CHICKEN POT PIE SOUP RECIPE

 Happy day , friends! ♥ 

I hope that wherever this post finds you today that you’re well, staying very warm, and feeling ready to cozy in for a winter weekend ahead. I’m already counting down the hours until I can pack away my computer and call it a “week” and start weekending. Because it looks like this is going to be a good and simple one. Tonight is a taco date night “in” with my favorite guy, where we’re already planning to make round two of those mezcal margs I shared with you yesterday. Then Saturday morning is brunch with girlfriends, followed by a Sunday morning full of carols and Advent stories at church. But other than that, I am trying very hard to keep the rest of the weekend gloriously unscheduled, and open for impromptu naps, coffee dates, cookie bake-a-thons, or whatever sounds merry and bright. Free weekends don’t seem to happen very often in this busy holiday season. But I always love and want to protect them when they do. So in lieu of making lots of more plans, I’m just going to see where the winter wind blows….which very well might be to my couch with a good book and a soft blanket and a snuggly pup. Mmmm, winter. That said, I do know one thing I’ll be doing this weekend for sure: eating the leftovers of this ode to pot pie filling. Also known as Chicken Pot Pie Soup.

CHICKEN POT PIE SOUP

This Chicken Pot Pie Soup recipe is simple to make, lightened up with a few easy tweaks, and deliciously rich and creamy. TOTAL TIME: 35 MINS

  • PREP TIME: 20 MINS
  • COOK TIME: 15 MINS

INGREDIENTS:

4 Tablespoons butter or olive oil 1 medium onion, peeled and diced 2 medium carrots, peeled and diced 2 celery stalks, diced 4 cloves garlic, peeled and minced 4 ounces button or baby bella mushrooms, diced 1/3 cup all-purpose or white whole wheat flour 3 cups chicken stock 2 cups milk 3 cups shredded cooked chicken 1 pound Yukon gold potatoes, diced 1 cup frozen corn 1 cup frozen peas 1 teaspoon Italian seasoning, homemade or store-bought 1/2 teaspoon salt 1/2 teaspoon freshly-cracked black pepper

DIRECTIONS:

1- Heat butter in a large stockpot over medium-high heat until melted (or heat the olive oil until it is shimmering). Add onion, carrots, and celery. Saute for 6-7 minutes, stirring frequently, until the onion is soft and translucent. Add in the garlic and mushrooms, and saute for an additional 2-3 minutes, stirring frequently, until the garlic is fragrant. 2- Stir in the flour until it is completely combined, and saute for an additional 1 minute, stirring occasionally. Gradually add in the chicken stock and milk, stirring frequently. Stir in the chicken, potatoes, corn, peas, Italian seasoning, salt and pepper until combined. 3- Bring the mixture to a simmer (be careful not to bring it to a boil!), stirring occasionally so that the bottom of the soup does not stick to the pan. Then reduce heat to medium-low, and continue simmering the soup for 10-15 minutes until the potatoes are soft and cooked through. 4- Taste the soup and season with additional salt and pepper, if needed. 5- Serve immediately, with crackers on top or on the side, if desired.

Seared Chicken Thighs//Honey Roasted Brussels Sprouts// Garlic Ricotta Mash//Scratch Rosemary Gravy

Ingredients

4-5 skin on, bone-in, chicken thighs

1-1 1/2 cups chicken broth

Salt, pepper, paprika

1/2 an onion

3 tablespoons honey

2 cups brussels sprouts, cut in half

2 rosemary sprigs

1 cup ricotta cheese

5 cloves garlic, 2 peeled and diced, 3 left whole

3 large russet potatoes

6 tbsp butter

3 tbsp flour

2 tbsp olive oil

Directions

For Potatoes

Peel potatoes if you prefer, or leave skins on if you like them. Cut into even chunks, approx. a cubic inch. Peel 3 cloves of garlic

Fill large pot with enough water to cover potatoes, add a pinch of salt, bring to a boil

Once boiling, toss in potatoes and 3 whole cloves of garlic

Boil until potatoes are fork tender

Drain potatoes with a strainer and place into a large bowl

Mash with the 1 cup ricotta cheese, and 3 tbsp butter until lumps are gone. Set aside

For Brussels Sprouts

Pre-heat oven to high broil, move one rack to highest position, another in the middle

Cut sprouts in half lengthwise and put into a large bowl

Finely dice onion and garlic and add to bowl

Add honey, salt, pepper and olive oil to bowl

Toss and lay sprouts out on an baking sheet so that none of them are stacked

Place rack on the highest rack and broil on high for approx 5-8 minutes until the sprouts are just starting to char

Move to center rack and set oven to bake at 400 and bake for another 10 minutes until heated through, but still crisp.

For Chicken/Gravy

Season chicken thighs with salt, pepper and paprika. Keep Oven preheated at 400.

Heat 1 tbsp of olive oil until near smoking in a large frying pan

Put in chicken thighs skin side down and cook until they become unstuck. A good fond should form as the chicken sears. Flip over and repeat. The thighs should shrink in size and the the outside

Once both sides are seared place onto a greased baking pan and bake until cooked through on the middle rack. Approx. 25-30 mins

While the chicken is cooking keep the fat in the pan and add remaining 3 tbsp of butter and 2 sprigs of rosemary.

Once butter is fully melted and bubbly add 3 tbsp flour and whisk until roux forms.

Bring down to medium heat and slowly add chicken broth in 1/4 cup increments until desired thickness is reached. Sometimes this will require bringing heat up.

I'm always on the lookout for easy breakfast ideas that are tasty, family-friendly, use up leftovers, and potentially freeze and reheat well. These Breakfast Casserole Muffins fit the bill for sure on the first three accounts.

The measurements in my recipe are approximate. It’s hard to mess these up, so use your judgment as you go. Just take a look at how easy it is to put these together! Pin this image and be sure to make these often in the future.

 Easy Breakfast Casserole Muffins 

Ingredients

  • 3-4 pieces whole wheat bread, torn into small pieces (enough to fill muffin tins almost to top)
  • 3-4 slices deli ham (look for preservative-free)
  • 1 cup shredded cheddar cheese
  • 8 eggs
  • 1 cup milk
  • 2 teaspoons ground mustard
  • ½ teaspoon ground pepper (or more or less to taste)
  • dried Parsley

Instructions

1- Preheat oven to 400 degrees F. Grease muffins tins well. 2- Drop bread pieces evenly in muffin tins until they come about ⅔ of the way up the tin. 3- Sprinkle ham pieces evenly in each tin. 4- Sprinkle cheese evenly in each tin. 5- Whisk together eggs, milk, ground mustard, and pepper. 6- Pour egg mixture evenly in each muffin tin. 7- Sprinkle a little dried Parsley on the top of each one. 8- Bake for 15-18 minutes or until golden brown on top and cooked through the middle.

  • 1 tbsp fresh cilantro chopped sour cream

    INSTRUCTIONS

1- Preheat oven to 400F degrees. Set aside a large baking sheet. 2- Cut chicken breasts into 1/2" x 2" strips using a sharp knife, and set aside. Then cut onions and peppers into similar sized pieces. 3 - Place peppers, onions and chicken onto the baking sheet. Sprinkle on cumin, garlic, paprika, salt and pepper. Drizzle with oil and top all ingredients to coat evenly. 4 - Bake for 15 minutes. Remove from oven, and push the ingredients aside to make about 6-inches of space for the tortillas. Return to bake for 5 more minutes. 5- Remove from oven and squeeze optional fresh lime on top. Add chicken mixture to hot tortillas garnish with cilantro and sour cream. Serve and enjoy!

Red White and Blue Ice Cream Popsicles

Makes 6 popsicles

Ingredients

  • 1 1/2 cups real vanilla ice cream, softened I used Breyers Homemade Vanilla
  • 10 fresh strawberries, diced
  • 1 cup fresh blueberries
  • gold sprinkles optional

Instructions

  • Gently mix the blueberries and strawberries with the softened ice cream so that you don't bust your berries.
  • Pack the softened ice cream into your popsicle molds, gently. Tapping the molds on the your counter to make sure it settles all the way to the bottom will help ensure that you don't have any holes in your ice cream popsicle.
  • Freeze until firm (4-5 hours)
  • When you are ready to serve, run the mold under cool water for about 2-3 seconds (may take longer for plastic molds).
  • Sprinkle with gold sprinkles (optional)
  • If you are going to put them in plastic bags, let them freeze again before you put them in the bags.

  • Dry Moringa leaf/powder 50 gms

  • Soya milk 250 ml

  • Soaked Almonds 10

  • Honey 10 ml

DIRECTIONS:

  1. Soak the Moringa leaf in water for 15 minutes.

Ideas for what to serve with sweet potato mash & cabbage/artichoke bake? (Recipes included)

Hello! I'm making dinner for 4 people including myself tonight.

So far, I know I want to make Sweet Potato and Silken Tofu Mash and Roasted Cabbage and Brussel Sprouts with Crispy Herbs and Tahini Dressing. Recipes

I feel like I should make something to go with it to round out the plate but I'm not sure what?

The two restrictions are that it needs to be pescetarian, and I'm trying to impress one of the dudes who used to be a chef at a famous restaurant, (not trying to blow his socks off but I want to prove that I can cook for someone who has high standards as well as everyone else).

Any thoughts?

Need help recreating a salsa

There's a local mexican restaurant that has what they call "special salsa". It is definitely the best salsa I've ever had. It tastes very fresh and would love to be able to recreate it. My most recent attempt was close but still missing something.

Restaurant-clearly tomato, onion, cilantro, spicy, something "pungent"

Homemade- mostly tomato flavor and spicy..OVERALL FAIRLY SIMILAR, but missing something; also noticed water seems to separate more

Caramel Brownies

Mixing chocolate, cream and silky smooth caramel will generally produce a fantastic result. These caramel brownies are no exception and the end result is amazing. These caramel brownies are wonderfully rich, indulgent and decadent. Start with a thick fudgy brownie base. Top this with a sticky smooth caramel layer. Finish with another thick fudgy brownie layer sprinkled with chocolate chips. The caramel and chocolate layers blend so perfectly with every luscious rich mouthful. Once you start eating, it’s hard to stop.

Ingredients:
• 225 g Butter
• 350 g dark chocolate roughly chopped
• 1 1/2 cups White Sugar
• 4 Eggs
• 1 tbsp Vanilla Extract
• 1 1/4 cups Plain Flour
• 1/2 tsp Salt
• 1/4 cup Dark Chocolate Chips
Caramel Filling
• 400 g Caramel Lollies I use cadbury caramels
• 1/4 cup Thickened Cream

Instructions:
1. Grease and line with baking paper a baking tray (approx 33cm x 20cm).
2. Pre-heat a fan forced oven to 180°C (375°F).
3. In a large glass bowl add butter and dark chocolate.
4. Melt butter and chocolate in microwave until smooth fully combined and a smooth mix is created. Note: microwave in 40 second intervals at 50% power. Try to avoid 100% power as it is very easy to burn the chocolate. Stir after each interval.
5. Add sugar, eggs & vanilla extract to the bowl and using a wooden spoon, mix through until fully combined.
6. Spread half of the brownie mix into the baking tray. Use a spatula to evenly spread the mixture.
7. Place baking tray in oven and bake for 18 minutes.
8. Remove from oven and cool for around 15 minutes before layering the caramel.
Caramel Filling
1. In a glass bowl add the caramel lollies and cream.
2. Melt caramel and cream in microwave until smooth fully combined and a smooth mix is created. Note: microwave in 30 second intervals at 50% power. Stir after each interval.
3. Spread caramel over the brownie layer in the baking tray. Spread as evenly as possible over the brownie layer.
4. Spread the remaining brownie mixture over the caramel layer in the baking tray. Note: it will be easier to spread by dropping spoonfuls over the caramel layer and then using a spatula to smooth.
5. Sprinkle chocolate chips over the top of the brownie layer.
6. Return to oven and bake for 20 minutes.
7. Remove from oven and cool fully before slicing. Note: for best results refrigerate when cooled down to allow the brownie to set firmly before slicing.

I've gotten to a point where eating vegetables is insanely boring and it means I neglect it a bit. What are some new/out of the ordinary foods/recipes I can try to get myself back into them again?

(Question) I want to make pasta from scratch but am strapped for time!

I want to make ravioli for family (me and the people who live in the apartment below me) dinner but I am a little strapped for time. My plan was to make the dough and filling the night before and then roll it out, fill and cook right before dinner.

I am seeing that maybe making the dough before hand is not the best idea because it will dry out. If I mix the dough, wrap it in plastic wrap and throw it in the fridge over night will I be in trouble?

Best one-pot recipe?

I moved into my own place recently and have gotten into the habit of using my Sundays to make a week's worth of dinner in my dutch oven. I like it for the fact that it makes clean-up so much easier, and I can just throw the thing in my fridge for the week and reheat what I need. However, I don't have too many one-pot recipes in my arsenal and would rather not be eating the same thing any week (last week was vegetable curry, this week is chili). Any ideas/suggestions are super appreciated!

Ingredients:

  • Take a chicken and cut into 4 pieces.
  • 2 cups water.
  • Take 2 peeled tomatoes and cut into small cubes.
  • 2 cups peas.
  • Take 2 broccoli and cut into small pieces.
  • ½ kg peeled potatoes and cut into large pieces.
  • ¼ kg zucchini sliced with medium-thickness rings.
  • Cut 2 onions.
  • 4 tablespoons oil.

  • A big spoon of paprika.
  • Salt and black pepper. (As you like)

How to Prepare:

  • Take a salt, black pepper, and paprika, and mix together then pour that mixture over the chicken.
  • Leave that mixture in the fridge for an hour.
  • Heat up a large amount of water until it boils, and then put a filter over the water.
  • Put the broccoli in the refinery, then cover it, and leave it for 8 minutes.
  • Take half amount of oil on medium heat, then add the chicken pieces and leave it for 5 minutes.
  • Now place the heated chicken into the plate.
  • In the same amount, heat the rest of the oil, then add the onion and mix it well.
  • Add the vegetables except for broccoli and mix for 2 minutes.
  • Now take flour and mix for 2 minutes.
  • Add the water and leave it to boil.
  • Now heat the oven to 200 degrees. Put the vegetables in a Chinese pyrex, then pinch the vegetables, cut the chicken, and cover it with the leaves.
  • Put the tray in the oven for 40 minutes.

1 cup butter, divided 1 onion, minced 1 tablespoon minced garlic 1 (15 ounce) can tomato sauce 3 cups heavy cream 2 teaspoons salt 1 teaspoon cayenne pepper 1 teaspoon garam masala 1 1/2 pounds skinless, boneless chicken breast, cut into bite-sized chunks 2 tablespoons vegetable oil 2 tablespoons tandoori masala 

Preheat oven to 375 degrees F (190 degrees C).

Melt a few tablespoons of butter in a skillet over medium heat. Stir in onion and garlic, and cook slowly until the onion caramelizes to a dark brown, about 15 minutes.

Meanwhile melt the remaining butter in a saucepan over medium-high heat along with the tomato sauce, heavy cream, salt, cayenne pepper, and garam masala. Bring to a simmer, then reduce heat to medium-low; cover, and simmer for 30 minutes, stirring occasionally. Then stir in caramelized onions.

While the sauce is simmering, toss cubed chicken breast with vegetable oil until coated, then season with tandoori masala and spread out onto a baking sheet.

Bake chicken in preheated oven until no longer pink in the center, about 12 minutes. Once done, add the chicken to the sauce and simmer for 5 minutes before serving.

Marinate the chicken lollipops with garlic paste, lemon juice, ground pepper and salt for 10 minutes. In a bowl, beat the eggs, add corn starch to the eggs and beat it thoroughly using a whisk without any lumps and keep aside. Place white and black sesame seeds in two separate plates. Put the broccoli in the refinery, then cover it, and leave it for 8 minutes. On medium heat, hot the half amount of oil, then add the chicken pieces and leave it for 5 minutes. [Request] Suggestions to use up leftover cheese sauce?

I've been experimenting with some new recipes lately and ended up with about 1.5-2 cups of extra cheese sauce that I don't know what to do with. The sauce itself is mostly bechamel and mozzarella, with onion, parmesan, basil, and oregano in there as well.

Familiar With Duck Breast? Skinless?

Was able to get my hands on some duck breast from a very generous co-worker. There are a lot of resources out there for cooking skin on duck breast but I am not finding much for skinless. Anyone have any good ideas? I would like to stay away from bacon wrapping if possible for two reasons. I am calorie restricting and I don't want to hide the flavor of the duck. Thanks in advance!

My outrageously decadent (but simple to make) meatloaf recipe. Enjoy!

Obligatory meatloaf porn.

So this recipe is inspired by and partially borrowed from two meatloaf recipes that I really love - Kenji Lopez-Alt’s, and Amy Thielen’s. Both are great, but have sort of long ingredient lists that are a little on the fussy side for me to make on a regular basis. I fiddled around with the recipe until I found a version that gives me that ‘lowbrow pâté’ taste and texture that I love, without requiring any/many specialty ingredients (depending on your interpretation of specialty, I suppose). I have intentionally kept the seasoning simple/neutral so that you can add whatever sort of glaze or sauce (or bacon wrap?) that you prefer.

  • 1 large yellow onion
  • 7-8 cloves of garlic (I usually end up using about half a bulb at least, but you can use less if you prefer)
  • 1 package of button mushrooms
  • 1 cup whole milk (if you don’t want to buy whole milk specifically for this recipe, you can use a low fat version and increase the amount of cream cheese by 1 tbsp)
  • 2 packets of unflavored gelatin
  • 2 tbsp of cream cheese
  • 2 cups breadcrumbs (protip: you will NOT regret it if you bake a loaf of homemade bread for breadcrumbs, also giving you bread for meatloaf sandwiches after the fact. Find yourself a good no-knead recipe and have at it - it’s not hard, I promise)
  • 1 lb of ground beef
  • 1 lb of ground pork
  • 2 eggs
  • 1 tbsp of fish sauce
  • 1 tbsp of soy sauce
  • 1 tbsp of Worcestershire sauce (or equivalent amount of anchovy or umami paste)
  • 2-3 tbsp of fresh thyme
  • Salt and freshly ground pepper to taste
  1. Complete all mis en place:

    • Set out cream cheese to soften
    • Thoroughly mix gelatin packets with milk, then set aside
    • Wash and dry mushrooms
    • Finely mince thyme
    • Remove root ends and skin of onion, then quarter
    • Remove root ends and skins of garlic
    • Toast breadcrumbs over low heat in a large, flat sauce pan until they are golden, then set aside
    • In a food processor, pulse the onion and garlic until they are finely minced (but not processed into baby food), then set aside
    • Pulse cleaned mushrooms in food processor with a generous pinch of salt until they resemble breadcrumbs. Set aside into a paper towel lined bowl so that the salt can help force out some of the liquid from the mushrooms
  2. In a large, flat saucepan, melt 2 tbsp of butter (ghee or bacon fat also are great substitutions) over low heat, and then add minced onion and garlic. There will likely be a lot of liquid from the onion, so add a pinch of salt, and allow the alliums to cook over low heat until they are soft, gently golden, very fragrant, and the majority of the liquid has evaporated.

  3. Once the onion and garlic are cooked, add the mushrooms to the pan and repeat the process, cooking the mixture over low heat until the most of the liquid from the mushrooms has been reduced. When the mixture is done cooking, set aside and allow to cool off partially.

  4. While the onion, garlic and mushrooms are cooling, mix together the cream cheese, milk and breadcrumbs thoroughly with a fork in a large mixing bowl. Add a pinch of salt and several twists of black pepper, then add the ground meat, eggs, fish sauce, soy sauce, Worcestershire sauce, thyme, and the mostly cooled vegetable mix (it doesn’t have to be room temperature, but you want it too be cool enough that it won’t accidentally cook the meat or eggs).

  5. With clean hands, mix together all ingredients in large bowl. Don’t overwork the mixture, but incorporate everything thoroughly. Check seasoning by breaking off a small piece and either microwaving it or cooking it on the stovetop and then tasting. Adjust seasoning as desired.

  6. Add finished, seasoned mixture to a 9x5 baking pan, smoothing it down as you add each layer so that there are no air pockets, and then cover with foil (use a larger piece of foil than you actually need to cover the pan). Set in refrigerator to chill for ~2 hours.

  7. Preheat oven to 350 degrees F and set a rack for medium/low in the oven. While the oven is heating, remove pan from fridge and (with the foil still on) invert it over a baking sheet. Unwrap foil from edges, leaving outer edges of the foil still slightly turned up - this will allow the pan to shape the meatloaf while also letting excess liquid and fat drain off. The foil will catch the extra liquid and keep it from making a mess.

  8. Bake meatloaf at 350 for about 40 minutes. Remove from oven, and wedge the tip of a spatula or knife under the edge of the baking pan, using that to lift off the pan from the meatloaf - it should still retain its shape without an issue (if it crumbles or falls apart a little, don’t worry, it will still be delicious if not aesthetically flawless). Return to oven for another 30-40 minutes (internal temp needs to reach 140 degrees F)

  9. If glazing/saucing the meatloaf, remove it from the oven and allow it to cool slightly while you make your glaze (I’m partial to a mix of ACV/ketchup/worcestershire/coffee concentrate/brown sugar/black pepper/cumin that has been reduced to a syrup). Turn oven onto broil. Brush or drizzle half your glaze on the meatloaf, then place under broiler (don’t move the oven rack higher, you don’t want to burn the glaze). Allow to broil until the glaze is shiny and bubbling (usually 3-6 minutes, depending on how thick it is), then pull from the oven and repeat the process with remaining glaze/sauce.

  10. Allow meatloaf to rest for 5-10 minutes, then enjoy!

Chicken Bruschetta Pasta

This is nice variation to many pasta dishes that have either a rich creamy sauce or a heavier tomato based sauce to accompany the pasta. If you take some of the toppings usually added for bruschetta, such as tomato, basil & garlic, then add it to pasta, you get a wonderful blend of flavours. Add a little balsamic vinegar, mix through cream & parmesan and finally top with sliced chicken and you have a fantastic chicken bruschetta pasta meal. No pasta sauce is required for this dish. The result is creamy without being overdone. I used bow tie pasta for this dish, however linguine pasta is also a good match.

Ingredients:
• 3 large Chicken Fillets breast fillets
• 1 tbsp Olive Oil
• Salt to season
• Pepper to season
• 300 g Linguine
• 1/3 cup Thickened Cream
• 1/3 cup Parmesan cheese grated
Bruschetta
• 3 cups Tomatoes diced - I used a mixture of Roma & Cherry, (choose to your preference)
• 1/3 cup Olive Oil
• 4 cloves Garlic crushed
• 1/2 tsp Balsamic Vinegar
• 1/4 cup Basil Leaves finely chopped
• 3/4 tsp Salt
• 1/4 tsp Pepper

Instructions:
1. Pre-heat olive oil in frying pan on medium high heat.
2. Add chicken fillets, season with salt and pepper and cook for about 15 minutes or until chicken is cooked through. Note: BBQ chicken if you prefer. Once cooked, slice chicken then set aside and keep warm.
3. Cook pasta in a large saucepan according to packet instructions,
4. While chicken and pasta are cooking, make bruschetta by adding tomatoes, olive oil, garlic, balsamic vinegar, basil, salt & pepper to a medium sized bowl. Stir to mix through.
5. Once pasta is cooked, drain water leaving a small amount in the saucepan with the pasta.
6. Turn heat to low and add 3/4 of the bruschetta to the pasta and mix through.
7. Add thickened cream and parmesan to the pasta and stir to mix through
8. Season with additional salt and pepper. Stir to mix through
9. Leave on heat for a further minute to ensure parmesan has melted and tomato is slightly cooked.
10. Serve pasta in a bowl topped with sliced chicken and spoon some of the remaining bruschetta mixture on top.
11. Sprinkle some additional parmesan on top before serving

Sizzling Beef: Sizzling Beef is a delicious Chinese dish, known in China for its high nutritional value. It contains good and healthy nutrients for the human body. Ingredients: Half-kilogram beef (preferably one piece). One onion. Red bell pepper, medium size. Green sweet peppers, medium size. Yellow sweet peppers, medium size. Two tomatoes. Two fresh green onion chopsticks. One cup of fresh mushrooms. Five teaspoons of starch. One tablespoon apple cider vinegar or white vinegar. Four tablespoons of soy sauce. One teaspoon of dried ginger powder. Small spoon of salt. One teaspoon of black pepper. Oil, preferably corn oil or olive oil

How to prepare: Cut the beef into thin slices and spice with salt and pepper. Mix both soy sauce, starch powder, and spices well. Put the mixture on the steak(beef) and stir it well, then put it for 65 minutes inside the refrigerator. Place a deep frying pan over the fire, and put a little oil in it and leave until heated. Place the pieces of steak in the frying pan, and cook with oil until golden color. Now remove the frying pan from the fire and drain the steak of the oil well. Cut onion and colored peppers into medium-sized slices to match the size of the steak. Cut the green onion chopsticks into small pieces. Now cut the tomatoes into small cubes. Put a deep frying pan with oil on the fire, then put the onions into the fryer and wait until golden color. Now put a glass of water, and cover the pan. Leave the pan for a quarter of an hour(15 min). After 15 min, add the ginger, spices, salt, and pepper (as desired), fresh mushrooms and the steak. Now toss it with the mixture and then cover again until it is nearing maturity. Before simmering, melt two tablespoons of starch powder in a glass of water and add to the mixture. Stir the mixture together until it holds together. After maturation of the sizzling, remove it from the fire and leave it aside. Set the sizzling in a serving dish, and we can offer it with pepper rice or pieces of toast. Source: Here

[Request] What's your Lemon Pepper Chicken Wing recipe?

I have heard people rant and rave about lemon pepper wings. I personally have only just started making (baked) buffalo hot wings (recipe by Serious Eats). I have wanted some variety and realized I was given a lemon pepper seasoning mix; Camp Mix: Lemon Pepper which is a blend of garlic, onion, black pepper, salt, celery salt, white pepper, citric acid and turmeric.

What I'm most interest in is a baked wing recipes and recipes that utilize uses my lemon pepper seasoning and a recipe which requires fresh lemon and such.

Nicest liquid diet recipes??

My Stepfather recently underwent major surgery that went a little wong, in short; they say he is unable to eat solid food. Like ever.

Needless to say, he's pretty depressed about it. He gave away all these steaks he was saving up for when he gets better because he'll never be able to eat them. He just eats the same tins of chicken soup every day now.

Anyway, to the point. As a late fathers day present, I thought I bring him a nice meal. Something tasty so that he can be excited by the idea of eating something again. The thing is, it has to be COMPLETELY DEVOID of any lumps whatever otherwise he'll choke.

Aa many dinner recipes as you have would be nice. It'd be great if i can keep bringing him stuff.

He's my stepdad and I love him. It breaks my heart to see him so defeated. Please help.

Online pie crust recipe gave me bad info need help fixing.

Baked eggplant stuffed with couscous

Baked eggplant stuffed with couscous is a very delicious, beautiful and extremely healthy dish! Filling is amazing mix of vegetables, spices and couscous.

Ingredients:

  • 200 g (7 ounces) couscous

  • 4 medium sized eggplants

  • 2 tablespoons chopped green onion

  • 1 medium sized onion, chopped

  • 1 clove garlic, chopped

  • 2 medium sized red bell peppers, diced

  • 1 red chili pepper, chopped

  • 4 tablespoons olive oil

  • 2 tablespoons chopped fresh greens (parsley, coriander)

  • 100 g (4 ounces) grated Cheddar or Mozzarella cheese

  • ½ lemon juice

  • Salt, ground black pepper to taste

  • 400 ml (1 and 2/3 cups) hot boiled water

Instructions:

  1. Cut eggplant in half. Make cross cut all over eggplant flesh. Drizzle with lemon juice and massage flesh surface with sea salt. Leave for 30 minutes.

  2. Place couscous in a medium heat-proof bowl. Add 2 tablespoons olive oil, salt and ground black pepper. Pour hot boiled water and thoroughly mix. Cover with cap and let sit about 5-10 minutes.

  3. Using a paring knife, cut around the perimeters, leaving a 1/4-inch-wide (4-5 mm) border. Carefully scoop out the eggplant flesh.

  4. Preheat oven up to 180°C or 356°F. In a large skillet set over medium heat, warm 2 tablespoons olive oil. Place onion, garlic and chili pepper and cook. Add bell pepper and green onion mix well and fry 2-3 minutes. Add chopped eggplant flesh. Put couscous, mix well and cook 2 minutes more. After add chopped greens, salt and ground black pepper.

  5. Stuff each eggplant shell with couscous filling and place on a foil lined baking tray. Bake 25-30 minutes. Sprinkle each eggplant grated cheese and bake 5 minutes more.

  6. Serve baked eggplant stuffed with couscous while warm as a main dish, starters or as a side dish for meat, fish or poultry.

Ingredients for the bread:

  • 500 g flour
  • 10 g fresh yeast
  • 300 ml warm water
  • 2 tsp. salt
  • 1 tsp. sugar
  • 4-5 pairs of mini wiener sausages

Directions:

  1. Crumble the yeast and put it into the warm water.
  2. Add salt and sugar.
  3. Pour the yeast mixture into a bowl with flour.
  4. Knead everything together.
  5. Dust the bowl and the dough with flour, so the dough will not stick to the bowl.
  6. Leave the dough in the fridge for about 10 hours.
  7. Separate 4-5 pairs of mini sausages.
  8. Cut the dough into as many pieces as you need for your sausages.
  9. Wrap the dough around the sausages.
  10. Bake it in the preheated oven at 230°C top and bottom heat for about 30 minutes.

Note:

This also works fine for 2-3 pairs of normal sized sausages.

I am looking for a spaghetti sauce recipe that I can use my home grown grape tomatoes for, and it also can't have onion in any form

My 4 grape tomato plants are starting to overwhelm me with product so I need a way to use it all. I'd like to make a sauce tomorrow since we are having spaghetti.

  1. How many grape tomatoes do you think I'd need to make enough sauce for say 5 bowls? We don't go heavy with it. I'd be willing to supplement my supply with canned.

  2. My mom absolutely hates onion in all it's forms, she might as well be allergic to it.

  3. Which is why I'm asking here for a recipe. I would just google it but I'm at work ATM so :/

Chocolate Ice Cream Soda Directions Question

I was just curious and was planning to make it whatever random way, I know ice cream first gives you more head, but what difference does it make if I put in chocolate syrup first than ice cream than carbonated water or syrup than ice cream than soda and syrup mixed with milk/cream than ice cream than soda or syrup mixed with soda than ice cream or syrup mixed with mik/cream and soda than ice cream. What's the difference between stirring the milk, cream, or soda and syrup or ice cream and syrup.

Looking for a coconut milk and yogurt free base liquid for a Thai green lentil curry

Hello all,

I'm looking for advice for a 3.5l slow cooker green Thai vegetable curry. I'm not a fan of coconut milk, and yogurt will be too high calorie for the meal I'm planning. I'm looking for a liquid base that will cook the lentils and dilute the green Thai curry paste I have.

My planned ingredients list are;

7 garlic cloves 6 large white onions 8 mixed bell peppers Green Thai curry paste 4-500g red split lentils

In my usual chili recipe I use passata as a base, but that won't work here.

Could I maybe use a chicken or beef broth? A lot of liquid will be incorporated from the onions and peppers, so I only want to use enough to properly cook the lentils and make a thick sauce.

Pineapple Coconut Mojito

Ingredients

Original recipe makes 1 - 9 inch round layer cake

  • 2 cups butter
  • 6 egg yolks *1 teaspoon baking soda
    • 3 cups all-purpose flour
    • 6 egg whites
    • 4 cups white sugar
    • 2 cups buttermilk
    • 1 cup chopped walnuts
    • 2 cups flaked coconut
    • 1 (8 ounce) package cream cheese
    • 1/2 cup butter
    • 4 1/2 cups confectioners' sugar
    • 1 teaspoon vanilla extract
    • 1/2 cup chopped walnuts

Directions

  • 1- Cream together 1 cup butter or margarine, egg yolks, and 2 cups white sugar. Alternately mix in flour and buttermilk. Add baking soda. Mix in 1 cup walnuts and coconut.
  • 2- Beat egg whites, and fold into batter. Pour batter into three greased and floured 9 inch round cake pans.
  • 3- Bake for 20 to 25 minutes in a preheated 350 degrees F (175 degrees C) oven.
  • 4- Combine cream cheese, 1/2 cup butter or margarine, confectioners' sugar, and vanilla extract. Spread onto cooled cake. Top iced cake with chopped walnuts.

Easy Homemade Churros

Churros are typical Spanish dessert that can be bought and enjoyed all over Spain. They are best served warm with a cup of really thick chocolate. * Course: Dessert * Cuisine: Spanish Servings: 70 Churros 10-15 cm in length (depending on the size of your piping tip) Calories: 29 kcal

Ingredients

300 ml Water (10.1fl oz)

  • 180 g Plain Flour (6.3oz)
  • 50 g Unsalted Butter (1.8oz)e
  • Pinch of Salt
  • 50 g Caster Sugar (1.8oz)
  • 1 tsp Ground Cinnamon
  • 3 Small Eggs or 2 Medium Eggs
  • 2 tbsp Olive Oil or Vegetable Oil
  • + 1 Liter Vegetable Oil for Frying

Instructions

Place water, butter, 2 table spoons oil, 1 tea spoon sugar & a pinch of salt into a medium – large size sauce pan. Bring to the boil. Add plain flour and mix vigorously until well blended (the dough will come together in a minute or two). Remove from the stove and let it cool a bit. Once it is not too hot, add one egg and work the egg into the dough. Start slowly breaking the egg, then fast increasing speed, if possible. When the egg is incorporated in the dough, add another one and repeat the process. You should get dough that is not too stiff but not too soft either. Pour the vegetable/sunflower oil into a medium sized sauce pan and heat it up. Fill a piping bag (or a zip-lock bag) fitted with star piping tip with half of the dough (it is easier to handle). Check if the oil is ready for frying by dropping a tiny piece of the dough in. Once the dough turns nice brown, you are ready to pipe the churros in. Pipe the dough directly into the hot oil (choose any length you like) and cut with a fork (I found fork the best tool for this). Do not pipe too many churros in as they need space for frying. It will take only about 2 minutes for them to get nice golden color and that is a sign they are ready. They should get the color gradually. If you see they are not getting dark evenly, reduce the temperature. Take them out and place them on a paper kitchen towel to get rid of the excess oil. When they are still warm, roll each of them in a sugar mixed with ground cinnamon. Serve warm with thick hot chocolate.

TIP: Work the egg fast into the dough it to prevent the egg from cooking. This may be a bit tricky, as the dough is quite hard at this point. If you find it hard to mix with a wooden spoon, use your hands instead. Happy Baking from Happy Foods Tube!

Easy zucchini recipe

Ingredients

  • 4 boneless cod fish fillets (1 inch thick)
  • 1 tablespoon butter
  • 7 garlic cloves, chopped
  • 3 tablespoons extra virgin olive oil
  • 1 cup breadcrumbs
  • 1/4 cup chopped parsley
  • ½ tablespoon oregano
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon salt
  • 1 egg, beaten

Instructions

Preheat your oven to 400 F. In a saucepan heat the olive oil and the butter over low heat. Add the garlic and cook for one minute to soften. Remove the pan from the heat and add the parsley, bread crumbs, oregano, salt and pepper. Mix to moisten the crumbs and the seasonings. Dredge each cod fish fillet in the beaten egg. Then dredge each cod fish fillet into the breadcrumb mixture. Grease a roosting pan. Place the coated cod fish fillets in the roasting pan.
Place in the oven and bake for about 10 minutes, until the crust is golden brown. Use a fork to make sure the fish flakes and is done. Add some lemon wedges for serving.

EASY FRENCH ONION SOUP RECIPE (SO GOOD)

  • Cuisine: French
  • Serves: 2-3

INGREDIENTS

  • 1 very large onion, about 1½ pounds, halved thinly sliced
  • 5 tablespoons butter
  • ½ teaspoon sugar
  • 1 teaspoon salt
  • ¼ teaspoon pepper
  • 3 tablespoon flour
  • 1 teaspoon fresh thyme leaves, minced
  • 3½ cups broth (chicken or beef)
  • 6 slices white baguette
  • 1½ cup Gruyere cheese, grated

INSTRUCTIONS

  • 1-Melt butter in a large Dutch oven. Add onions, reduce the heat to medium low and cook stirring constantly until tender and caramelised. Don't let the onions stick to the bottom of the pot. They should be rich brown colour with distinctive smell. It will take about 50 minutes. Whisk in flour and simmer stirring constantly for 5-7 minutes.
  • 2-Stir in sugar, salt, pepper and thyme.
  • 3-Add broth and simmer with a lid on for 25 minutes.
  • 4-Preheat the broiler.
  • 5-Ladle soup between 3 ramekins and top with a few slices of baguette. Generously sprinkle with Gruyere cheese.
  • 6-Place the ramekins into a rimmed baking sheet and broil for a few minutes until cheese melts and starts to brown.
  • 7-Serve immediately! Enjoy!

Slow-Cooked Brisket and Onions

Ingredients and instructions

  • 1 tablespoon olive oil
  • 1 1/2 pounds yellow or red onions (about 2 large onions), sliced into half moons
  • 3 1/2 pounds beef brisket
  • Coarse kosher salt and freshly ground black pepper
  • 6 cloves garlic, minced

  • 2 cups beef broth

  • 2 tablespoons Worcestershire sauce

  • 1 tablespoon soy sauce (or tamari, if gluten-free)

Heat a deep sauté pan or cast iron skillet over medium heat with the olive oil. Add the onions and cook on medium-low to medium heat, stirring frequently, for about 20 minutes or until the onions have caramelized lightly.

While the onions are cooking, take the brisket out of its packaging and pat it dry. Season the meat generously with salt and pepper. Heat a large skillet or sauté pan over medium-high heat and turn on your vent or fan, if you have one. Sear the brisket until a golden brown crust appears on both sides of the meat. Remove and place in a slow-cooker insert, fatty side up. Sprinkle the minced garlic over the meat. When the onions are lightly browned, pile them on top and around the meat. Mix the broth, Worcestershire sauce, and soy sauce, and pour into the slow-cooker insert.

Cover and cook in the slow cooker on LOW for 6 to 8 hours or until the brisket is very tender. Let rest for at least 20 minutes before serving in the slow cooker set on WARM. (If your slow cooker doesn't have a WARM setting, transfer to a baking dish and cover tightly with foil while resting.) The brisket can be sliced or shredded immediately and served with the onions and juices. Or let the meat cool then refrigerate overnight. Before reheating, scrape away and discard the layer of fat that has formed around the meat. To reheat: Heat the oven to 300°F. Transfer the brisket and all its juices to a baking dish and cover tightly with a lid or two layers of foil. Warm in the oven for 1 hour or until warmed through (time will depend greatly on the size and shape of the brisket; cut into smaller pieces for faster reheating).

Recipe Notes

  • Cooking time: Personally I like brisket very tender and shredded, almost like pulled beef. But if you prefer to slice the meat for a more formal presentation, aim for the shorter end of the recommended cooking time. Final cooking time will depend on the size and shape of the meat.
  • Oven instructions: No slow cooker? Cook in the oven instead, in a baking dish covered tightly with foil or in a Dutch oven, covered with a lid. Cook at 325°F for 3 to 4 hours or until very tender.

What to do with Arborio Rice

Hi /r/recipes. I've lurked a bit here but never really posted, but what better time, right?

So I had a family member come over to use my kitchen the other day and they have left a good amount of cooked Arborio Rice in my fridge that has just been starring at me.

I have thought Risotto but obviously since its been cooked already the ship has sailed on that yes?

Anyone have a good (possibly pescetarian) recipe?

Anyone got a good recipe for homemade yogurt?

The thing is, I don't really know what this type of yogurt is called exactly. Most recipes I saw online are just simply blending regular yogurt with fruits. I'm sure that's not how it's done because:

1) Too simple to be true

2) I tried it. Not even close to the type I'm looking for.

INGREDIENTS 1 lb spaghetti or pasta of choice 2 tablespoons olive oil 2 tablespoons butter 1/4 onion, chopped 6 Roma tomatoes, chopped divided 4-6 garlic cloves, minced 1/4 cup all-purpose flour 1 1/2 cups low sodium chicken broth 1 1/2 cups milk 2 teaspoons chicken bouillon 1 teaspoon dried parsley 1/2 tsp EACH dried oregano, dried basil, salt 1/4 tsp EACH pepper, red pepper flakes 1/2 cup freshly grated Parmesan cheese 1/2 cup shredded mozzarella cheese 2 oz. cream cheese, softetned (I use 1/3 less fat) 1/4 cup loosely packed basil, chopped Garnish freshly grated Parmesan cheese fresh basil, chiffonade

INSTRUCTIONS

Cook pasta al dente according to package directions in generously salted water. Remove 1 cup pasta water before draining. Melt butter in olive oil over medium-low heat in a large skillet. Increase heat to medium and add onions and HALF of the tomatoes and sauté for 5 minutes. Add garlic and cook an additional 30 seconds. Sprinkle in flour and cook while stirring for 2 minutes (it will be thick). Turn heat to low then slowly whisk in chicken broth, then milk, stirring constantly until smooth. Turn heat to medium high and bring the sauce to a simmer. Stir in spices and continue to simmer until slightly thickened, stirring occasionally. Reduce heat to low and stir in Parmesan cheese until melted, followed by mozzarella cheese until melted, followed by cream cheese until melted. Stir in remaining tomatoes and fresh basil. Stir in pasta until well coated, adding additional reserved pasta water a little at a time if needed to reach desired consistency. Taste and season with additional salt, pepper and/or red pepper flakes to taste. Garnish with freshly grated Parmesan Cheese and additional basil if desired.
