sauce or hot sauce goes really well in this. Valentina's is perfect for this, but you can use whatever you want.
  • Use bell peppers instead of jalapenos for less spice.
  • Use habanero peppers or serrano peppers instead of jalapenos for more spice.
  • Marinate the chicken for 1 hour beforehand.
  • Add fresh basil leaves or rosemary.
  • I don't like tomato chunks in my soup, but you can throw some in there while it's boiling if you'd like, or add them raw just before serving.
  • If you want more "enchilada" flavor, but don't want to water down your soup with more sauce, add chili powder or ground cayenne pepper.
  • Refrigerate leftovers. It'll keep for about a week, but it'll probably be gone long before then.

The absolute best part of this soup is that you can get very creative with it, and make all kinds of changes to it. The only things you really need are the stock, the enchilada sauce, the spices, and the cream cheese. Other than that, go crazy and see what you can come up with.

Acorn Squash Pasta

1 Acorn Squash

3/4 Cup Grated Parmesan Cheese

1/3 Cup Whole Milk

1/2 Can Cream of Chicken Soup

1 Large Garlic Clove

1 Medium Onion

2 1/2 Cups Sliced Mushrooms

3 Cups Arugula

2+ Tablespoons butter

Salt & Pepper (Or Goya Adobo with Pepper)

Nutmeg

Red Chili Flakes

Wash acorn squash and slice in half, scoop out the seeds, rub the inside with vegetable oil and season with S&P or Goya.

Roast cut side down for 55 minutes in a 400 degree oven. Allow to cool and peel the skin right off. Place the innards into a large bowl and mash until smooth.

Slice the medium onion into half moon slivers for sautéing with butter until well softened and translucent.

Add more butter and mushrooms to the onions, continue to cook until mushrooms are no longer raw in the middle.

Add the garlic and arugula to the mix and cook until fragrant.

Warm your soup and milk over medium heat until very warm, add your cheese, stir to melt.

Add all of your mash and veggies to the cheese soup sauce, mix, and add seasonings to your taste.

This sauce sticks well to all types of pasta and has a very smooth creamy texture, other veggies can be added or subbed as well as fresh herbs of your choosing. It's very easy, rich in flavor, and delicious. It makes around 4 cups of pasta sauce depending on your size of squash but can easily be doubled if you like things saucier. Enjoy!
