Red Velvet Whoopie Pies

Ingredients

  1. 2 1/2 C Flour
  2. 1/3 C Cocoa
  3. 1/3 C Vegetable Oil
  4. 1 C Water
  5. 1 1/4 C Sugar
  6. 1/2 C Shortening
  7. 1/2 tsp Salt
  8. 1 tsp Vanilla
  9. 2 Eggs
  10. 2 tsp Baking Soda
  11. 2 Tbsp Red Food Coloring
  12. Cream Cheese Icing
  13. 8 oz Cream Cheese
  14. 1/4 C Unsalted Butter
  15. 3 C Powdered Sugar
  16. 2 tsp Vanilla

Instructions

  1. Preheat Oven to 400°
  2. In a medium size bowl measure out the flour, cocoa, salt, and baking soda stir with a whisk
  3. In a large bowl combine the sugar and shortening and mix using an electric mixer
  4. Next add the eggs and mix until smooth
  5. Add the water, vegetable oil and vanilla
  6. Once the wet ingredients are combined start to add the dry ingredients one half at a time
  7. Scrape the bowl to incorporate everything
  8. Lastly add the red food coloring. Make sure that everything is mixed thoroughly. I used a spatula after I mixed with a mixer to make sure all the dye was incorporated.
  9. On a parchment lined cookie sheet or a sheet pan scoop out the batter. I used a 2” cookie scoop.
  10. Place in a 400° oven and bake for 8-9 minutes.
  11. Once cake has cooled create sandwiches.
  12. I put about 2 to 3 tablespoons of icing per whoopie pie
  13. This recipe will make 14-15 Whoopie Pies
  14. Cream Cheese Icing
  15. Cream together room temperature butter and cream cheese.
  16. Add the powdered sugar and vanilla and mix on med to high speed for 3 to 5 minutes

Homemade Ranch (regular and spicy versions)

  • 1 cup of mayo
  • 1/2 cup of sour cream
  • 4 tablespoons of milk
  • 1 tablespoon of parsley
  • 1 teaspoon of salt
  • 1 teaspoon of pepper
  • 1 teaspoon of garlic powder
  • 1 teaspoon of onion powder
  • 1/2 teaspoon of dill
  • 1/2 teaspoon of chives

To make it spicy, add:

  • 1 and 1/2 teaspoon cayenne pepper
  • 1 and 1/2 teaspoon Tabasco sauce

Stir the bejesus out of it and voila!

Refreshing and easy cocktail perfect for summer days...

1 tsp frozen ginger (trust me it makes a difference)

1 tbsp sugar syrup

few mint leaves

50ml Zubrowka Bison Grass Vodka

50ml Bacardi White Rum

150ml Cloudy Apple Juice

Mint Sprig (optional)

Muddle the ginger, syrup and mint in a cocktail shaker. Add ice, vodka, rum and apple juice. Shake until a frost forms. Pour over crushed ice and serve with a mint sprig.

Enjoy!

Waffle recipe calls for 300g of butter and 50g of yeast which seems excessive.

I'm checking out this Belgian Liege Waffle recipe(scroll down and click the liege recipe)
And it calls for 300 grams of butter and 50 grams, "one package" if yeast.
I didn't really do the math, but it looks like the recipe wants the dough to be nearly a quarter butter which seems excessive.
It also calls for "one package" of yeast which is 7 grams, but it also says 50 grams.
Am I reading something wrong or is the recipe messed up?

Need some good easy and quick recipes for cooking for 7 men on a tugboat

I work as a deckhand on a tugboat in NYC, part of my job requirement is cooking the dinner meal every day for the two weeks I’m on the boat.

I’ve always enjoyed cooking but I’ve always just made food for myself or maybe a couple other people, so it’s a whole nother experience trying to cook and feed for 7 hungry dudes.

I’m just looking for some recommendations, tips and good recipes that don’t require more than about an hour of prep. We always try to have a protein, starch, and vegetables for dinner. I would greatly appreciate any help guys, hope to hear from some of you!

Help with a Mexican recipe

A friend of mine is from Guerrero, Mexico and said he really likes Chilate de Guerrero and that he wishes he could have it again in the US. I therefore would like to learn how to make it for him. However, the only recipes I have found for it online have been in Spanish or have been confusing to follow. I can not speak Spanish and so I am hoping that someone who knows the recipe and knows English can help me make it from ingredients commonly found in American stores. Any help is appreciated! Recipe for Pimple Popping Cupcakes?

Hello-

Does anyone have a recipe for the cupcakes that look like a pimple and can pop made famous by Sandra Lee of Dr Pimple Popper?

The only thing I can find online are a few YouTube videos but no real recipe.

I was thinking lemon raspberry would be good? Lemon curd being the “pus?”

Apple Dumplings Made with Bisquck

Apple Filling

  1. 3-4 Large Granny Smith Apple
  2. 1 Tbsp corn starch or Flour
  3. 2 Tbsp Brown Sugar
  4. 2 Tbsp Sugar
  5. 1 tsp Cinnamon

Dumpling

  1. 2 1/4 C Bisquick
  2. 2/3 C Milk

Brown Sugar Sauce

  1. 1 C Brown Sugar
  2. 1 C Water
  3. 2 Tbsp Butter

Instructions

  1. Preheat Oven to 350°
  2. Peel, Core, and Chop Apples into cubes
  3. Mix apple cubes with 1 Tbsp brown sugar, 1 Tbsp Sugar, cinnamon, and corn starch
  4. Next make dough for dumplings, mix Bisquick and Milk
  5. It will seem dry but the dough will all mix together
  6. Roll dough out to about 6 to 8 inch round
  7. Place Apple mixture in center and fold dough around apples
  8. Place Dumpling with smooth side up into a pan. If you are making multiply dumplings a 9X13 pan will due. If you are making 2-4 dumplings I used a small casserole dish
  9. Make brown sugar sauce
  10. In a sauce pan over med heat mix brown sugar, water and butter
  11. Heat until sugar is dissolved
  12. Then pour over dumpling
  13. Bake dumpling at 350° for 40 min or until apples are tender
  14. Serve with milk or ice cream

About 7 years ago now, while cleaning above the cabinets in my old house I found hundreds of old recipes and newspaper clippings for different cookies and cakes. It's clearly a collection of someone's grandmother's lifetime of recipes accumulated over the years.

I'm just not sure what to do with them ? Some of this stuff is seriously starting to degrade and barely hold together. I've started putting them all in a Word Doc, but I wonder if there's something better ?

Has anyone found a work around for the increase in chicken wing prices?

I'm a huge wing nut and remember the good old days when wings were considered the bar peanut of the meat world and you could buy a wing for 20 cents a pop. Now they are arguably the most expensive part of the chicken and have the worst bone to meat ratio.

Has anyone figured out a cheap way to buy them or at the very least turn other cheaper cuts into a wing substitute?

Delicious and Healthy Homemade Recipes for Picky Eaters

As much as I hate to admit it, I'm a bit of picky eater. I scan cookbooks and food blogs looking for the recipes that don't rely on any of my offending ingredients (i.e. onion chunks, raw tomatoes, and olives), and at restaurants, I'm "that guy" who isn't afraid to tweak a dish to fit my exact specifications. Truth be told, sometimes the kids' menu looks more appealing.

All this to say, I know the struggle of being a picky eater. The challenge? Sometimes the simple and "safe" meals aren't typically the most nutritious options. As much as I'd love for chicken fingers and french fries to be considered healthy fare, I know that the majority of my meals should include veggies and shouldn't be deep-fried.

If you're trying to make healthy food choices, these recipes have you covered.

  1. Quick and easy calzones

Cook time: 20 mins

Calories: 1200 calories

Calzones are simply delicious. They are filled with pepperoni, mozzarella cheese and marinara sauce. Plus they are very easy to make.

Ingredients:

1 (13.8 ounce) refrigerated pizza crust

1/2 cup marinara sauce

1 cup shredded mozzarella cheese

18 slices pepperoni

1 Tablespoon butter, melted

Italian seasoning, to taste

Grated parmesan cheese, to taste

Other ingredients you can use for fillings include:

Green bell pepper

Onion

Mushrooms

Sliced Olives

Ham

Sausage

Pineapple

Preparation:

Preheat your oven to 400F

Spray non-sticking spray on your baking sheet to avoid your crust sticking to the sheet.

Take your pizza crust and cut it into 6 squares.

In the middle of each square, add your sauce, cheese, pepperoni and any other fillings

Fold your dough into a triangle and use a fork to press the edges so that you can seal the ends.

Place the calzone into the baking sheets

Glaze the top of the calzones with butter and sprinkle it with cheese.

Put it in the oven for 10-12 minutes or until the top gives a golden brown color.

Serve it while it is warm with dipping sauce.

Ps: there are 30 of them.

Cold Dinner Recipes?

We have a trip planned to Walt Disney World in December, and since we go so often, we are really going to do some budget eating so we can stay for 3 weeks straight. Only problem is we don't want to leave the parks for dinner! What are you best go-to cold dinner recipes? Grandma Catherine's Persimmon Pudding

Set oven to 375. Butter and sugar a 9x13 pan.

2 cups flour (sifted) 2 cups sugar 1/2 cup brown sugar 2 TBL baking powder 1 tsp cinnamon 1/2 tsp salt 2 1/2 cups buttermilk 4 eggs (beaten) 1 stick butter (melted) 2 cups persimmon pulp

Mix 1st six ingredients in separate bowl, Mix together the eggs, melted butter and persimmon pulp. Add dry ingredients and buttermilk alternately. Pour into 9×13 and bake for 45 to 60 minutes.

It is exceptional enjoyed warm topped with whipped cream, hard sauce or vanilla ice cream.

Fancy dinner party suggestions for 6 people

We are having a fancy dinner party to celebrate the paying off of our mortgage. We have a fancy $$$ bottle of red wine we saved for the occasion. My husband wanted to hire a chef but I LOVE to cook and insisted that that’s just for people who can’t cook. That I would do it. My skills: I’m off the boat Italian so I can make pasta from scratch, etc. and I can cook anything well. What I don’t want to do: grill.

So I was thinking:

Charcuterie Ossobuco with saffron risotto Arugula salad with shaved Parm and lemon dressing Some sort of dessert (crostata? Tiramisù?)

Thing is, is that my husband doesn’t like “tendony fatty” meat so I don’t think ossobuco would work with him.

He does want beef because he thinks it would go best with the expensive bottle of red wine we have.

So yeah. We want a fancy dinner. The only thing I’m kinda set on is the charcuterie board for munchies before the meal.

So I still need some ideas for a cohesive meal that would look good on fancy china: Appetizer Entree side Salad Dessert

Ingredients

  • 1 cups old-fashioned rolled oats
  • 1/2 cup walnuts
  • 1/2 cup raisins
  • 1 teaspoon baking powder
  • 1 teaspoons cinnamon
  • 1/2 teaspoon salt
  • 2 large eggs
  • 1 cup almond milk
  • 1 teaspoon vanilla extract
  • 2 tablespoons unsalted butter, melted, plus more for greasing the dish (or coconut oil)
  • 4 medium sized apples sliced into thin pieces

Instructions

  1. Preheat the oven to 325°F.
  2. In a medium bowl, combine the oats, 1/2 cup of the nuts, baking powder, cinnamon and salt. Mix well. Add in eggs, almond milk and vanilla and mix until well combined. Melt the butter or coconut oil and add to mixture.
  3. In a round 8 inch baking dish, scatter the apples evenly on the bottom and pour the oatmeal mixture over top and spread evenly.
  4. Bake for 40-45 minutes, until the top is golden and the oats are set. Remove and let cool.
  5. Add a dollop of fermented coconut yogurt to the top and enjoy!

Shiitake and Goat Cheese Ravioli

I hope this is easily read, but, as a preface - I wanted to put this recipe out here as an alternative to the stepped-up-ramen recipes that this site so often puts up for folks who might be a bit low on pocket change, but still want to eat well.

As a counterpoint, I'd like to suggest Ravioli.

OVERVIEW

(If you're looking for just a recipe - see below)

Thing about Ravioli is that, for the broke, it's actually a remarkably affordable meal to make, not just because you can make it with ANY ingredients (try African peanut butter ravioli if you're curious), but because it fits the four points of perfect frugal food:

  1. It's filling
  2. It freezes very well
  3. It's cheap
  4. It's easy to make en masse

With that in mind, it really doesn't take anything other than a small cup and a rolling pin to make. So lets's analyze ravioli?

Ravioli breaks down to two components: Dough and Filling

  • Dough - Like all pasta doughs, ravioli dough is pretty easy to make, and, providing you get a feel for the stuff, pretty easy to tinker with. I'm a big fan of the NYT Basic Ravioli Dough recipe - mostly because it has a high fat content, and can take a great beating without working into anything too tough. (more on this below). The basic rule to follow is that dough is 1. Mixed, 2. Rested, 3. Kneaded, and 4. Rolled.

  • Filling - The best part about Ravioli is that you can put just about anything you want into the dough, including leftovers! This means that that leftover taco meat, the stuff that might only may have a few days left in the fridge, can be now transformed into a meal to be eaten a month later! That meatloaf? Same thing! Any raw ingredients you have that might spoil before usage? Make a filling! The main rule of thumb is that, whatever you're using, make sure it's not too wet. Wet filling compromises the dough, and compromised dough is a recipe for disaster.

In addition to extending the shelf life of ingredients you have on hand, fillings are also easily made with whatever you see on sale! For example - my local grocery has a small section in their cheese isle, where they discard smaller cuts of more expensive cheeses all for under $5.00. If I see a good cheese, I'll grab the little wedge, and pick up something else, something complementary (say a cheap cut of meat, some veg, etc.) and get cracking. (my roasted corn, prosciutto, and caramelized leek ravioli made ten servings and cost six dollars).

For fillings - I say be random, but try to connect the flavors. You're going to get some failed experiments, and that's OK! That's the fun of learning.

What is terribly helpful in making fillings is to use a food processor - you're going for similar consistencies, and fillings-as-pastes tend to be a lot easier to handle. To wit - Try to make sure your filling is:

  1. Cooked - no raw meats, and preferably no raw veggies
  2. Uniform - meat grinders/food processors, or just really diligent chopping produces an overall nicer texture, but also makes filling the dough much easier.
  3. Cooled - working with hot filling is messy, and frankly a bit annoying. Cooler items are firmer, and will move less when you're pressing.
  4. Dried - this is perhaps the most important piece - WET FILLING RUINS DOUGH.

Follow these tenants - and you're gonna eat like a champ!

RECIPE

Goat Cheese and Shiitake Filling

This is a pretty basic, but expensive sounding recipe, that I culled together on a whim. It takes about an hour to make enough to feed you for ten meals - the total cost for me was bout $10.00.

Dough - Follow the Recipe linked above - What you'll need is:

  • 2 cups all-purpose flour, or more as needed
  • 1 teaspoon kosher salt
  • 3 large eggs
  • 2 large egg yolks (save the whites!)
  • 2 tablespoons olive oil

Mix the dry ingredients, then the wet seperately, then fold together and wrap tightly in a disk, let sit in the fridge for an hour or so while you prep, your filling!

Filling

  • 2-3 c. Shiitake Mushrooms (or cremini, whatever's cheapest) - roughly broken apart.
  • 1 Shallot - finely diced (note - never buy the pre-bagged, they're absurdly overpriced)
  • 2-3 cloves Garlic, minced
  • 1 Tbsp Dijon Mustard
  • Bit of white wine (if you have it)
  • 8 oz goat cheese (you can swap for anything dry & firm, if you like - just shoot for whatever's cheapest!)
  • Few sprigs fresh thyme

Steps -

  1. Into a medium high heated pan, add some olive oil, butter, garlic and shallot - let sauté until fragrant and translucent lightly deglaze with a splash of white wine.

  2. Add mushrooms and toss to coat, cover and let cook for a few minutes, just until they start to soften, but not before they render down.

  3. Remove from heat, allow to cool.

  4. Scramble egg whites from above, with salt and pepper, a bit of dijon mustard.

  5. Add Mushrooms, Dijon, Goat Cheese, Eggs and Thyme to food processor and pulse until a nice consistency.

  6. Transfer work bowl to the fridge and allow the filling to firm up and chill.

  7. Roll out dough in accordance with above recipe

Purchased Sour Cream, instead of cottage cheese, what should I make?

I have almost half a gallon of sour cream. I meant to get the brick stone cottage cheese but picked up the sour cream, so what can I make? Easy flavorful ramen upgrade for us poor hungry college kids

Instead of just water and a flavor packet try this: half water, half beef broth. Add a 1/2 tablespoon of hoisin and a 1/2 tablespoon of chili garlic sauce. add a tiny bit of butter and chili powder right before serving and mix it up well. It’s so good!

Couldn't make hazelnut butter

Hi. So I was trying to make hazelnut butter and since I've made almond butter before I thought it was going to take about the same time to blend. I was blending for about 1 hour or even more (with pauses cause my blender was on fire), but it never turned smooth and creamy...Now I'm left with a messy half crumbly, half smooth nut mass. I also didn't skin the hazelnuts. Maybe it's because of that? What did i do wrong? Thank you for the help.

Recipe suggestions for first date dinner (her dietary restrictions in post)

I have a first date this week and I’m cooking dinner for us. She has dietary limitations that I feel are challenging my creativity. Cost isn’t an issue (within reason).

From said woman: “Oh god haha sooo this is how extra I am... don’t judge me... I don’t eat dairy, sugar, grains, legumes, soy, or gluten 🙃”

Me, I’m cool with everything but mushrooms.

I should also mention she’s allergic to crab. Shrimp is cool but I’d stay away from any other shellfish.

Apple Tree is now devoid of Apples...

Going to cook up some Crisp with my Grandmother tomorrow. Unfortunately, her idea of cooking requires the microwave. Seriously, she just told me she tried 'cooking' some Apple Crisp using the microwave.

Now I like to cook, but since I've never cooked sweet things before I am a bit unskilled with such fancy things. The closest I've come is Empanadas and Meat Pies.

So, I come to implore for any Apple Crisp or Apple <something> recipes? I know that 'recipe' for such things is a bit reductive. It's just the combination of X, Y, and Z with the addition of heat. So, tips and tricks would be fantastic.

She purchased pie crusts, and while I'd rather make them from scratch she'd just get quietly offended if I didn't use hers. Aside from that I'm completely open.

Amazing scrambled eggs recipe!

Ingredients: 6 Large Eggs, a red/orange/yellow/ green pepper, diced( only use one) a tablespoon of butter, feta and promel cheese, and 3/4s of a cup of milk.

Start by combining the eggs and the milk together, then whisk them until mixed together to that nice yellow color. Then, put butter in a pan and have the pan be medium heat.

Once the butter has melted in the pan, put in the eggs and let them cook until they start looking like scrambled eggs. Then, put in the peppers and cheese and let it cook for a little bit longer until he cheese melts. Then, put it on a plate and eat it.

Optional: use diced tomatoes and peppers if you like tomatoes.

Something for leftovers

My fiancé’s parents went on a month long cruise and we have been taking care of their house and cats while they are away. When they come back, they will be jet lagged and I’m almost certain that they aren’t going to want to cook while they are unpacking and getting back into the groove of being home. So we wanted to surprise them by having a few meals for the week already prepared when they arrive. The thing is, I’m not sure exactly what to make but I know it needs to be able to be used as a leftover. I’m already planning on a pot of chili. Vanilla Whoopie Pie recipe

Cake

Wet Ingredients

  1. ½ C Shortening
  2. 1 C Sugar
  3. 3 Eggs
  4. 2 tsp Vanilla
  5. ½ C Hot Water

Dry Ingredients

  1. 2 C Flour
  2. ½ tsp salt
  3. 1 tsp baking soda
  4. ½ tsp baking powder
  5. Icing Recipe
  6. 1 Tbsp Vanilla
  7. 1 C Shortening
  8. 4 C Powdered Sugar
  9. 1/4 C + 2 Tbsp milk

Cake

  1. Pre heat oven to 425°
  2. In a large bowl combine and mix all wet ingredients EXCEPT HOT WATER
  3. In medium size bowl combine dry ingredients
  4. Add ½ dry ingredients to wet ingredients and mix. Repeat with 2nd half of dry ingredients.
  5. Add Hot water and mix
  6. I used a 2” cookie scoop for the whoopie pies. Use a lightly greased or parchment covered cookie sheet.
  7. Bake for 6 to 8 minutes.

Icing

  1. Using a mixer combine shortening and powdered sugar
  2. Add powdered sugar 1 cup at a time, add milk and vanilla a little bit at a time after each cup of sugar
  3. On med/high speed mix icing until incorporated
  4. Scrape sides of bowl with spatula
  5. On high speed mix icing for another 2-3 minutes

Pumpkin Bread

15 oz pumpkin puree
105 g canola oil
20 g molasses
3 large eggs
200 g granulated sugar
100 g dark brown sugar
295 g all-purpose flour
1 1/2 tsp baking powder
3/4 baking soda
3/4 tbsp kosher salt
3/4 tsp ground cinnamon
3/4 tsp allspice
1/2 tsp ground cloves
1/2 tsp nutmeg
1/2 tsp ground ginger

Coffee Icing

2 tbsp heavy cream
1 tsp brewed coffee or espresso
1/4 c confectioners sugar

Preheat oven to 350 F. Butter/grease a loaf pan (6 cup) and/or line with parchment.

In a stand mixer, combine pumpkin, eggs, oil, molasses, and both sugars. Beat until smooth. In a separate bowl, combine flour, baking powder, baking soda, salt, cinnamon, allspice, cloves, nutmeg, and ginger. Mix well and slowly beat into the wet mixture until fully combined but do not mix longer than that. Pour mixture into prepared loaf pan. Bake for 60-70 minutes or until tester comes out clean and inside of bread registers 190 F. Remove and allow to cool.

Meanwhile, combine cream, coffee, and add confectioners sugar until desired pourable consistency is reached. It should be liquid but moderately thick, so that it can coat the back of a spoon and hold a line if you draw one through with your finger. Once bread is cooled, pour coffee icing drizzle over top.

Serve. Preferably with coffee or tea.

Need ideas to satiate a broke college kid's hunger for something different

So I'm 21 and broke for a while. I need some ideas that aren't standard hamburgers, rice and beans, or pasta, and so on. I can live on ramen and have been but I think it's killing me inside. I can get cheap veggies but proteins in my area are expensive, so can't really afford to buy meat. I have a pretty fully stocked spice cabinet and some better than bullion beef stock sitting in my fridge and some sun-dried tomatoes I need to use. I just want something I probably haven't cooked before and that I can make cheaply. I can repay you in compliments and smiles if you go through the effort to leave me something good :)

Looking for lunch recipes - no way to reheat anything

Hey there! I’m hoping you guys can help me out! Started a new job a few weeks ago in sales. I go to the office once a month, other than that I’m on my car visiting clients throughout the day and finish up all the paper work in my car/at home at the end of the day.

Pretty much, I’m in my car all day every day. I’ve done mason jar salads a few times, but really rely on moes or something quick for lunch. It’s hitting my wallet, and my belly, hard.

Can you guys recommend recipes for a meal prep? I’d love to put together my lunches for a week, and just grab them on the way out of the door. Because I’m in my car, I have no way to reheat anything. I don’t mind cold left overs, but something that’s meant to be served cold would be cool. Also, outside of a lunch box, I don’t have anyway to keep it cold.

To add, I have a weird thing with mayo and deli meats (besides salami) and tofu. Can’t eat ‘em. Don’t know why. They freak me out.

Ingredients

Agege bread
Tomato sauce
Grated cheese (cheddar or mozzarella)
Variety of chopped vegetables (eg onion, green pepper, etc)
Chicken shreds (preferably cooked or roasted chicken. Other types of meat can also be used.)
Fresh herbs (basil or thyme)
Salt and pepper
Olive oil

Methods:
Slice the bread across its breadth and place on an oven tray.
Separately, make some tomato sauce by mixing some tomato paste, olive oil, warm water and salt and pepper in a bowl.
Spread sauce on the sliced bread evenly. Then top with grated cheese, followed by chopped onions, green peppers and shredded chicken. (Also add other toppings of your choice.)
Drizzle with some extra virgin olive oil.
Then place in a pre-heated oven with the top grill on. This will allow the pizza to cook from the top. Remember the bread is already cooked so it would not need much further cooking.
Allow to cook for about 10 minutes, checking regularly to avoid burning.
Serve hot.... I promise you your kids will ask for more.

Help with "Toddler Tots" recipe!

I want to “meal prep” some things for my toddler for the week (or 4 days). I’ve been wanting to make something with a rice, a meat, a veggie. All blended together and formed into Tots that I could easily heat up in the microwave or bring as a cold snack.

I haven’t been able to find recipes for this type of thing. I know I should probably include egg or breadcrumbs and/or cheese. But I am clueless when trying to figure out the right ratios for everything.

Any help? Can anyone come up with a recipe or two? There’s really no restriction on type or meat/cheese/etc for me. Thanks!

  2. Peel, Core, and Chop Apples into cubes
  3. Mix apple cubes with 1 Tbsp brown sugar, 1 Tbsp Sugar, cinnamon, and corn starch
  4. Next make dough for dumplings, mix Bisquick and Milk
  5. It will seem dry but the dough will all mix together
  6. Roll dough out to about 6 to 8 inch round
  7. Place Apple mixture in center and fold dough around apples
  8. Place Dumpling with smooth side up into a pan. If you are making multiply dumplings a 9X13 pan will due. If you are making 2-4 dumplings I used a small casserole dish
  9. Make brown sugar sauce
  10. In a sauce pan over med heat mix brown sugar, water and butter
  11. Heat until sugar is dissolved
  12. Then pour over dumpling
  13. Bake dumpling at 350° for 40 min or until apples are tender

It's Monday night, and Monday calls for innovation!

I will separate it in 2 parts:

The sauce and the chicken.

Time: 20 minutes (marination is best overnight)Serves: 4

SAUCE:

1 clove garlic, finely diced

1 small bit of ginger, finely diced

1 teaspoon Sesame seed oil/tahini oil

2 teaspoons olive oil

50 g Brown Sugar (1.76 oz)

120 ml Soy Sauce (0.63 US Cup)

150 ml Mirin (0.63 US Cup)

50 ml Sake (0.21 US Cup)

Toasted Sesame seeds (for thick sauce)

Steps:

  1. Pre heat your pan to high and add in your oil, garlic and ginger. Cook until golden brown and burning, about 2 minutes.
  2. Add in your brown sugar, just until it starts to caramelize. About 30 seconds.
  3. Add in your soy sauce, mirin, and sake. Add in your toasted sesame seeds for a thicker sauce, opt out for a runnier sauce. (I used thick sauce, and if you can't buy toasted sesame seeds just roast them in the oven for about 10 minutes on 400°C/752°F)
  4. For a runny smooth sauce, cook for about 5 minutes and stir constantly. Remove from heat when done. For a thick sauce, cook until stiff; about 8 or 10 minutes.
  5. Set sauce aside. (I recommend to microwave it for about a minute before pouring to keep it hot at max power)

CHICKEN:2 boneless chicken thighs, skin on

2 teaspoons olive oil

4 tablespoons lemon juice

1 small shallot, diced finely

2 tablespoons lemongrass powder

2 tablespoons brown sugar/molasses

10g curry powder

10g fresh coriander

Salt, to taste

Pepper, to taste

1 sprig rosemary (not for marination, for cooking)

1 sprig thyme (not for marination, for cooking)

Sesame seeds, for garnish

Steps:

  1. Chop up your chicken thighs into cubes/smaller chunks.
  2. Rub your chicken thighs with olive oil and season all ingredients.
  3. Mix and marinate together for at least 6 hours.
  4. Pre heat pan to medium high, add in oil and sear for about 6 to 8 minutes on each side.
  5. While searing, add in rosemary and thyme sprigs. Baste chicken until it turns dark golden brown.
  6. Place your chicken on a plate and glaze your teriyaki sauce over it. Garnish with sesame seeds and serve with fried rice/white rice.
