[Question] Turkish spices - what dishes to make?

Hi there! A very nice friend has given me about 5 pounds of spices brought from Turkey! I have sumac, black cumin, zerdacal (tumeric maybe?), one labeled curry, and one labeled cajun. I have been making yogurt chicken dishes with the spices but I was hoping for more variety. I don't know what these mixes are for, and this is enough spice for a year for me!! Does anyone here know of easy to make Turkish recipes that include these spices? I have so much I don't know where to begin. Thank you!!

What can I do with all these Thai chili peppers?

I bought a small container of Thai chili peppers for pickles I'm making (throwing a pepper into the jar gives the pickle a nice kick), but I have so many of these buggers left. What can I make with them? Sauces? Add ins? I heard that you can freeze these buggers, and if you can I'll freeze most of them and keep a few out for later. Thanks!

Lemonade Scones

Lemonade scones would have to be one of the easiest recipes to make. There are only 3 ingredients and very few instructions to follow. They can be prepared and cooked very quickly. Lemonade scones are a breeze to make. Use a knife to mix the flour cream and lemonade. Bake in an oven for about 20 minutes and you have a wonderful light, airy & fluffy scone. Serve with whipped cream and jam, then grab a cup of your favourite tea or a coffee and you can have your own home made Devonshire tea break. Just make sure you don’t overmix the dough and also don’t knead it endlessly. Less is better to create a light scone that everyone will love.

Ingredients:
• 3 cups Self-Raising Flour
• 1 cup Thickened Cream
• 1 cup Lemonade Refrigerated
Whipped Cream
o 1 1/2 tbsp Caster Sugar
o 300 ml Thickened Cream

Instructions:
1. Pre-heat a fan forced oven to 200°C (390°F).
2. Line a baking tray with baking paper and set aside.
3. Sift flour into a large mixing bowl. Make a well in the centre.
4. Add thickened cream and lemonade and mix to combine. I find it easiest to use a round bladed knife to mix the dough, particularly as it gets stickier.
5. Lightly flour a flat surface or board and tip out dough onto surface.
6. Gently knead for about 1 minutes, then shape into a rectangle about 2.5 - 3cms (about 1 inch) thick.
7. Using a knife cut into about 12 square/rectangle pieces and lay on baking tray. Keep each piece separated by about 2cm to allow for expansion when it cooks.
8. Bake for about 18-20 minutes or until golden brown.
9. Serve warm or allow to cool on a wire rack.
10. Serve with jam and whipped cream (see instructions below)
11. Store in an airtight container
Whipped Cream
1. In a medium sized bowl add thickened cream and beat using an electric mixer.
2. After about 2-3 minutes as cream stars to thick, add caster sugar and continue beating until cream thickens and peaks form.
3. Keep refrigerated when not being used.

[Question] What to do with a dozen eggs a day?

My sister is chicken sitting for our neighbors for the next two weeks. These chickens produce about a dozen eggs a day (with no rooster). We've already had enough scrambled eggs to last us a life time and I don't think I could eat another quiche.

Hard mode: It's upper 90s here, so no oven would be preferred. If it looks really good we can turn the oven on.

Need some help: Does a How Mays Duck recipe still exist?

Pardon the Reddit formatting noobishness, but I need a bit of help!

That Imgur link is from the Hawaii Government Employees Association Cookbook, and the duck recipe therein calls for a How Mays Chinese roast duck. My mother says that it was a type of duck that folks in Hawaii used to have to buy from San Fransisco, back in the day... but that was in the 80s!

I want to see if I can recreate it for my mother's 60th birthday, but I can't seem to find a recipe for that specific duck online.

Does anyone happen to have a recipe similar to that style? Better yet, does anyone know if they're still in business? The book was published in the early 80s, so I'm not exactly holding my breath.

Strawberry Cream Cheese French Toast

I was searching for a dessert to make for my family, then I found this Strawberry Cream Cheese French Toast recipe. This recipe serves 12 and contain 433 cals. The preparation needs 30 minutes, baking needs 1 hour and 15 minutes. This dessert will be ready in 1 hour 45 minutes. Enjoy!

 

Ingredients

 

  • 12 slices home-style white bread, cut into 1-inch cubes, divided
  • 2 (8 ounce) packages cold cream cheese, cut into 1-inch cubes
  • 1 1/2 cups sliced fresh strawberries
  • 2 cups half-and-half
  • 12 large eggs
  • 1/3 cup pure maple syrup

 

Sauce

 

  • 1 cup white sugar
  • 1 cup water
  • 2 tablespoons cornstarch
  • 1 cup sliced fresh strawberries
  • 1 tablespoon butter
  • Add all ingredients to list

 

Directions

 

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. Grease a 9×13-inch baking dish.
  3. Place half of the bread slice in the baking dish. Place the cream cheese cubes over the bread cube layer; sprinkle 1 1/2 cups sliced strawberries at the top of the cream cheese layer. Add the other half of slice bread over strawberry layer.
  4. Pour half-and-half into a blender; pulse for a few seconds. Blend eggs into half-and-half until mixed properly. Add maple syrup and blend to the mixture until smooth. Pour the mixture over the bread mixture. Cover the baking dish with aluminum foil and put it in the refrigerator for about 8 hours or overnight.
  5. Remove baking dish from refrigerator 45 minutes before baking.
  6. Bake the baking dish in the oven for 30 minutes. Remove aluminum foil and continue baking until French toast is puffed and golden brown, about 30 more minutes.
  7. Stir sugar, water, and corn starch together in a small saucepan. Cook, stirring occasionally, over medium heat until mixture has thickened, about 5 minutes. Mix in 1 cup sliced strawberries; cook and stir until strawberries have softened, about 10 minutes. Add butter; stir until melted. Serve hot over French toast.

Chicken With Creamy Sun-Dried Tomatoes

This is another relatively simple and easy to make chicken dish that can be cooked when you are time poor and looking for something easy but still full of flavour. This is a very easy way to turn a pan fried chicken breast into a wonderful meal packed full of flavour. Drench the chicken in a creamy sauce of sun-dried tomatoes, cream, spring onion, parmesan, garlic and basil. The flavours blend beautifully to elevate this to a great, easy to make weeknight meal.

Ingredients:
• 4 Chicken Fillets breast fillets
• 2 tbsp Olive Oil
• 3 Spring Onions finely chopped
• 2 cloves Garlic crushed
• 1 cup Chicken Stock use stock cube
• 2 1/2 tsp Corn Flour
• 1/2 cup Sun-Dried Tomatoes roughly chopped
• 1/4 cup Thickened Cream
• 1/3 cup Parmesan cheese grated
• 3 tbsp Basil Leaves roughly chopped

Instructions:
1. Heat 1 tbsp olive oil in a large frying pan on medium high heat.
2. Add chicken breast fillets and cook until browned and cooked through. Remove from pan, keep warm and set aside.
3. Add remaining olive oil to pan and add spring onion and cook until softened, about 2-3 minutes.
4. Add garlic and cook for a further 30 seconds. Be careful not to burn the garlic.
5. Add chicken stock and stir to mix through
6. In a separate small bowl add 1 tbsp water to the corn flour and stir to mix fully, then add to the frying pan.
7. Add sun-dried tomatoes, season with salt and pepper, then stir to mix through.
8. Bring to boil then set to simmer and allow to simmer for about 1 minute, while constantly stirring.
9. Add cream and parmesan and stir constantly to mix through until cheese has melted.
10. Remove from heat, add chicken fillets back to pan and spoon sauce over chicken fillets.
11. Garnish with basil and serve.

Slow roasted italian pork ❤️ this is super delicious and EASY

6 pounds pork shoulder or boneless country style ribs* 1 tablespoon garlic salt 2 teaspoons freshly ground black pepper 3 tablespoons extra virgin olive oil, divided 1 large onion, finely diced 4 medium cloves garlic, minced (about 2 tablespoons) 2 28 ounce San Marzano tomatoes*** 1 6-ounce can tomato paste 2 tablespoons dried oregano 1 tablepoon dried basil 1 teaspoon kosher salt 2 14 1/2-ounce can diced tomatoes****, well-drained ¼ cup chopped fresh basil leaves

instructions

Preheat oven to 300˚F. Combine garlic salt and pepper in a small bowl. Stir to combine. Set aside.

On a large cutting board, cut pork into 4-5-inch pieces and trim as much of the visible fat as possible. It’s fine if some of the pieces end up a bit smaller. You definitely won’t be able to remove all of the fat and you don’t want to at this point. (I started with 6 pounds of pork shoulder ribs and ended up trimming a little over a pound of fat.)

Later you’ll be able to remove more of it. Lay pork pieces out on the cutting board* and sprinkle with half of the garlic salt mixture. Flip pieces to opposite side and sprinkle with remaining seasoning.

In a large Dutch oven or large heavy duty soup pot, heat 1 tablespoon olive oil over medium-high heat.

When hot, add enough of the pork to cover the bottom of the pan.

Reduce heat to medium and brown pork on both sides (a tongs work great for this) then remove to a large bowl and repeat with the rest of the pork.

Depending on the size of the pot, you may need to do this in 2-3 batches. Add about a teaspoon of olive oil to the pot before adding another batch of pork.

When all the pork is browned and removed from pot, reduce heat to medium low and add 1 tablespoon of olive oil to pot. (Don’t wash the pot. The “frond” or brown stuff on the bottom of the pot, will add lots of delicious flavor to the sauce.)

Add the chopped onions and cook for about 6-8 minutes, stirring occasionally.

After a couple minutes of cooking, the frond (or brown stuff) on the bottom of the pot, will begin to release into the onions.

When onions are soft and translucent and most of the frond has been release, add the garlic. Cook for one more minute, then return the pork to the pot.

Pour the San Marzano tomatoes into the bowl which held the pork and break tomatoes apart with your fingers. Add tomatoes tomato paste, dried oregano, dried basil and the salt to the pot with the pork/onions. Stir well and bring to a simmer.

Cover pot and place in preheated oven. Roast for 3 hours covered, then remove cover, add well-drained diced tomatoes and roast for another hour, uncovered. Stir halfway through the last hour.

With a slotted spoon, remove pork from sauce to a clean bowl and allow to cool about 20 minutes. Add chopped, fresh basil to sauce in pot and bring to a boil. Reduce to a low simmer and cook for 20 minutes while pork is cooling. (This will thicken the sauce a bit more.)

With two forks or your fingers, shred pork into large pieces. I just break the pieces apart a bit and leave the smaller ones intact. Or leave it in chunks! I had mine with pasta noodles!

Cookbook builder programs?

I am looking for a program for my computer where I can add recipes while I'm out and about, whenever the inspiration strikes. I'd like it to have a friendly UI, and I want to be able to section my recipes out, (seafood, breakfast foods, deserts, drinks, etc.). I'd also like the option to print out my cookbook so I can hand it over to family or friends. I understand that Microsoft Word could work just as well but I'm looking for a good layout that already has everything set up.

Help! I ruined all the blueberries!

So I normally make strawberry "jam" in the summer (blend strawberries with a bit of maple syrup and chia) and the results are DELICIOUS on plain yogurt and toast and whatever else.

So I decided to make blueberry "jam" the same way and it is so not good. I am looking for a way to use up 2-3 lb. of blended, tasteless blueberries and I'm not finding anything interesting. Would cooking and sweetening the whole thing make it taste better? Even on vanilla ice cream, the taste is so bland and... pastey. When we bought them, they tasted so good :(

What are some light breakfast (bf) recipes for someone who can't stomach traditional bf meals?

Hello,

My boyfriend wakes up every morning nauseous and with an increased gagging reflex - he's not pregnant nor dying and we've attributed it to his medication - so he basically refuses every typical breakfast meal I can think of, e.g. anything with: eggs, rice, pancakes, bacon, waffles, cottage cheese, yogurt parfait, oatmeal, toast, cereal etc.

What should I make this man so that he isn't starving at work until lunchtime? Can you think of any light breakfast ideas? How about light soups? Or anything else?

As a Hispanic, this is very difficult for me because I'm used to having rice and beans with chorizo, a fried egg, slices of avocado, and some plantains for breakfast. I'm also accustomed to hearty soups with lots of starches like potatoes and yucca, lentils, beef, etc.

Recently I gave him some slices of watermelon and he enjoyed that, but I also don't want to feed him watermelon every single morning. This living together thing and being the one who cooks is a little tough - I'd appreciate any suggestions or recipes! Thank you for reading this :).

Needing Help

Hello all, I've recently started cooking and want to make a meal for my new girlfriend and her father (trying to make a good impression)

I have plenty of ideas from this sub-editor but I have a slight problem, her father is overly against most spices (I've even seen him send chicken back in a restaurant for having black pepper on it) and my gf has IBS that seems to be set off by highly acidic foods E.g. onions, too much garlic, etc...

Is there any recipes you can recommend I would be greatly appreciative and it would surely help me greatly for the future with her. Many thanks in advance -BB

Recipe Request: Baking for a family friend with lots of food intolerances

Hi guys,

My mom's best friend is getting married soon and I was planning on baking them some goodies as an engagement gift. I'm a broke college kid so baking people stuff is usually my go-to gift! The fiance has just been diagnosed with a TON of food intolerances, so my mom's friend has been struggling to find recipes that he can safely eat that are the kind of food that used to be his favourite (bread, comfort food, sweet treats). I was hoping to make them some sweet treats they could both eat together, and send them the recipes so my mom's friend can make them again in the future.

The list of his food intolerances: all grains, all dairy, rice, all nuts, all yeasts, potatoes, and eggs. I'm fairly sure at this point that he can eat chickpeas, beans, and coconut.

Does anybody know of recipes that he could eat? I was thinking of doing chickpea flour thin mints and chickpea flour cardomom-chai sugar cookies. I was also hoping to find a vegan meringue recipe, if that even exists; meringues are my specialty. Do vegan eggs get peaks??? No idea.

I shop at Whole Foods and a Korean grocery store so feel free to give recipes with really obscure ingredients, if they fit the restrictions. I would really appreciate some help because I am struggling and I really want them both to be able to enjoy their gift :)

Wonton Taco Cups With Tomato Salsa & Avocado Sour Cream

Try these Wonton Taco Cups for a really tasty snack or appetiser. They have a beautiful beef taco inspired filling surrounded by a crunchy outer shell. The beef is flavoured beautifully from the taco seasoning. Mix through a tomato salsa and melt in some cheese and you have a fantastic base to start. Bake in some wonton wrappers that provide a wonderful crunchy bite to offset the cheesy beef centre. Finally, top with an avocado sour cream mix and you have an amazing taco inspired appetiser cup. These cups are the perfect two bite appetiser.

Ingredient:
• 500 g Beef Mince
• 30 g Taco Seasoning 1 packet
• 1 1/2 cups Shredded Cheese I use 3 cheese combo mix
• 30 Wonton Wrappers
Tomato Salsa
• 1 large Roma Tomato diced
• 1/2 Red Onion diced
• 6 sprigs Coriander about 20 leaves finely diced
• 1 Spring Onion thinly sliced
• 1 clove Garlic crushed
• 1/8 tsp Salt
• 1/8 tsp Peppper
Avocado Cream
• 1 large Avocado mashed
• 4 tbsp Sour Cream
• Salt to season
• Pepper to season

Instructions:
1. Pre-heat a fan forced oven to 180°C (350°F).
2. In a frying pan on medium high heat, add beef mince and cook until no longer pink. About 6 minutes.
3. Keep mince in the pan however drain any juice from the pan.
4. Add taco seasoning and stir to mix fully through the beef.
5. Add tomato salsa (refer instructions below) and stir to mix through
6. Add 1 cup shredded cheese and stir through until melted. Remove from heat and set aside.
7. Spray a mini muffin tray with non stick spray. I use a 24 hole mini muffin tray. Note: the cups will likely need to be completed in batches.
8. Place wonton wrappers into the tray and create wells in each hole.
9. Spoon the beef mixture into each wonton wrapper until they are filled, then sprinkle with the remaining shredded cheese.
10. Place into oven and bake for about 7-8 minutes or until wonton wrapper is a golden brown and cheese is melted.
11. Remove from oven and top with avocado cream (refer instructions below) and additional diced tomato and serve.
Tomato Salsa
1. In a medium bowl, add tomato, onion, coriander, spring onion, garlic, salt and pepper. Stir to fully combine. Note: this can be made in advanced and stored in refrigerator until ready to use.
Avocado Cream
1. In a medium bowl add avocado, sour cream, salt and pepper. Stir to full combine. Note: this can be made in advanced and stored in refrigerator until ready to use.

A Lasagna in Honor of Carmella Soprano

I wanted to share this white lasagna with you! It's really easy to make and you don't have to do anything fancy what so ever. I call it the Carmella Soprano because I adore her and because there is basil leaves under the first layer of noodles which is a way that she makes hers! I'm no chef so it's gonna be pretty fricken basic, ya'll.

What you need

Boilfree lasagna noodles 2 jars of alredo sauce, choose your flavors. I use garlic alfredo and mushroom alfredo A big tomato Basil leaves, a decent sized bunch Italian sausage (mild, spicy or sweet, up to you) 1 tub of ricotta cheese 1 tub of marscarpone cheese Some white wine

Preheat that oven to 350 degrees.Fist start by cooking the sausage in a pan until they are browned up. Then slice them into bite sized lil circles. Smear your dry noodles with a layer of ricotta, then place the cooked sausage bits in the ricotta. Smear another layer with marscarpone and add sausage. Continue layering like this alternating between ricotta and marscarpone. On the final layer place the basil leaves on the cheese and then add the sausage.

Next we make the smother sauce of creamy alfredo goodness. Dice that tomato like a mouthy gangster and put that sumbitch in your bowl. Also chop that basil and add that. Put in the two jars or alfredo sauce and a splash of white wine. If you're like me and get heartburn from Italian food, that's what the white wine is for. Also it's tasty. Add your favorite Italian spices. Stir and pour over that layered up lasagna so it gets in all the cracks like you're giving someone concrete shoes. Stick this beautiful load of carbs and broken diet promises into the oven and cook for about 45 minutes. Poke with something to see if noodles are desired softness when oven goes beep.

I hope you enjoy this. Again, I'm not a professional, but I cooked this up for a party and there is none left and it's the proudest I've been in a while.

Rajas con crema

Recipe: Rajas con Crema

Ingredients: 6 poblanos (this kinda depends on the size, but leftover roasted poblanos has never been a bad thing) 2 white onions 1 tablespoon of oil 2 containers of crema de la mesa Black pepper Norsuisa or powdered chicken broth

Put the poblanos under the broiler on high for five minutes. Flip them, and let them go for another five minutes, or until all the skin is blistered. Remove from oven and place in plastic bag. Let sit for half an hour. Peel off skins and discard. Remove seeds. Cut the chiles into strips.

Slice an onion in half, and then slice the halves longways into pieces. In a pan, heat a tablespoon of oil and add the sliced onion. Stir around until cooked mostly through. Add the chiles and the container of crema de la mesa, and stir. Add pepper and Norsuisa or powdered chicken broth to taste.

Growing up on a farm meant my list of chores included helping pick blackberries. These juicy morsels of sour deliciousness meant we wHOW TO MAKE BLACKBERRY MOJITOere going to be enjoying homemade fresh blackberry pie, cobbler and jam. I could try to describe just how amazing these desserts and jam were, but there really are no words. You’ll just have to trust me… they were heavenly! (Insert sigh)

Last night I asked my mother what variety of blackberries she planted on the farm. She said that she didn’t remember the name however the plants she planted were a thornless variety. That makes sense because I don’t remember ever getting stuck by thorns when picking blackberries.

 So how do you make a Blackberry Mojito? 

First of all, a traditional mojito is a cocktail that consists of white rum, simple syrup, lime juice, club soda, and mint. The white rum compliments the combination of sweetness, citrus, and mint flavors. A mojito usually has a relatively low alcohol content, however, you can modify the amount to suit your individual taste.

 Here’s how to make a Blackberry Mojito: 

5 – 6 fresh blackberries 4 fresh mint leaves 1 1/2 ounces simple syrup or blackberry syrup 3/4 ounce fresh lime juice 1/4 cup club soda, chilled 1 to 1 1/2 ounces white rum 1 cup ice cubes Garnish with sprigs of mint and fresh whole blackberries Place blackberries, mint leaves, simple or blackberry syrup and lime juice into a small bowl. Gently mash the mixture with a muddler. Do not shred the mint leaves, rather simply bruise them to release the essential oils. Stir in club soda and rum. Strain to remove the blackberry seeds and remnants of the mint leaves. Pour into chilled stemware. Add ice and garnish with fresh sprigs of mint and several fresh whole blackberries. Serve.

 Make Your Own Simple Syrup 

To make your own simple sugar, use equal amounts of granulated sugar and water. Heat the mixture to the point where the sugar is dissolved then allow the syrup to cool. Refrigerate in an airtight glass jar up to 4 weeks. You can also make your own flavored simple syrups. Simply add fresh berries, herbs, spices, citrus rinds, cinnamon sticks, or vanilla beans, (just to mention a few options) to the hot simple syrup solution. Allow the mixture to cool to room temperature, then strain. Refrigerate your flavored syrups in airtight glass jars up to 2 weeks. Add simple, and flavored syrups to cocktails, sweet tea, fruity lemonade, and other sweet beverages. Alcoholic Substitutions for RumSubstitute rum with orange liqueur, brandy, gin or sherry. Non-Alcoholic Substitutions for RumFor white rum: substitute with pineapple juice flavored with almond extract. For dark rum: substitute using molasses thinned with pineapple juice and flavored with almond extract. Using rum extracts: Depending on the brand, usually rum extracts contain a small amount of alcohol, although an imitation extract is usually alcohol-free. (Always read the labels yourself or contact the manufacturer with questions.) You can also use 1 tablespoon rum extract added to 1/2 cup pineapple, apple or orange juice as a substitute for rum.

 HOW TO MAKE BLACKBERRY MOJITO? 
  • YIELDS 1 SERVING
  • A delicious and refreshing blackberry mojito cocktail.
  • Prep Time:10 min
  • Total Time:10 min

Ingredients

  • 1 cup ice cubes

*Instructions 1-Rinse blackberries and mint leaves under cool tap water. Gently pat dry with paper towels. 2-Place blackberries, mint leaves, simple or blackberry syrup and lime juice into a small bowl. 3-Gently mash the mixture with a muddler. Do not shred the mint leaves, rather simply bruise them to release the essential oils. 4-Stir in club soda and rum. 5-Strain to remove the blackberry seeds and remnants of the mint leaves. 6-Pour into chilled stemware. 7-Add ice and garnish with fresh sprigs of mint and several fresh whole blackberries. 8-Serve.

Notes Adjust amounts of ingredients to suit your individual taste. Double the recipe to make 2 mojitos.

Funfetti Shortbread Bites

The cutest lil' shortbread you'll ever see.

  • COOK: 0:20

INGREDIENTS

  • 1 1/4 c. all-purpose flour
  • 3 tbsp. powdered sugar
  • 1/4 tsp. kosher salt
  • 1/2 tsp. vanilla extract
  • 1/2 c. unsalted butter
  • 1 tbsp. rainbow nonpareils or sprinkles

DIRECTIONS

  • Preheat oven to 325 degrees F.
  • In food processor, combine flour, sugar, salt, vanilla, and butter until combined. Place dough in bowl and knead until it comes together. Add nonpareils and knead to combine.
  • On waxed paper, roll dough into a ½”-thick square. Freeze 15 minutes. Cut dough into 1/2-inch squares. Place dough onto large cookie sheet. Bake until cookies are light brown, 18 to 20 minutes.

Habanero Plum Spaghetti Sauce

Ingredients:

  • 1 ripe plum
  • 1 habanero pepper
  • 1 tbs sugar
  • 1 tbs water
  • 1 tbs white wine vinegar
  • 4 cloves garlic
  • 3 small roma tomatoes
  • 1 small white onion
  • 1/4 cup fresh chopped basil
  • 16-18 oz tomato sauce
  • salt to taste

Directions:

  1. Chop the plum, habanero, sugar, and water and combine in a medium sauce pan over medium heat.
  2. When the mixture starts to bubble, add the vinegar and garlic.
  3. Let the mixture cook for about 10 minutes.
  4. Chop the tomatoes and onions and add them to the plum mixture.
  5. Cook for another 5-10 minutes, then add the tomato sauce and chopped basil.
  6. The sauce should simmer for about 15 minutes.
  7. Add the salt to taste, serve with your favorite noodles, and enjoy!

  • 2 Tbsp Creole Seasoning
  • 4 Tbsp Unsalted Butter
  • 1/2 Cup Onion, Finely Chopped
  • 1/4 Cup Celery, Finely Chopped
  • 1/4 Cup Bell Pepper, Finely Chopped
  • 1/4 Cup Flour
  • 3/4 Cup fresh Tomatoes, diced
  • 1 1/2 Cups Shrimp Stock
  • 2 Tbsp Minced Garlic
  • I bundle of Fresh Thyme
  • 2 tsp Homemade Worcestershire Sauce
  • 1 tsp Hot Sauce (I like Crystal or Louisiana Gold)
  • 1/2 Cup Green Onions, thinly sliced
  • 3 Tbsp minced Italian Parsley
  • 2 lb Good Quality Shrimp, Peeled and Deveined, Save shells for the stock
  • 3 Tbsp Unsalted Butter
  • Diamond Crystal Kosher Salt & Freshly Ground Black Pepper to taste
  • 1 Recipe Creole Boiled Rice

Directions:

  • Season the shrimp with 1 Tbsp of the Creole Seasoning.
  • Melt the butter in a large cast iron skillet, add the onions, bell pepper, and celery, saute until translucent.
  • Whisk in the flour to make a blonde roux, stirring constantly, about 3-5 minutes.
  • Stir in the remaining Creole Seasoning.
  • Add a small amount of the shrimp stock, stir well to form a paste, add the remaining stock gradually, whisking constantly. Bring to a boil, then reduce to a simmer. (You may need a little more stock, but the end result should be the consistency of a gravy, not too thick, not too thin.)
  • Add the tomatoes, garlic, Thyme, Worcestershire, and hot sauce, a little salt, black pepper, and Cayenne. Simmer for 20-30 minutes.
  • Add the shrimp, green onions, and parsley, simmer for 10 minutes more or until the shrimp are cooked through. Stir in the 3 Tbsp butter, and adjust the seasonings to taste.
  • Serve over Creole Boiled Rice.

Notes:

  • Serves 4 as an Appetizer or 2 as a Large Entree.

Thai Red Curry Mussels [Seafood] Easy week meal, quick, healthy and tasty shellfish in a velvety Thai red curry sauce.

INGREDIENTS 2 kg mussels (1kg per person) 1 pod red pepper remove seeds and slice finely lengthwise 1 stalk leek 1 medium size, chopped finely 2 tablespoon Thai red curry paste 1-2 tablespoon leek chopped finely 1-2 tablespoon palm sugar white sugar 4 tablespoons coconut oil 2 tablespoons fish sauce replace with 1 heap teaspoon oyster sauce 1/2 pack soy cream preferred thick or thin coconut milk Thai basil/coriander preferred herbs, Thai basil stirred into the sauce and coriander coarsely chopped and scattered on top INSTRUCTIONS One container of mussels soaked in plenty of water with 2 tablespoons of salt. With your hands tumble the mussels around or use a big spoon, let it rest so the mussels can expel sand for a minimum of 2 hours. For best results preferably longer, you'll notice by the sand and other impurities in the water minimising and clear water. Heat oil, add in the red curry paste, give it a good stir releasing its flavours than adding the finely sliced leek. Stir and mix it together, followed by all seasonings with the soy cream as last. Bring it to a boil and immediately add the drained mussels, give it one more stir put the lid on and cook on high for 7-8 min or till all shells are opened. Without opening the lid shake it twice so the mussels can all open up. On a plate serve fragrant white Jasmine rice and a good heap of Mussels with the sauce. You can find the recipe here

Cheap, simple, healthy, low-cal tuna sandwich recipe for lunches

I LOVE tuna but don't like how tuna sandwiches usually contain mayo, which is obviously not that healthy. I created this recipe to replace a lot of mayo and tuna with low calorie greens but to maintain consistency and flavor.

In a large bowl, mix:

  • 1/2 red onion

  • 1/2 green pepper

  • 2 celery stalks

  • 4 cans of tuna (drained of water) (12 oz total)

  • 25ml balsamic vinegar

  • 25ml dijon mustard

  • plain yellow mustard to desired consistency

Add to desired bread.

Should make approximately 8 sandwiches for just under $5

  • Note: Green peppers can be substituted for more celery, but do not substitute plain yellow mustard for any other mustard, or the taste will overpower all other ingredients

  • Note: Skipping either the Dijon mustard or the balsamic vinegar will make the recipe taste bland.

Ideas for Boiled Potatoes

I'm a simple guy. I take boiled potatoes for lunch a lot alongside some sort of meat dish.

The meat dish is varied, which is fine, but the potatoes are literally just that - potatoes. What are some simple things I can do to make them different?

Note: I have these out of convenience and also for my carb intake. Responses saying "don't have potatoes" isn't an option. I'm talking little things I can add to liven things up a bit!

Help with cooking meatballs

I was wondering if there was a better way to cook meatballs better than what I am doing. Currently I just make them and put them on a cookie tray and bake them. I try to turn them but they always have kind of a flatten side. I would like to make them more round and cooked evenly around the outside.

So what if any is the best way to cook them? Also if you have some good meatball recipes let me know mine are kinda basic making some tonight for spaghetti.

Vegan chickpea tikka masala

Ingredients

3 tsp vegetable oil 1 brown onion, sliced 2 cloves garlic, crushed 2cm-piece ginger, finely grated 1/2 cup (150g) tikka masala curry paste 400g can crushed tomatoes 2 x 400g can chickpeas, rinsed, drained 150g green beans, trimmed, cut into 3cm lengths 1/2 cup (125ml) coconut milk 2 teaspoons brown sugar 1/4 cup coriander, finely chopped Steamed basmati rice, to serve Coriander leaves, extra, to serve Lime wedges, to serve 

Method

Step 1 Heat the oil in a large saucepan over medium heat. Cook the onion for 5 mins or until lightly caramelised. Add the garlic and ginger and cook for 1 min. Stir in the tikka masala paste and cook for 2 mins or until fragrant. Step 2 Add the tomato, chickpeas and 1/2 cup (125ml) water. Bring to the boil. Reduce heat to low and simmer for 15 mins. Add the beans and cook for 5 mins. Stir in the coconut milk and sugar. Season. Step 3 Stir through the chopped coriander. Season. Divide the chickpea tikka masala and basmati rice among serving bowls. Sprinkle with extra coriander and serve with lime wedges.

I've got a few 100 two sided recipe cards I'd love to digitise (using my Android phone), OCR, and tag - so that I can find things easier. But how do I go about doing this!?

Title.

I've a LOT of recipe cards from HelloFresh and Gousto that I've collected over the years. They're beginning to deteriorate (food splatter..) and they're a complete unorganised mess. I want to be able to scan them in using my phone (I know Google Drive has this feature) into a .. PDF? .., and then OCR them and tag them (by ingredients or style) so that I can search for, say, 'courgette' or 'asian' and they all come up in a list.

But I have no idea how to easily do this.

Are there any software or any ideas that people have?

Pumpkin and chickpea curry

Ingredients

1 tablespoon vegetable oil 1 brown onion, chopped 550g butternut pumpkin, peeled, cut into 2cm cubes 2 garlic cloves, crushed 2 1/2 teaspoons ground cumin 1 1/2 teaspoons garam masala 2 cups vegetable stock 400g can Coles Brand Italian Diced Tomatoes 400g can Coles Brand Chickpeas, rinsed, drained 1/4 cup chopped coriander, plus extra sprigs to serve 1/3 cup Greek yoghurt 

Method

Step 1 Heat the oil in a large saucepan over medium heat. Cook the onion, stirring, for 2-3 mins or until softened. Add the pumpkin, garlic and spices. Cook, stirring, for 1 min or until fragrant. Step 2 Add the stock and tomato. Bring to the boil. Reduce heat and simmer, uncovered, for 10 mins. Add chickpeas and simmer a further 10 mins or until pumpkin is just tender. Add coriander and season. Step 3 Spoon the curry into bowls. Top with yoghurt and extra coriander.

Chicken & Gnocchi With Burnt Sage Butter

Chicken and gnocchi are a great combination to provide a wonderful comfort food and hearty meal. This dish can be prepared and made in around 20 minutes or so. So when you are looking for something quick and easy to make, try this dish. The chicken and gnocchi are bathed and soaked in a rich browned butter sauce with crisp fried sage leaves. Served with a liberal sprinkling of pepper and parmesan cheese provide a wonderful peppery undertone with a lovely creamy finish.

Ingredients:
• 3 Chicken Fillets breast fillets cut into bite size pieces
• 125 g Butter chopped
• 20 Sage Leaves I used large sage leaves and chopped in half
• 500 g Gnocchi
• 1/2 cup Parmesan cheese grated, more if required
• Black Pepper to serve

Instructions:
1. Cook chicken in a large frying pan over medium high heat until browned and cook through. Remove from pan and set aside. Using paper towel wipe the pan to try to remove any chicken bits remaining.
2. Cook gnocchi according to packet instructions. Drain and set aside.
3. In the same frying pan over medium high heat, add butter and cook until melted.
4. Add sage leaves to pan and cook for 3-5 minutes or until sage leaves are crisp and butter has turned a dark brown colour. The length of time required will depend on how hot your pan is.
5. Add chicken and gnocchi to pan and stir to coat with butter and heat through.
6. When serving, sprinkle liberally with black pepper and parmesan cheese.

Chicory-guacamole snack

Some time ago I prepared a snack that I liked a lot. I liked the bitterness of chicory and the fact how you can combine it with different ingredients to get a tasty snack. This time I combined it with some home-made guacamole. Chicory leaves are in a shape of a boat; perfect to be filled with dips, salsas, fruits and other things. If you prefer a more fruity version, you can jump to one of my previous recipes, where I used the grapefruit.

The ingredients for this snack are:

chicory (ca 8 leaves) salmon (raw smoked, 8 medium slices) 1 egg (optional) 1 avocado 1 tomato cilantro 1 lime salt and pepper Take circa eight leaves from the chicory head, wash them and leave them on a paper towel to dry. In a small bowl prepare the guacamole. Cut the avocado in half, remove the pit and with a spoon take the tasty green fruit out of the shell. With the help of a fork smash it so that you leave some nice avocado chunks. Wash and dice the tomato and put it in the bowl. Stir it and add the chopped cilantro and the lime juice. Season well, give it the last stir and put aside.

Next place the chicory leaves on a big plate and fill them with the guacamole dip. I like guacamole a lot, so I was quite generous with the portions. On top of each filled leave place a nice salmon slice. Squeeze some lime on top of each chicory “boat” to give an extra taste.

Serve as a snack or side dish. I served it with a boiled egg. I played again a little bit and I've made a heart shaped egg.

Jalapeño-bacon egg cups

Egg cups are perfect for a party, a picnic, breakfast or for a snack. You can see that there are endless possibilities. If jalapeños are your thing, this is the right chance for your tongue buds to go crazy. If you get watering eyes just thinking about jalapeños, you could use a regular bell-pepper or olives or any other vegetable. There is also a variation for fish lovers; egg cups with salmon. The nice things about this fluffy egg cups are that they look good, taste amazing and they are the easiest thing ever to make. All you need is a muffin tin.

This is one of those recipes where you can play around and follow your taste.

Well I followed mine and these are the ingredients that I used:

5 eggs (M) 1 small onion or ½ of a big onion 2 garlic cloves 3 Tbsp of coconut milk (in a can, it is creamier) ½ bell-pepper 2 jalapeños 8 slices of bacon or prosciutto salt and pepper

Spicy-bacon egg cups Take the eggs out of the fridge and leave them at room temperature for 10-15 minutes. In the meantime wash the veggies, chop the garlic, dice the onion and the bell-pepper and slice the jalapeños.

In a small bowl beat the eggs and combine them with coconut milk, salt and pepper. Turn on the oven to 190º C. The egg cups will be in the oven in 5 minutes. Take a muffin tin (mine has 8 muffin cups) and cover each muffin cup wall with a slice of bacon or prosciutto. No worries if the bacon goes slightly over the edge. Fill each cup with the egg mixture, stopping half a centimetre from the top. Add to each cup the chopped garlic, then onion and bell-pepper and on top of that add the sliced jalapeños.

Place the muffin tin in the oven on the middle rack and bake for 20 -25 minutes.

Serve warm or cold, with some salad on a side. Make this recipe a classic dish and use it for everyday occasions or for a special one.

Any recipes for dietary restrictions (see comment below)?

I need to eliminate soy,diary,and anything acidic. My son has a sensitivity to milk and possibly soy and has acid reflux. I need to eliminate my food so he doesn't flare up in reflux symptoms. Trying to find recipes is a task in itself. Low fat foods will help. I can't even eat ground turkey that's 85% lean because it's too much grease for him. Any advice is appreciated. Thanks!
