Recipe ideas for a beach trip

I'm taking my fiancee to my aunt's beach house Saturday through Wednesday--she is in the last couple days of an incredibly stressful gig so we decided to get some R&R as soon as it's over. No joke, she's lost probably 15 lbs in the last 2-3 weeks because of how stressful this gig has been, so I want this trip to take away all her stress and get her back to a healthier/happier state.

I'm the cook in the family and so I'd love to indulge a little on this trip with tasty dinners. My hope is for 4 meals that aren't too expensive (happy to splurge on really good steaks for one of the meals but I need everything to balance out to not crazy expensive), and are super tasty and filling. I'm more than happy to spend a significant amount of time prepping and cooking so they don't need to be easy or fast recipes. Just tasty, nutritious, and vacation-worthy :)

Also we'll be essentially stuck at the house Sat-Wed without easy access to getting to the store, etc. My dad is driving us down on Saturday so we'll have an opportunity to hit a grocery store then, but after that it'll be tough to get back there so I need to be able to pick up all the ingredients on that one trip.

Hello all! I will soon be sharing an apartment with a dear friend. Her passion for the environment has led her to consume a "flexitarian" diet. While I am not quite as passionate about vegi/flexitarian/vegan options as her, I do like the idea of consuming less animal-based foods for both environmental and health reasons. How do I cook salmon?

I usually just cook a slice in a toaster oven set to broil for about 30 minutes. Before putting it in on top of some foil, defrosted, I sprinkle some seasoning from brands like Goya or Chef Merito.

I want to use other ingredients I've recently gotten like extra virgin olive oil, curry powder, turmeric, cardamom, basil, thyme, ... and other cooking methods. I want the fish to be well cooked and very fatty and juicy.

Looking for recipes with rice

We don’t eat that many dishes with rice and when we do, I’ll usually make egg fried rice or a stir fry with meat and veggies (bell pepper/cabbage/bean sprouts) with sweet chili or sweet&sour sauce. So kinda same old, same old. My bf asked me if we could eat rice more often as he’s not a potato-fan (how can you not be ;P) so now I’m looking for more ways to use/incorporate rice in a dish.

ISO drink recipe, Northgate market

If anyone is familiar with Northgate markets it is a Mexican market . I think they all sell agua frescas that they make in house. I recently had a coffee flavor one that was absolutely delicious so good that I've gone back 3 days in a row to get more and they haven't had it. Does any one know a recipe for it ?? Special Menu Ideas for 3 people for 5 days in Mexico? Any ideas welcome

Hello there,

A rich friend of mine bought me a ticket to meet him & a friend in Cancun for 5 days.

In exchange, because they know I can cook, they planned for me to cook for them for that period haha! They are staying in an apartment with all the basic (or so they say) equipment to cook. There is a Costco, Walmart & local places for fresh fruits/veggies "nearby".

Since the weather is hot, I'm looking for a light menu with minimum extras (not much in the pantry, not much different spices, limit the waste)

Only thing I know about their eating habit: They are not big eaters, nor fussy, but they appreciate great food. They don't eat much bread, rice, pastas etc. Some portion could be fine, but mostly light (I had an idea of making spring rolls per exemple and I thought they could still appreciate)

I want it to be as healthy as possible, with a big spectrum of flavours for a week in the steaming hot south.

I don't know much of the produces they have over there, but I think in that region of Mexico (with a Costco), they must have the same kind of produces.

Any ideas or tips are welcome to make this a special week for my friend who is nice enough to buy me a plane ticket and offer a place to stay after a rough winter in Montreal

How To Make Homemade Pizza, The Highest Form Of Cooking

Homemade Pizza

First things first, make your dough. You can read the easy step-by-step guide, here. Then, get topping. For the perfect margherita-style base, don't skip the following.

Start with the right sauce

When you're perusing the aisle for sauce, we say skip anything labeled "pizza sauce." Usually, that stuff ends up being too thick or cloyingly sweet (or both). Stick to marinara here, either homemade or store-bought.

Choose your cheese

The way to go here is fresh, thinly sliced mozzarella. Sometimes it comes packed in water, so be sure to dry it off before slicing to avoid a watery pizza! If you've only got pre-shredded mozz on hand, that'll work in a pinch.

Nail the temp

Our pizza cooks at the very high temp of 500°. We're essentially trying to recreate a pizza oven, which can reach 1,000°, in a more realistic, at-home way. Because the dough is so thin, you really just want to crisp up the outside and keep it soft and chewy on the inside, versus baking it all the way through until it's cracker crisp. High temp is perfect for this. If your oven goes higher, feel free to crank the heat, just keep an eye on it!

Transfer, then top

Before you get started, stretch your dough and transfer it to a well-oiled baking sheet. We also love adding a thin layer of cornmeal for an extra-crunchy crust, but feel free to skip if you're not into that. Word to the wise: add your toppings only once your dough has been transferred to the baking sheet (or pizza stone). If you top it and then try to move it, things tend to get messy and extremely frustrating.

Finishing touches

After your pizza is baked, add another drizzle of extra-virgin olive oil, torn fresh basil, and red pepper flakes. These things are much more pungent and delicious when fresh.

Then, get eating! What are you waiting for?!

TOTAL TIME: 2 HOURS

INGREDIENTS

FOR THE DOUGH

Cooking spray

1 1/4 c. lukewarm water

1 tbsp. granulated sugar

1 (1/4-oz.) packet active dry yeast (2¼ tsp.)

3 c. all-purpose flour

2 tsp. kosher salt

1/4 c. extra-virgin olive oil

FOR THE PIZZA

Extra-virgin olive oil, as needed

1/4 c. cornmeal, divided

1 c. marinara, divided

16 oz. fresh mozzarella, thinly sliced, divided

Fresh basil leaves

Pinch red pepper flakes

DIRECTIONS

01 : Grease a large bowl with cooking spray. In a small bowl add water and sugar and stir to dissolve, then sprinkle over yeast and let sit until frothy, about 8 minutes.

02 : In another large bowl, add flour, salt, and oil. Pour in yeast mixture, then mix with a wooden spoon until everything is combined and a shaggy dough begins to form. Knead against sides of bowl until dough starts to come together, then turn onto your work surface and knead, adding a pinch of flour if needed, until it feels elastic and only slightly tacky, 5 minutes. Form into a tight ball, place into prepared bowl, and cover with a clean dish towel. Let rise in a warm spot in your kitchen until doubled in size, about 1 hour and 30 minutes.

03: Gently punch down dough, then divide in 2, and roll into balls. At this point, you can freeze one, or make two pizzas. Let dough balls rest as you preheat oven to 500° and grease a large baking sheet with olive oil. Sprinkle all over with 2 tablespoons cornmeal.

04 : On your work surface, gently flatten one ball of dough and roll with a rolling pin (or stretch with your hands) until about 12” in diameter (as thin as you can). Carefully transfer to prepared baking sheet and brush dough all over with oil. Then, add your 1/2 cup sauce to middle of dough and spread outwards with a spoon or ladle, leaving about 1” for the crust. Top with half the slices of mozzarella. Bake until crust is golden and cheese is melty, about 15 minutes.

05 : Top with fresh basil leaves, a drizzle of olive oil, and red pepper flakes.

06 : Repeat with remaining dough and toppings for second pizza.

Need a recipe—chicken and????

I make a fantastically juicy smoked chicken and it’s always a hit. The people coming over Saturday have had it a lot, and I’m fixing again because the dozen or so kids will eat it without complaint.

But for the adults, I want to dress it up and I’m out of ideas. Maybe other ingredients to make the smoked chicken into tacos or chicken crepes with it or???? Looking for something really flavorful, unusual, fun but not hours in the kitchen.

HELP: Made tortilla soup with dried whole ancho chilis from boxed meal delivery service, lost recipe card, cant remember delivery service

It was a one time tryout thing with a friend. Tortilla soup came with tortillas for cutting and frying, a can of black beans, some other standard stuff, maybe an avocado, and one or two whole, dried ancho chili peppers that were to be cut into pieces and cooked in the soup. I honestly don't remember if it came with chicken or if I added chicken on my own.

I read the recipe card and then modified it for the instant pot and it came out perfectly. But then the card disappeared and I never found it. I've tried looking over recipes from the meal sites I thought it might have been from (Blue Apron, Martha Stewart, and one other very popular one I'm forgetting right now), and none of those recipes look quite right - notably because none of them I've found mention dried anchos. They all mention some form of ancho chili powder instead.

Does anyone know what I'm talking, so I can find this recipe again? I've tried modifying others to get the same result and they're good enough, but I can't manage to replicate anything approaching the perfection of that one I made from the box.

Looking for some advice on how to pull off this frying method

Hey everyone. I do a good bit of fishing and want to do something kind of unique with fresh redfish. My family is from New Orleans and I love spicy food. Recently I've been craving a kind of spicy redfish/seafood gumbo. I'm thinking I'd like to make a spicy dark rioux and throw in some shrimp along with the fish and kind of follow a standard gumbo recipe.

I could swear that I've eaten a soup or stew in the past in which the meat was fried but the breading somehow remained kind of crispy and adhered to the meat. I'm envisioning lightly (somehow) frying the redfish and adding it to the gumbo, but when I've added fried fish to the soup/stew I've done in the past, it falls apart and/or the breading comes off, leaving bits of bare fish dispersed throughout. Ideally I'd like the breading stick to the fish and absorb the flavors of the broth while remaining in bigger chunks. Is there a certain style or method to achieving this goal? Would appreciate some advice.

Recommend me some high-protein recipes!

So I am trying to incorporate more protein into my diet, because I would like to restart an exercise program and I want to actually gain some muscle for my trouble instead of just suffer. The problem is... I don't really like protein. I just don't have a lot of experience with beans, and I find most meat (even well-prepared steak!) too much effort to chew. Some guidelines:

  • Must be able to be frozen, and then either nuked in the microwave or take no more than 15 minutes in the oven to heat. I am perfectly willing to spend several hours preparing food (on the weekend), but I hate having to actually cook on a daily basis.
  • If there's meat, it needs to be a very soft texture (and not dry; I love me my sauces). Slow-cooked is probably the only method that works for me for whole chunks of meat (other than fish). Ground meat recipes also welcome!
  • I am also soliciting protein powder recipes! We have some whey protein powder drifting around the house that I tried throwing into my oatmeal this morning, and it wasn't too bad.
  • I'm hoping for recipes that will end up with more complicated flavors than just 'how to best show off the pure flavor of steak/beans/etc'. Steak/beans/etc aren't bad, I just find them to be a big fat 'meh'. I probably feel about unadorned steak the way most people feel about oatmeal. I need ideas...having guests Saturday night

I am throwing a surprise get together for my SO’s birthday Saturday night. There will be a total of 15 people, including us, and I have no idea what to serve. (I’ve ordered the cake and a fruit tray)

I would prefer something non-complicated and that doesn’t have to be babysat. I have considered chili & potato soup except I only have one crock pot and it’s not very big so I hate to go out and buy big ones just for this. Or maybe a baked potato bar and a bought sandwich platter from the local grocery deli?

How to Make Korean Seaweed Soup with Beef (Sogogi Miyeok-guk)

Ingredients

BROTH

7 ounce beef brisket or sirloin tip steaks

4 cloves garlic

8 ½ cup cold water

SOUP

½ cup cut and dried seaweed

2 tablespoons guk-ganjang (Korean soup soy sauce)

1 small garlic clove (about ½ teaspoon) minced or pressed through a garlic press

1 tablespoon toasted sesame oil

Table salt

Ground pepper

Instructions

Place seaweed in medium bowl and cover with cold tap water by 2 inches; let stand for 20 minutes. Wash and drain in a colander.

Bring to boil over high heat. Reduce heat to low and add garlic cloves and beef. Cover and simmer until meat is tender, 25 to 30 minutes.

Turn off heat and and transfer beef to cutting board and let rest for 5 minutes. Remove and discard garlic cloves. When beef is cool enough to handle, shred into 1/4-inch-thick pieces using two forks or slice thin against grain.

Use wide, shallow spoon to skim fat from surface of soup. Stir seaweed into soup, cover, and cook on high, 10 to 15 minutes. Stir in beef and minced garlic and season with guk-ganjang, salt, pepper, toasted sesame oil, and extra salt to taste.

In Pakistan - Looking to make Bingsutteok

Hey guys, was wondering if anyone knows how to make bingsu tteok.

I'm based out of Pakistan, and we don't get any of the packaged bingsutteok here in Pakistan. We do get glutinous rice flour though, so its something that we can make as well.

Can I follow the standard tteok recipe, and just add some sugar to it?

Would it be similar to Mochi?

I have found a couple of recipes, http://aeriskitchen.com/2008/10/sweet-rice-cake-with-red-bean-paste-chap_ssal_ddeok/, uses the glutinous rice flour, the lady who posted on it, had said that just need to add more sugar, for bingsutteok.

Trying to make Home Made KFC, advice would be great

So I've been trying to replicate KFC's recipe at home, their are plenty of different versions on the internet so I'd like some help.

  1. Buttermilk seems to be the obvious choice when marinating the chicken, but some recipes ask for just Buttermilk with egg and others add the 11 herbs and spices with it. Should I or will that be over kill.
  2. Right now my recipe has 2tsp Salt, 1/2tsp thyme, 1 1/2tsp Basil, 1tsp Oregano, Black Pepper and Dried Mustard, 4tsp of Paprika, 1tsp of Garlic Salt and Ground Ginger and 3tsp of White pepper with 2 cups of Flour
  3. Should I replace the flour with Cornflour (Cornstarch)
  4. I hear MSG should be used as well, is that something to add to the breading or afterwards and if its the former, how much?
  5. I've heard I should put it in the frier, take it out for 30 minutes and then fry again to get that real crunchy texture

Looking for a particular soup

I don’t know what it’s called. So I will describe it as best as I remember.

It was a Mexican soup, it had a broth that was a greenish-brown, it had beef in i(chopped steak I think) i think that’s all that was in it, however it was brought out with a plate of Cilantro, radishes, I think chopped red onions.

That’s all I remember. Thanks for any help.

Lasagne recipes...

I recently made this lasagne, though I used a mixture of beef and pork mince as well as torn mozzarella between layers. I thought it was a good start, but I felt as if the parmesan bechamel and mozzarella were too mild in flavour. So, I thought I would ask for others to recommend other recipes.

Polish golumpki recipes?

I’m making a bunch of golumpkis this weekend (stuffed cabbage, piggies, Golabki... you know, that one). I’m finding so many different recipes and I’m trying to recreate my late aunt’s. I’m from Eastern PA and these were staples. Kind of like savory meatloaf stuffed in tender cabbages with a tomato sauce.

I know my aunt always made them in a large Dutch oven with uncooked rice and a tomato sauce almost completely covering them before cooking. She didn’t use pork and I’m pretty sure she used tomato soup as well as crushed tomatoes.

Or, if that doesn’t sound familiar I’d love to try yours :)

Using dry lavender in place of lavender oil?

I plan to make a belated pie-day pie. Blackberry, Lemon & Lavender. Never used lavender before, so hesitant to invent my own substitutions for an equivalency without that baseline flavor knowledge. Recipe calls for 2 drops lavender oil.

I understand lavender can be quite overpowering and should in this case be a background flavour highlight to the lemon.
