Classic Cajun Boudin

Boudin Sausage Recipe Ingredients:

*10 lbs Boston butt

*1 lb of chicken liver

*4 medium onions

*5 stalks of celery

*2 bell peppers

*3 bunches of green onions, chopped fine

*1 bunch fresh parsley, chopped fine

*1 1/2 tbsp black pepper

*5 tbsp of cayenne

*9 3/4 cups of cooked rice

*1 package of casing

*Tony Chachere's to taste

*Dry rub (I Use Leblanc's Cajun Seasoning "Guns & Roses" Dry Rub)

Directions

Season meat with your choice of dry rub. Then heat up 3 gallon or bigger jambalaya pot. Put meat in pot and brown all the way around. Do not put lid on the pot while Browning meat. When you have graton on the bottom of the pot from browning the meat then you doing it right. Take meat out the pot when finish Browning.

Next add the trinity (onions, celery, bell pepper) and parsley cooked down for a few minutes Then you want to put the lid on the pot for about 5 mins so it will make a lil water from the onions and it will get all the graton off the bottom of the pot then add the liver and cook down with lid on pot for about 5 mins. Next add green onions to the pot and cover pot let it cook til the white onions turn translucent. Then add meat back in the pot. Add 1 gallon of water or more to the pot. Add more season if you think it needs it. I add a little Tony Chachere then taste to get it seasoned like I want it.

Finally cook the meat til the bone comes out roughly 3 hrs. Take the bone out of the pot and then keep cooking until the meat shreds itself. Turn off fire let it cool down then strain the meat out the pot to a container that will fit in the icebox. Let the meat cool all the way before putting in the icebox.

The Next Day... Take the meat out of the icebox and then add the hot cooked rice and mix til it's uniform. Once that's done then you can put the mixture into sausage casing to make the boudin sausage.

Shrimp and Grits : an iconic Southern dish

Bistro Shrimp and Grits

Servings: 4 people

Ingredients

Grits

  • 1 cup Stone Ground Yellow Grits Don't use quick grits. Chef Bud recommends Adluh Mills, Anson Mills or other quality brand
  • 1 cup Whole Milk
  • 3 cups Cold Water
  • 6 TBS Butter
  • 1 cup Grated Asiago or Parmesan
  • Salt and Pepper to Taste Bear in mind that the country ham and possibly your seafood stock are quite salty...I didn't use any salt in my grits, on the shrimp or in the sauce

Shrimp and Sauce

  • 1 pound Local Shrimp
  • 1 large Green Tomato or equivalent...I used several small green tomatoes
  • 1 TBS Minced Shallot may substitute red onion
  • 1/4 tsp Minced Garlic
  • 4-6 ounces Country Ham, cut into small strips or diced
  • 1/2 cup Dry White Wine
  • 2 cups Shrimp Stock or seafood stock
  • 8 TBS Unsalted Butter cut into cubes
  • 1 tsp each diced fresh thyme, basil and parsley
  • 2 TBS thinly sliced scallion
  • fresh chives optional

Instructions

Grits

  • In stock pot, bring water, milk and butter to a boil
  • Slowly whisk in the grits and return to a boil for 1-2 minutes
  • Reduce heat to a high simmer and cook 30-45 minutes or until grits are tender
  • Remove from the heat and stir in the cheese.
  • Season with salt and pepper to taste

Shrimp

  • While grits are cooking peel and clean shrimp
  • Season with salt and pepper to taste and set aside

Sauce (Sauce can be made in advance and kept warm)

  • In a hot saute pan, place 2 T butter, shallot, garlic and country ham and cook until lightly brown.
  • De-glaze the pan with white wine
  • Add green tomatoes to pan and cook approximately 1 minute
  • Add shrimp stock and 2T butter and let reduce by 1/4
  • Add scallions and fresh herbs
  • Remove from the heat
  • Finish sauce by stirring several cubes of cold butter into the sauce until it thickens slightly
  • Season to taste with salt and pepper

IN A SEPARATE PAN:

  • Heat pan and add 2 T butter and the shrimp
  • Cook just until the shrimp turn pink on the bottom and then turn the shrimp. Remove the pan from the heat. The shrimp will finish cooking with the residual heat from the pan.

To Serve:

  • Toss the cooked shrimp into the sauce
  • Divide the grits between 4 bowls
  • Spoon sauce and shrimp mixture equally into bowl on top of the grits. Do not stir up.
  • Garnish with fresh chives (optional)

I recently discovered this local company that makes awesome spicy pickled okra, carrots, etc alongside actual pickles, and would like to make them part of a more complex meal rather than eating them out of the jar like the horrible bachelor I am. Looking for Soul Food recipes that taste like home

Hi,

My friend group has been going through a difficult time all around, from family deaths to shitty break ups to unemployment.

They've always helped me when my life was poopy and I really want to bring us together for a good home cooked dinner to thank them and be there for them.

The only definitive side I have picked is Paula Deen's Crockpot Mac n Cheese (or as I call it, coronary disease mac n cheese).

I want to make fried chicken, maybe some green beans and a gumbo and salad or coleslaw.

Can you recommend any recipes within the soul food idea, foods you'd want to eat when you're sad to feel better?

My wife cannot have anything relating to a cow right now due to my breastfeeding daughter having issues keeping it down. I am wanting to make a Macaroni Salad but everything I am finding is requiring condensed milk. Do they make a dairy free condensed milk? We have mayo that is dairy free, so that is not an issue. Brown Sugar & Balsamic Pulled Pork

This is a really simple easy pulled pork recipe that uses only a few ingredients and is easy to prepare. The taste is absolutely amazing for such a simple pulled pork recipe. This will definitely become one of your favourite pork dishes. The shredded pork is initially rubbed in a brown sugar, Dijon mustard and balsamic mix. This provides a wonderful juicy, tender tasty base. However, what really elevates this dish to another level is the amazing brown sugar, soy sauce & balsamic glaze that is simmered and thickened before being drizzled over the pork.

Ingredients:
• 2 - 2.5 kg Boneless Pork Shoulder I also use boneless Pork Leg as well
• 2 cloves Garlic chopped
• Salt to season
• Pepper to season
• 1/2 cup Brown Sugar firmly packed
• 1 tbsp Dijon Mustard
• 1 tbsp Balsamic Vinegar
• 3/4 cup water
Brown Sugar & Balsamic Sauce
• 1 cup Brown Sugar firmly packed
• 2 tbsp Corn Flour
• 1/2 cup Balsamic Vinegar
• 1 cup water
• 4 tbsp Soy Sauce

Instructions:
1. Cut the pork into 5-6 smaller chunks to fit easier into your pressure cooker.
2. Rub salt and pepper into each pork chunk.
3. In a large bowl, add brown sugar, dijon mustard and balsamic vinegar. Stir to fully combine.
4. Add pork to bowl and using your hands, coat each pork chunk with the brown sugar mixture.
5. Place pork into pressure cooker along with garlic and 3/4 cup water.
6. Cook on high setting for about 45 minutes.
7. Once pork is cooked, remove from pressure cooker and shred.
8. Drizzle brown sugar and balsamic sauce (see instructions below) over the pork and serve.
Brown Sugar Balsamic Sauce
1. In a saucepan over medium heat, add brown sugar, corn flour, balsamic vinegar, water and soy sauce and stir to mix fully.
2. Bring to boil then reduce heat and simmer for 10 - 15 minutes to allow the sauce to thicken. Stir regularly.
3. Drizzle over shredded pork.

I am making my husband a cake for his birthday and there are so many conflicting recipes. I just want it to be moist and taste good.

Going for a strawberry cake with chocolate icing, but here's what I have:

About 2 cups ripe Strawberries

Regular Flour

Baking powder & soda

Eggs

Milk

Half & half

Condensed milk (I don't think it's the sweet kind)

Butter

Sugar, Turbinado sugar, coconut sugar, brown sugar, stevia, confectioner's

A full bar of Ghirardelli 100% cacao baking chocolate

Cocoa powder

Coconut milk/oil

Also want to add that I don't have a hand mixer!

Request: snacks and small meals that don't need to be refrigerated

I work 8 hour shifts at a restaurant and only have a few minutes to eat every day. Usually I just bring a clif bar or sneak french fries from the kitchen but that's starting to get old.

Ranch Chicken Salad

​​ Riddle me this: What do ranch dressing, a plumber's crack, and the Alaskan Bush have in common?

Answer: Everything. Hidden Valley Ranch dressing was developed by Steve Henson in 1949 while working as a plumber and cook in the Alaskan Bush in 1949. He was working out a three year contract as a plumber but ended up cooking for the crew. Henson knew he was cooking for a tough crowd. He reported that if the men did not like a dish they were just as likely to throw it at the cook as they were to walk out cursing. The men were especially disgruntled when served salad... AGAIN!

Henson began experimenting with 3 basic ingredients and a salad dressing was born. He had buttermilk, mayonnaise, and an assortments of herbs in one hand and a need to pacify cranky plumbers in the other. His fellow plumbers liked his creamy white stuff and agreed to eat their veggies peacefully; no more plates were thrown at Henson. A few profane words might have been uttered from time to time but the plates and Henson's head were finally safe.

Henson left the Alaskan Bush in 1952 to pursue his dream of owning and operating a dude ranch hideaway for tourists. He took his recipe with him to serve guests at the ranch. Dude ranch tourists loved it and wanted to buy bottles of his dressing. Demand outstripped his ability to supply bottles of Ranch Dressing so he began selling spice packets that could be mixed with buttermilk and mayonnaise at home. Recipe booklets flooded the market and ranch dressing was no longer used only as means of calming volatile plumber tempers. It had gone mainstream.

This chicken salad is a cool alternative to a hot heavy meal in the August heat.If you purchase a roasted chicken at your local grocery store the dinner can be ready to eat in 30 minutes without heating up the kitchen. I think it tastes even better the next day so I often make this salad one evening, stash it in the refrigerator, and eat it the next. It is refreshingly cool and creamy with a mild ranch flavor.

I made a few changes to the 1962 recipe. First, I buy my chicken roasted instead of cooking it myself. I also substituted sour cream for the mayonnaise. I like the tang and added body of sour cream. The original recipe calls for plain yogurt; I use plain Greek yogurt.

​​ Chicken Ranch Salad ½ cup sliced almonds, toasted 2 cups cooked and cooled chicken, cubed 1 cup celery, diced 1 can (8 oz.) pineapple chunks, drained 1 can (8 oz.) sliced water chestnuts, drained 1½ cups seedless grapes, halved

Dressing 1 package (1 oz.) dry Ranch Salad Dressing Mix ½ cup sour cream (or mayonnaise per the original recipe) ½ cup plain yogurt (I prefer Greek) ¼ cup honey

To toast almonds place them in a single layer in a frying pan. Place over medium heat. Stir often and watch carefully because nuts go from perfectly toasted and aromatic to burned in very short order.

Let pineapple and chestnuts drain through a strainer placed over a bowl. While pineapple and chestnuts are draining cube chicken, dice celery, and halve grapes. Place all in a large salad bowl.

To make dressing empty Ranch Salad Dressing Mix into medium sized bowl. Add yogurt, sour cream (or mayonnaise), and honey. Mix well. Pour over chicken mixture and very gently stir.

Sprinkle toasted almonds over the top. Eat right away or cover with plastic wrap and let chill in the refrigerator for up to 2 days.

Chicken & Chorizo Paella

Paella is associated with a wonderful Spanish heritage. There are many versions and variations to paella, including seafood versions. This version has chicken and chorizo as the main ingredients. The chicken and chorizo provide a perfect blend and base to the paella. The onion, capsicum and garlic that is mixed through add to the flavour. The saffron threads, pepper and smoked paprika provide a lovely subtle heat to the dish. Simmered in stock and tomatoes and finished with peas and parsley and you have a fantastic Spanish inspired meal.

Ingredients:
• 4 tbsp Olive Oil
• 3 Chicken Fillets breast fillets cut into bite size pieces
• 2 Chorizo Sausages
• 1 large Brown Onion
• 1 Red Capsicum diced
• 3 cloves Garlic crushed
• 2 1/2 cups Arborio Rice
• 4 cups Chicken Stock use stock cubes
• 1 tsp Pepper
• 1 tsp Smoked Paprika
• 1 pinch Saffron Threads
• 1 tsp Garlic Salt
• 400 g Diced Tomatoes 1 can of tomatoes
• 1 cup water
• 1 cup Peas I use frozen straight out of refrigerator
• 1/4 cup Fresh parsley finely diced - use continental / flat leaf parsley
• Salt to season
• Pepper to season

Instructions:
1. Heat 2 tbsp olive oil in a large frying pan over medium high heat.
2. Add onion and capsicum and cook until vegetables begin to soften and start to brown. About 5 minutes or so.
3. Add garlic and cook until fragrant. About 30 - 60 seconds depending on heat of your pan.
4. Remove all ingredients from the pan and set aside.
5. Add 2 tbsp olive oil to the pan and add chicken and chorizo and cook until about 50% or so done. Season with salt and pepper. Remove from pan and set aside.
6. Add rice to pan and cook to toast for about 3 minutes. Rice will start to lightly darken in colour. Stir regularly.
7. Add 1 tsp pepper, smoked paprika & saffron threads to chicken stock and stir to mix through.
8. Add chicken stock mixture to rice in pan and stir to mix through.
9. Add chicken, chorizo, onion & capsicum mixture back to pan and stir to mix through
10. Add diced tomatoes, 1 cup water to pan and stir to mix through.
11. Reduce heat and simmer, uncovered, for 20 - 25 minutes or until rice is tender and liquid is absorbed. Depending on the heat of your pan you may need to simmer a little longer for the liquid to fully absorb or you may need to add a little more water if it absorbs too quickly and the rice is not yet tender.
12. Add frozen peas and parsley and stir to mix through. Cook for a further 1- 2 minutes to heat the peas.
13. Taste and season with additional salt and pepper if required. I did not add any at this stage but add it to your preference.
14. Garnish with lemon wedges and serve.

Request: Great but easy party recipes.

Hey everyone.

In about 1 1/2 weeks, I will be hosting a party for my friends. Every year, we have a BBQ and I make some food/drink for the group. It's always home-made, but this year I am struggling to think of something fun, interesting, but most of all, non-time-consuming.

I have access to a gas hob, grill, oven and gas BBQ, with a fairly decent Superstore (Morrison's, UK) across the road.

There will be a lot of alcohol, and a group of around about 10 people. One or two in the group don't like spicy food, so if it's something I could easily customise, even better.

[Request] Unbelievably easy, more-or-less healthy weeknight dinners for busy families?

My wife and I pretty much live on take out, and I'm unbelievably fed up with it. I'm super overweight, so we need to start eating better, but we also have a 2 and 4 year old and work full time jobs. We get home around 5:00-5:30, and the kids are in bed by 7:00-7:30, so I don't need recipes that take an hour to cook - that would super eat up family time.

Total time: 35 min

Portions: 6-8

Ingredients:

  • Butter - 2 teaspoons

  • leek - 2 pieces

  • Potatoes - 1.5 kilograms

  • Trout - 0.5 kilograms (fillet)

  • Bay leaf - 1 Each

  • Salt - To taste 1

  • Pepper - 1 To taste

  • Dill - 1 To taste

  • Water - 6 cups

  • Cream - 1 Litre Instructions:

  1. In a saucepan send a spoon of butter, melt it.

  2. Slice the leek finely, put it in the oil. Fry for about 5 minutes, stirring, over medium heat.

  3. Pour water or pre-cooked fish broth. Add salt and pepper, bring to a boil.

  4. Peel and cut the potatoes into small cubes. Pour into the pan and cook for about 15 minutes until soft.

  5. Wash the trout fillet and slice. Grind a little green (in this case, dill).

  6. Put the fish in a pan, add to the flavor bay leaf and cook for another 5 minutes, literally.

  7. At the end, add the cream, even a spoonful of butter and herbs. Warm up a little on the fire - and you can immediately apply to the table. Bon Appetit!

Seafood and chicken stock - can you mix?

Got a question for the foodies out there. In stews which contain chicken as well as seafood, can you mix the stock?

I am making some stews this week, and trying to make gumbo for the first time, and several of the stews contain chicken and seafood. I know you sometimes mix beef and chicken for stocks, does it work to mix seafood with chicken?

Indian/Thai Hybrid Curry

Not really sure where this fits in on the curry spectrum, but I quite like it, as has everyone I've made it for.

Serves 4-6.

Ingredients

  • 1 can coconut milk
  • 1.5 C white rice (Jasmine or Basmati)
  • 2-3 chicken breasts, depending on size
  • Alternately, lamb
  • Olive oil
  • 1/2 yellow onion, chopped
  • 2 handfuls of chopped walnuts
  • 2-3 handfuls of golden raisins
  • 2 Granny Smith apples, chopped
  • 1/2 - 3/4 C plain Greek yogurt
  • 1/4 - 1/2 C heavy whipping cream
  • 1 lime
  • Honey to taste
  • Green pepper to taste
  • 1 TBSP garam masala
  • 3+ TBSP madras curry powder
  • 2-4 garlic cloves
  • Fresh-grated ginger to taste

Instructions

  1. In a rice cooker or pot, cook the rice, using the coconut milk with some additional water.
  2. In a large pan (this is a one-pan dish, other than the rice; size appropriately), drizzle a generous amount of olive oil, heat to Med-Low.
  3. Combine onion, walnuts, apples, and golden raisins; simmer.
  4. Prepare the garlic however you want - diced or pressed recommended. Add to the pan.
  5. After the walnuts have softened, add the chicken.
  6. After a minute or two, add the yogurt and cream. Start on the lower ends of the measurements, but keep the yogurt:cream ratio at >= 1.5:1.
  7. Add the green pepper (freshly cracked is best); not more than 1 TSP
  8. Add the garam masala and curry powder. Anything over 5 TBSP starts getting pretty warm. My wife likes 3, I like 4-5.
  9. Let it cook down for a while; the consistency should go from runny to thick as it cooks down.
  10. Squeeze the lime over it, stir it in.
  11. Add the honey to taste; 1-2 TBSP is a good amount.
  12. Right before you take it off heat, add in the grated ginger.
  13. Serve over the coconut rice.

Notes:

  • I get my curry powder from a small Indian food/spice store. If you have a favorite, use it. I've tried Jamaican style, and it didn't work as well.
  • If you use lamb, sear it first.
  • You can also add some green cardamom, but depending on the asafoetida content of your curry powder, you may not want to, as they can compete.
  • The entire recipe is balanced with acidity from the yogurt and lime offsetting the creaminess of the coconut milk and cream, and the sweetness of the honey balancing the acidity. If they aren't in the proper balance, it doesn't work. If you think it's bland, add more acid.

Need some help coming up stuff to cook on a restricted diet

I recently got told I can't have -gluten -red meat -refined sugars/processed food I'm also allergic to coconut and the hubby is allergic to shellfish

Appetizer of chicken

Ingredients: - Chicken fillet - 4 Pieces - Vegetable oil - 1/2 cup - Lemon juice - 2 tbsp - Any sauce based on chili - 2 tbsp - Bacon, sliced - 400 grams - Cane Sugar - 1 cup Instructions: 1. Chicken fillet cut into cubes, measuring 2.5 by 2.5 cm. Put the fillets in a jar, glass bowl or resealable bag for marinating. In bowl, mix oil, lemon juice and sauce based on chili. Pour the sauce to the chicken and mix well. Send for an hour in the refrigerator to marinate. 2. An hour turn the oven heated to 170 degrees. Each piece of chicken wrap a strip of bacon and secure with a toothpick, roll in sugar and cane to submit on the laid parchment baking. 3. Bake appetizer of chicken in preheated oven for 20-30 minutes, put the pan in the middle. During cooking, turn the pieces. Cooking time depends on the oven, but I go out about 8 minutes on each side. Bacon must be crunchy. Bon Appetit!

Roasted radish & runner bean traybake

This is a great one-pan wonder – roast veg, cheesy croutons, and a punchy herby dressing. It's just perfect for summer.

Ingredients -2 courgettes -150 g runner beans -70 g ciabatta -6 radishes, with tops -3 cloves of garlic -100 ml white wine, or organic vegetable stock olive oil -25 g Cheddar cheese -extra virgin olive oil -1 teaspoon runny honey -1 tablespoon red wine vinegar -A few sprigs of fresh dill, flat-leaf parsley, chives

Method

Preheat the oven to 190ºC/375ºF/gas 5. Trim the courgettes, halved lengthways, then slice, along with the runner beans, into 2cm pieces. Tear the ciabatta into 2cm chunks and add all this to a roasting tray, along with the radishes and unpeeled garlic. The One True BLT

Alright guys, I'm not normally one to say there's a 'right' way to make a given food, but when it comes to BLTs, I am, and I do. I'm going to share it with you, and if you find yourself disagreeing, I want you to take a moment and consider the choices you made in life that brought you to a place where you could be so wrong.

Ingredients:

  • 3-4 pieces of bacon, your choice. Cook them how you like, but I recommend at least some crispiness.
  • Bread, sandwich. Not WonderBread, but also not anything fancy. No croissants or crazy french bread, just a basic American style sandwich bread, preferably whole grain
  • Tomato, fresh and in season. Your choice, but I recommend a juicy variety - something like beefsteak, not roma. Don't try to make this in the winter with one of those cardboardy tomatoes. If you want to use cherry tomatoes, I'm not going to stop you, but I will pity your foolishness.
  • Lettuce - something crispy and sweet, like romaine or iceberg. Arugula has its place and it is not here.
  • Mayonnaise, your favorite brand. No miracle whip allowed.
  • Pepper, freshly ground
  • Salt

Put the two pieces of bread together and toast them in the toaster, so they only get toasted on one side. This allows you to enjoy the crunch of toast while still having a soft exterior to the sandwich. Spread a liberal amount of mayonnaise on the toasted side of both. Grind some pepper onto the mayonnaise.

Slice the tomato at least 1cm thick (about 1/2 inch. there are 2.54 cm to an inch in case you are curious, so it would actually be a little bit less than 1/2 inch, but then, I said at least 1cm, so 1/2 inch is ok), and place the tomato slices onto the mayonnaise on one of the pieces of bread. Put a small pinch of salt onto the tomato. Place the lettuce onto the other side and the bacon in between . Now, you're going to want to add other things. Basil, cheese, hamburgers. Don't. If you do we can't be friends. The only exception I will make is fresh, unseasoned avocado, which can have some salt and pepper ground onto it.

Enjoy your BLT with something crispy and salty, and with the cold beverage of your choice.

Request: Hawaiian Potato Mac Salad

I am currently addicted to hawaiian-style potato mac salad. Of course I Googled recipes, but I felt overwhelmed and I much prefer the social aspect of recommendations.

So here I am - Anyone have any favorite potato mac salad recipes?

I think I have all the basics: potatoes, elbow mac, eggs, mayo, carrots, pickles. I just don't know the best mix of everything. I also have probably any seasoning I'd need to add.

My boyfriend told me this was his favorite thing I've ever cooked for him.

I usually omit the honey because I like the savoriness of the filling without it and can't taste the difference when it's in there.

Also I use queso fresco as the cheese (which you can find at most grocery stories if you look a little harder).

If you make enough to have extra filling, it is VERY easy to pull out a serving and make a quick quesadilla for a meal. We've thought about making a huge batch of this and freezing it to pull out when we want it but don't feel like cooking.


3 tablespoons olive oil 1 large red onion, chopped (about 1-1/2 cups) 4 garlic cloves, minced 1/3 cup minced chipotle peppers in adobo sauce (you'll need about 6 chilis) 4 vine-ripened tomatoes (about 1-1/4 pounds), seeded and diced 3 scallions, thinly sliced 2 tablespoons honey 2-1/2 cups cooked shredded chicken (white and/or dark meat) 1 teaspoon salt 1/2 cup chopped cilantro 6 10-inch diameter flour tortillas 4 cups shredded sharp cheddar cheese Sour cream, for serving (optional) Lime wedges, for serving (optional)

In a large sauté pan, heat the olive oil over medium heat.

Add the onion and sauté until soft, about 5 minutes.

Add the garlic and cook 1 minute more.

Stir in the chipotle peppers and tomatoes. Cook until most of the liquid from the tomatoes has evaporated and the mixture is thickened, stirring often, about 20 minutes.

Stir in the scallions, honey, chicken, salt and cilantro.

Once the filling is made you just assemble it in a frying pan with whatever cheese you'd like!

Oatmeal Chocolate Chip Ice Cream Cookie Sandwich

Chocolate Chip Oatmeal Ice Cream Cookie Sandwiches

Servings: 12 ice cream cookie sandwiches

Ingredients

  • 48 ounce container of Vanilla Ice Cream or your favorite flavor
  • 24 Oatmeal Chocolate Chip Cookies
  • 1 bag mini chocolate chips

Oatmeal Chocolate Chip Cookies

  • 2 sticks unsalted butter room temperature
  • 1 cup white sugar
  • 1 cup light brown sugar
    • 2 tsp vanilla
  • 2 eggs room temperature
  • 1.5 cups all purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 3 cups oats
  • 12 ounces mini chocolate chips

Instructions

For the Chocolate Chip Cookies

  • Preheat oven to 350'
  • Line baking sheets with parchment paper or silpat mat
  • Cream butter and both sugars on high for 3 minutes until light and fluffy
  • Add in vanilla and eggs and mix until just combined
  • Mix flour, baking soda and salt in separate bowl and then add to the butter mixture until just combined.
  • Add chocolate chips and oats and mix until just combined
  • For this recipe, I used a large cookie scoop so that my cookies were of the same shape and size. Space your dough scoops about 2-3 inches apart on your mat
  • Bake for 13-14 minutes until just browning on the edges but still soft in the center.
  • Let cool on wire rack

To Assemble the Ice Cream Cookie Sandwiches

  • My cookies were about 3-3.5 inches in diameter and I wanted my ice cream rounds to be about that size. As Kismet would have it...a typical tin can is about 3" in diameter. So I washed out a used tin can, removed both top and bottom, packed vanilla ice cream in, place the can in a ziplock bag and put it back in the freezer for about 2 hours or until frozen solid.
  • Once the ice cream was frozen, I was able to cut it into 6 slices. Then I refroze another 'can' of ice cream and cut it. If you want to do it all at once, then use 2 empty cans. You may need to pop your sliced ice cream rounds back in the freezer if they start to melt.

It was then just a matter of making the sandwiches and rolling them in the mini chocolate chips. They are practically perfect in every way when eaten now...but if you do need to freeze them, they can sit at room temperature for 5 minutes without melting and then the cookie is just that much softer.

Chicken Caprese Penne

Chicken Caprese Penne is one of those wonderful comfort food pasta bake dishes. It’s a great family meal that just about everyone will love. Chicken & penne pasta bakes are usually a great food combination to start with. Mix this with a lovely tomato based pasta sauce that also contains, parmesan, cream and garlic and you have a very tasty combination. Add in mozzarella, basil and mini roma tomatoes for a sweet burst of flavour and the dish becomes even more creamy and mouth-watering. Finish with a topping of mozzarella to provide a beautiful golden topping and you will want to keep eating this meal until you burst.

Ingredients:
• 2 large Chicken Fillets breast fillets cut into bite sized pieces
• 350 g Penne Pasta
• 500 g Pasta Sauce
• 1/2 cup Thickened Cream
• 1/2 cup Parmesan cheese
• 1 clove Garlic crushed
• Salt to season
• Pepper to season
• 250 g Cherry Tomatoes sliced in half (I used mini Roma tomatoes)
• 2 1/2 cups Shredded Mozzarella Cheese separated as 1 1/2 & 1 cup amounts
• 3 tbsp Basil Leaves roughly chopped

Instructions
1. Pre-heat a fan forced oven to 190°C (375°F).
2. In a frying pan over medium high heat add chicken and cook until browned. Remove from heat and set aside.
3. Cook penne according to packet instructions.
4. In a medium saucepan on medium heat, add pasta sauce, thickened cream, parmesan, garlic, salt & pepper. Stir regularly until cheese melts.
5. Drain pasta and add to a large baking dish.
6. Add chicken, tomatoes, 1 1/2 cups mozzarella cheese, 2 tbsp basil leaves to baking dish. Stir to mix through.
7. Add pasta sauce over the top and stir to mix through.
8. Sprinkle remaining 1 cup mozzarella over the top of the pasta and place in oven and cook for about 20 minutes until cheese is golden.
9. Sprinkle with basil leaves and serve.

Help Me With Chicken Parm

Hey guys; first time posting here. I need some help with a REALLY good tomato sauce specifically, but breading tips would also be a godsend. I am a fairly adept cook, I would say. Not professional by any means (I can cook a mean risotto). But I want to step my chicken parm up to the next level, and I feel that my tomato sauce is my weak point (currently only use prego, OUCH!), I just haven't been able to find a recipe for me.

Also, another question I have is about cheeses. Where in the WORLD do I get good cheese in Kansas City. The options I have found are Walmart, and all that cheese is dried out by the time I get to it.

Any input is HUGELY appreciated.

[Request] Recipe for Milkshakes (specifically strawberry but vanilla & chocolate are welcome)

I am dying for a strawberry homemade milkshake recipe that rivals fast food and restaurant quality milkshakes. I am definitely looking for strawberry milkshake recipes but would gladly also accept an awesome vanilla and chocolate recipe as well.

I believe this Emeril Lagasse Strawberry Milkshake recipe is what I have tried in the past but it was more smoothie than milkshake in my opinion.

Yet Another Braised Short Rib Recipe

Semi-influenced by, but hoping to start a discussion about: http://www.bonappetit.com/recipe/red-wine-braised-short-ribs

Still cooking, but I think this holds some promise:

Braised/slow cooker short ribs

2.5 lb short ribs with bone, cut into 3” cube

1/2 c rice flour

1 tbsp salt

1 tbsp pepper

1/2 tsp garlic powder

2 tbsp butter

Heat skillet, combine dry ingredients. Add butter to skillet, dredge short rib cubes in flour mixture, brown on each side. Remove from pan and transfer into crock pot (or remove if using dutch oven).

6 cloves garlic

1/2 medium onion

1 stalk celery

1 medium carrot

1 c dry red wine

2 c can of beef broth

1/2 small can tomato paste

Worcester sauce

salt, pepper

4-5 leaves basil

4-5 leaves laurel bay

4-5 stalks thyme

4-5 stalks oregano

Add garlic to remaining butter/beef fat. Add onions and salt. Brown garlic and onions, transfer to crock pot. Alternately, replace crock pot with dutch oven (omit transferring, bring short ribs back into dutch oven).

Cut carrot into disks, celery into chunky slices at an angle. Or however you want. It’s your life.

Deglaze the pan with wine. Add beef broth. Incorporate tomato paste with spoon or wisk. Transfer to crock pot (pouring over rib/onion/carrot/celery medley) to cover mixture. Splash some Worcester sauce, add herbs, cover and cook until it’s done. Not sure how long that will take, but I’m going to leave the crock pot on high ’til it starts to boil, then lower it for 2-3 hours.

Since I don’t have a dutch oven, I would probably use a large (8 qt) saucepan, or casserole, and use it like a crock pot — combining ingredients and put in oven. Two strategies I haven’t tried, but heard they might work: 375* for 1/2 hour, lower to 275* for 1-2 hours; or, 325* for 2-3 hours.

Lebanese Green Bean & Tomato Stew (Loubya Bi Zayt)

Ingredients:

5 medium tomatoes, ripened

4 white onions, finely diced

2 pounds fresh green beans

2 tablespoons tomato paste diluted in 1 cup of water

1 garlic clove, thinly sliced

1/2 cup of olive oil, plus more

Salt and pepper to taste

Red pepper flakes to taste (optional)

Directions

Clean and trim your green beans, cutting them into 1-2 inch pieces.

Drizzle some olive oil in a large pot and sauté half of your finely diced onions until translucent and light brown.

You can sauté all the onions at once to save time but the dish will be on the sweeter side no matter how much salt you add.

While the onions are slowly caramelizing (careful not to burn), blend the ripened tomatoes in a blender with salt and pepper to taste. If you don’t want the tomato seeds or skin then strain before adding to the pot.

To the pot, add in your green beans, garlic, and the rest of your onions and cook for 5-7minutes, stirring gently. You want the green beans to pick up flavor and color but make sure they don’t steam or they will taste rubbery.

Finally, pour in the fresh tomato juice, diluted tomato paste, and 1/2 cup of olive oil and bring to a boil before turning the heat on low. Let it simmer uncovered on low heat for about 30-40 minutes until the green beans are tender and a thick gelatinous texture begins to form.

Serve hot as the main dish or let it cool and serve as a side.

Request for Recipe on Buttermilk Biscuit as a Cake

I am looking for good recipe suggestions for Chicken Tikka Masala. I have been making this recipe for awhile, but I want to make it a bit more... restaurant-style? I want that warm creamy sauce that you typically get in a restaurant, and this recipe isn't quite as creamy as I would like. Please don't diss me for preferring ranch over blue cheese, but i tried the blue cheese dip and well..blue cheese tastes like dirty socks to me.

Kale Carrot Salad with Lime Tahini Dressing

Ingredients:

  • ½ head of lettuce
  • Handful of kale
  • 1 carrot, grated
  • 1 tea spoon tahini
  • 1 tea spoon olive oil
  • Juice of ½ lime
  • Pinch of garlic powder
  • Pinch of sea salt

Instructions:

  1. Add roughly chopped lettuce and kale to a bowl.
  2. Add the grated carrot to the greens and mix the veggies together.
  3. To make the dressing, add all of the ingredients together in a small bowl and mix until thoroughly combined.
  4. Either stir the dressing into the veggies or add on top of the salad.
  5. Enjoy this salad on its own or paired with your preferred protein and carbs.

Gazpacho Soup Recipe

This light version of traditional Spanish gazpacho is perfect for hot summer time. During a season of juicy ripe tomatoes you may enjoy it every day!

Ingredients:

For gazpacho:

  • 5 medium sized tomatoes
  • 2 medium sized bell pepper, trimmed and deseeded
  • 1 big onion, peeled and cut into big pieces
  • 2-3 cloves garlic, peeled
  • 2 medium sized cucumbers, peeled and cut into big pieces
  • 1-2 jalapenos, trimmed and deseeded
  • 4 cups tomato juice or cold water
  • 3-4 tablespoons Extra Virgin olive oil
  • 3 tablespoons wine vinegar
  • Salt and ground black pepper to taste

For serving (optionally):

  • 3 slices of bread, diced
  • 4 tablespoons Extra Virgin olive oil
  • 1 cucumber, peeled and finely diced
  • 1 medium onion, peeled and finely diced
  • 1 bell pepper, trimmed, deseeded and finely diced
  • Parsley and basil leaves, handful of each
  • 1 teaspoon fresh or dried thyme
  • Half lemon juice
  • Salt and ground black pepper to taste

Instructions:

  1. Make two cross cut on the tomatoes, place them into a saucepan and pour with hot boiled water. In 10-15 minutes place tomatoes into a bowl with iced water for 1-2 minutes. Then peel, core and cut tomatoes into big pieces.

  2. Cut bell pepper into big pieces and add to the tomatoes. Into the same saucepan put onion, garlic, cucumbers and jalapenos. Pour tomato juice, wine vinegar, olive oil and mix well. Add salt and ground black pepper to taste. Thoroughly mix and chill in the fridge about 2-3 hours or better overnight.

  3. Mix diced bread with thyme, drizzle with a bit of olive oil and fry on a dry pan until evenly golden. Place basil and parsley leaves into a blender. Add garlic, olive oil, lemon juice, ground black pepper and salt. Shake well until smooth and place into a sauce boat. Put croutons and diced cucumbers, bell pepper and onion into the small plates or bowls.

  4. Serve gazpacho chilled. Pour with sauce and add croutons and diced vegetables to taste.
