Caldo De Res

Caldo De Res

  • 12 cups of water (divided 10 cups and 2 cups)

  • 2 lbs beef short ribs or beef shanks BONE IN

  • 1-2 lbs stew beef

  • 1 head of garlic

  • 2 bay leaves

  • 2-3 tbl spoons of salt

  • 3 large red potatoes peeled and cut into 1 in cubes

  • 1 small yellow onion chopped

  • 4 medium carrots cut into 1 inch sections

  • 3 ears of corn cut into thirds

  • 1 chayote (not necessary but it is yummy) peeled and chopped into 1 inch sections (core removed)

  • 2 cups of green cabbage chopped

  • 1/4 cup of cilantro chopped

Instructions

  1. In a heavy pot, add 10 cups water, beef, garlic and bay leaves. (I smashed the garlic and put into a cheese cloth baggie with the bay leaves. Makes for easier clean up).

  2. Bring to a boil and skim off the top foam.

  3. Cover, reduce heat to low/med low and continue to cook for 1.5 hours. (you want it to be still boiling but not like a hard boil)

  4. Remove bay leaves and garlic baggie.

  5. Add potatoes, carrots, onion, and corn and add 2 cups of water. Taste broth and add salt to taste.

  6. Bring to a boil and cook til potatoes are fork tender.

  7. When potatoes are cooked, remove meat and corn only from stew. Transfer to bowl and cover to keep warm.

  8. Add cabbage and cilantro and cook for 15 minutes on medium.

  9. Take soup off heat and add meat and corn back to pot for another 15 mintues.

In my house we serve this on top of a bed of white rice and some fresh lime on the side with hot sauce. So you scoop the rice into the bowl, then add parts of the meat, potatoes, corn, etc into the bowl and ladle some broth on top. Make sure to get a bit of all the veggies into the bowl. You could also just keep the meat and corn out of the pot if you want but I always put it back into the broth while waiting those last 15 minutes.

Romesco Chicken & Potatoes

For those of you who really enjoy a ‘meat & potatoes’ meal, this dish is for you. I really enjoy this recipe and it has become one of my favourites. This is a simple pan fried dish of chicken, chorizo & potatoes. Red onion and Oregano add some extra depth of flavour. However the Romesco sauce really transforms this meal into something extra special. The sauce provides a mildly spiced, yet tangy, smoky flavour through the roasted peppers, chilli flakes and smoked paprika that are mixed through. Used as a ‘dipping’ sauce or spread over your meal, either way, you will really love this dish.

Ingredients:
• 650 g potatoes cubed - I use Royal Gala however use your favourite
• 3 tbsp Olive Oil
• 1 kg Chicken Fillets use thigh fillets
• 1 Chorizo sliced - I use mild but use to your preference
• 1 Red Onion sliced
• 1 bunch Oregano
Romesco Sauce
• 330 g Whole Roasted Peppers 1 jar – drained
• 1/2 cup Flaked Almonds
• 2 cloves Garlic crushed
• 1 tbsp Tomato Paste
• 1/2 tsp Smoked Paprika
• 1/2 tsp Chilli Flakes
• 1/4 cup Olive Oil

Instructions:
1. Add potatoes to a covered microwave dish and cook on high in microwave for about 8 minutes or until just tender.
2. Remove from dish and roughly cut potatoes into bite sized pieces. Set aside.
3. Heat 2 tbsp Olive Oil in a large frying pan over medium high heat.
4. Add chicken and cook until browned. Cook in batches if required. Remove from pan and set aside.
5. Add chorizo, onion & potatoes to pan and cook for about 10 minutes or until chorizo and potatoes are golden. Add additional olive oil if required.
6. Return chicken to pan, stir to mix through and cook for an additional 5 minutes or until chicken is heated through.
7. Roughly chop half the oregano leaves and add to the pan and stir to mix through, then remove from heat.
8. Sprinkle the remaining oregano leaves over the chicken & potatoes and serve with romesco sauce.
Romesco Sauce
1. In a large food processor, add whole roasted peppers, flaked almonds, garlic, tomato paste, smoked paprika and chilli flakes. Process until well combined and a smooth mixture is produced.
2. With processor motor running, gradually add 1/4 cup olive oil and continue processing until well combined.
3. Remove from processor into a bowl and serve with chicken and potatoes.

Looking for Chinese Steamed Bun recipe.

Hello, just want to make it clear I AM ALLERGIC TO EGGS, PEANUTS, AND SEAFOOD

I am looking for a steam bun recipe because I always go to a Chinese bakery that also sells steamed buns, however due to my allergies I refrain myself in buying because I don't know what ingredients are included. So I am hoping to find a recipe, so I can make them myself. Also, I heard some recipes use some kind of cooking wine in the meat, that's a no no, since I am a Muslim too.

Help me build a meal to remember my father in law with a unique ingredient.

My father in law passed away five years ago and I just came up with a unique idea to remember him via a meal but I need your help.

Side story My father in law LOVED ketchup. Put it on everything, even stuff it doesn’t normally go on. And we gave him some ribbing for it too. It is kind of an inside joke amongst family about what he would put it on next. So long story short I was hoping you all could share your best “there’s ketchup in here?” recipes.

I am not looking for BBQ sauces or meatloaf...because ketchup goes there. I was hoping for cake/desserts, salad dressings (other than thousand islands or Catalina), main dishes, side dishes and so on.

The more creative the better! Thank you all so much!!

Looking for a no tomato pasta sauce recipe

Psoriasis... no nightshades. I don’t want to give up spaghetti and meat sauce. Does anyone have a no tomato pasta sauce recipe they would like to share? I’m finding some on Pinterest but the photos they use and the outcome of everyone’s recipes look totally different. I’ve never had beets so I’m not sure if it really tastes close to the real thing or if people are fibbing lol.

If buying store bought would be easier and tastier, can you tell me where I can find it? I tried Trader Joe’s today but couldn’t find it.

Pepper Stuffed Chicken with Spicy Orange Sauce

Ingredients:

2 chicken breasts

1 red bell pepper, thinly sliced

1 yellow bell pepper, thinly sliced

1 C. spinach

1 C. grated smoked gouda cheese

2 cloves garlic, minced

2 shallots, minced

1 jalapeno, minced

1 orange, peeled and chopped

juice of 1 lime

juice of 1 orange

1 C. Apricot preserves

1 Tbsp. brown sugar

1 Tbsp. dijon mustard

1 tsp. yellow mustard

1 Tbsp. apple cider vinegar

olive oil

1 tsp. cornstarch

1/4 C. water

Preheat oven to 375°

Heat 2 Tbsp. olive oil in a large oven safe sauce pan and add bell peppers, cook until soft, about 15 minutes. Add spinach, cook about 30 seconds, remove from heat but leave in pan for spinach to continue to heat.

Cut pockets into your chicken, you can refer to this video if you are unsure. Stuff chicken breasts with peppers and cheese, secure with toothpicks. Heat 1 Tbsp. olive oil to same pan and brown both sides of chicken. Cover and place in oven for 20 to 25 minutes, or until done.

While chicken is cooking, start your sauce. Heat 1 Tbsp. olive oil in a sauce pan and add garlic, shallots, and jalapeno, cook until soft. Add preserves, juices, brown sugar, vinegar, and mustards and bring to a boil. Reduce heat and simmer about 15 minutes, careful to not let it burn. Add the orange and cook an additional 10 minutes. Mix cornstarch with water and add to sauce, cooking until thickened.

Remove chicken from oven, let rest about 10 minutes. Slice and serve with sauce drizzled over it.

What is your favorite Salmon pan sauce?

I've recently discovered this technique and made some great chicken pan sauce. My brother and his wife are in town and I'm having them for dinner. I'm making salmon with garlic mashed potatoes and blanched haricot verts and I really want a great pan sauce to give that salmon the wow factor. Thanks!

Deep-Dish Bacon and Leek Quiche

INGREDIENTS:

YIELDS: 8 SERVINGS

1 recipe Basic Pie Dough 6 slices bacon, sliced 2 large leeks (white and light green parts), sliced Kosher salt Freshly ground black pepper 2 tsp. fresh thyme leaves 6 large eggs 2 c. heavy cream 1 c. whole milk 1 tbsp. Dijon mustard 1/8 tsp. freshly grated nutmeg 6 oz. Gruyère, grated (about 1 1/2 cups) 1/2 c. chopped fresh flat-leaf parsley

DIRECTIONS: 1. Roll chilled dough between 2 pieces of parchment paper into a 16-inch circle. Transfer to a 9-inch springform pan, lifting and pressing it into the bottom and up the sides of the pan; chill 1 hour. Poke bottom and sides of dough with a fork. Line with nonstick foil, leaving a 4-inch overhang. Fill with baking beans or pie weights; chill 20 minutes.

  1. Heat oven to 425°F. Bake crust 15 minutes. Remove foil and pie weights. Cover edges with foil, and continue baking until completely dry, 8 to 12 minutes. Reduce oven to 325°F.

  2. Meanwhile, cook bacon in a large skillet over medium heat, stirring occasionally, until crisp, 7 to 8 minutes; transfer to a paper towel-lined plate. Discard all but 2 tablespoons of drippings. Add leeks and season with salt and pepper. Cook, stirring occasionally, until soft, 6 to 7 minutes. Add thyme and cook 1 minute. Remove from heat; cool.

  3. Whisk together eggs, cream, milk, mustard, nutmeg, and 1/4 teaspoon each salt and pepper in a bowl. Fold in the Gruyère, parsley, and cooked leeks.

5.Scatter bacon on bottom of crust, then top with egg mixture. Wrap pan with foil and place on a large rimmed baking sheet. Bake just until set around the edge but still wobbly in the center, and a knife inserted into the center comes out with no runny eggs attached, 1 hour and 15 minutes to 1 hour and 30 minutes. Cool in the pan at least 30 minutes before unmolding.

Looking for a recipe for those street doughnuts that are melt in your mouth airy and has a bit of a crisp on the outside.

I've been missing these doughnuts you can get on the streets during events like carnivals or light shows.

They come in a clear paper bag and air extremely airy and just kinda melt in your mouth while also having a nice crunch on the outside. Normally served with cinnamon sugar or at least that's how I remember them.

Looking for street taco sauce recipe..

When I go to a taco shop or get a street taco I get the hot red sauce they give you in the little cup container or the kind they put in the squirt bottles (not the chunky salsa) and it's so delicious. I always ask for a recipe but they usually tell me it's a family secret.. The recipes I've found on the internet are usually roast some arbol's, tomato or tomatillos salt and blend but it never tastes the same. Their sauces always have just more depth of flavor and I've tried different variations but it always seems like it's missing something. Wondering if you guys have any great recipes your willing to share...

Passing Down Recipes to Family Members

Hi everyone :)

I have been avidly cooking for awhile now. Usually simple, tasty meals - nothing too fancy. I’m not advanced enough to make up my own good recipes, but I can tweak provided recipes from time to time.

I have recently begun writing my favorite recipes in a special cookbook to pass them down to my daughter one day. However, the recipes are ones I have gotten from the internet and from cookbooks. Does that make them not special enough to hand down?

Cheap, heart healthy freezer meals?

After what feels like my grandfather's millionth hospital stay and the clearing of an almost total blockage, I've taken to preparing at least some of his meals. He's in the habit, with the relatives he lives with, of eating fast food and pizza regularly and has no real money to put towards a grocery budget.

Since I don't live with him, freezer prep meals that I can drop off one day he can toss in the oven for a few days is our best option. I'm thrilled to learn he legitimately liked the last ones I prepared, but unfortunately I'm not going to have the money to fund two household's dietary needs. I plan on seeing what my local food pantries have in the way of healthful food, but I'd appreciate any ideas for how to keep him on the up and up.

Course: Salad Cuisine Mediterranean Prep Time: 10 minutes Total Time: 10 minutes Servings: 4

Ingredients

  • 4 zucchinis spiralized
  • 2 cups of tomato diced
  • 1 cup of small mozzarella balls
  • 2 tablespoons of balsamic vinegar
  • 2 tablespoons of fresh basil finely chopped
  • 2 tablespoons of olive oil
  • Black pepper
  • Salt

Instructions

  • Season the zucchini with a pinch of salt then place it in a colander and let it sit for 5 min then drain it and place it aside.

  • Whisk the vinegar with oil, basil, a pinch of salt and pepper.

  • Toss the sauce with zucchini, mozzarella, and tomato.

  • Serve your salad right away and enjoy.

We Lost Our Recipe For Soursweet Cabbage-Apple Pie

Many years ago, my mother made us soursweet cabbage pie using apple and possibly rhubarb to add the flavoring. I'm a stickler for recipes and I'm hopeless without them. The next year, we asked for the recipe, but my mother completely forgot she ever made it and how.

When I search the internet, I only find recipes for hearty, savory cabbage pie.

Description; It was similar to apple pie in taste and consistency, suggesting a lot of pectin. The cabbage or lettuce still had it's crunch and added it's own flavor to the desert.

Can anyone help me reconstruct the recipe?

Chicken & Sun-Dried Tomato Risotto

Risotto dishes are such hearty, filling meals. You can mix a great range of ingredients and although you need to be active during the cooking process, they are usually fairly easy to make. This is a great chicken based risotto that I think you will enjoy making and most of all – eating. This risotto combines chicken, grated zucchini and baby spinach for a lovely mixture. Some real tomato depth of flavour is provided through the sun-dried tomatoes added at the end. Parmesan cheese is also mixed through to create a sticky yet wonderfully creamy finish. A very special risotto dish is created.

Ingredients:
• 2 tbsp Olive Oil
• 3 cups Roast Chicken use Rotisserie chicken and shred.
• 6-8 cups Chicken Stock will vary depending on heat and time cooked
• 1 Brown Onion diced
• 2 cups Arborio Rice
• 375 g Sun-Dried Tomatoes 1 jar – diced
• 80 g Baby Spinach
• 1 Zucchini grated
• 1 cup Parmesan cheese

Instructions:
1. Pour chicken stock into a saucepan, bring to boil then reduce to simmer while covered until required. Note: if you use stock cubes to first make you stock, then keep on simmer in saucepan as per above.
2. Heat olive oil in large fry pan over medium high heat.
3. Add onion and cook for about 5 minutes until softened.
4. Add rice and zucchini, stir to mix through and cook for about 1 minute while constantly stirring.
5. Add stock, 1 cup at a time. Continue stirring regularly until liquid is absorbed. Continue to add 1 cup chicken stock, until rice is cooked through and liquid is absorbed. For me, depending on heat I am cooking on, this varies between 6 & 8 cups of chicken stock.
6. Add chicken to rice mixture and stir to mix through. Cook for about 1 minute for the chicken to heat through.
7. Add sun-dried tomatoes, spinach and parmesan cheese. Continue stirring to mix through and until spinach wilts.
8. Remove from heat and serve.

Pork Stuffed Tomatoes

Ingredients:

1 lb. ground pork

3 cloves garlic, minced

salt and pepper

1/2 tsp. dried oregano

1 tsp fresh rosemary, chopped

2 tsp. fresh parsley, chopped

1 tsp. fresh thyme

1/4 tsp red pepper flakes

1 yellow bell pepper, chopped

1 egg, beaten

1 C. bread crumbs

feta cheese

Preheat oven to 350°

Cut tomatoes in half and scoop out the insides with a spoon. Discard insides and set tomatoes in a foil lined baking dish.

Heat 1 Tbsp. olive oil in a pan over medium high heat. Add to pan the pork, onion, garlic, rosemary, thyme, pepper flakes, oregano, salt, and pepper and cook until pork is cooked through. Make sure to break up any large chunks of pork with a fork or spatula.

Add bell peppers and cook another 2 minutes, remove from heat.

Add bread crumbs and egg, mixing thoroughly.

Stuff tomatoes with filling and bake for 40 minutes. Remove from oven and let cool for about 5 minutes.

Top with feta cheese and additional parsley if desired.

Good Recipe for White Wine Sauce?

Hi! Does anyone have a good white wine sauce recipe? I plan to add mushrooms, broccoli and a meat of choice. The previous recipe I followed used a dry wine and a bit of nutmeg. As I can no longer find that recipe I'm open to anything you're willing to share. If you have dairy free option for the cream involved that would be great. If not I'll bit the bullet.

Teriyaki Chicken Skewers with Creamy Sriracha Honey Garlic Sauce

Ingredients:

2 chicken breasts, cubed

1/2 red onion, sliced into quarters and then cut in half

2 green bell peppers, cut into 1/2″ pieces

1 can pineapple chunks

Favorite Teriyaki sauce, or home made, about 2 cups

1/2 C. Mayonnaise

2-3 Tbsp. Sriracha sauce

2-3 Tbsp. honey

3-4 cloves garlic, finely minced

olive oil

Preheat oven to 400°, or preheat grill.

In a large resealable ziplock bag add the chicken and about 1-1/2 C. teriyaki sauce, place in fridge and marinate 1 to 8 hours, turning occasionally.

Once chicken is marinated, assemble your skewers. It doesn’t really matter what order you skewer everything, but I did red onion, bell pepper, chicken, then pineapple.

If using the oven, line a baking sheet with foil (for easy clean up) and place your skewer rack on top, then your skewers. Brush with additional reserved teriyaki sauce.

Bake until chicken is cooked through, basting with additional sauce at least once during cooking.

Make your sauce by heating 1.5 Tbsp. olive oil in a small sauce pan. Add garlic and cook until fragrant, about 30 seconds, do not burn it!

In a bowl combine Sriracha, honey, and mayonnaise. In a food processor add garlic and the sriracha sauce (if you have a small prep food processor just add garlic and half the sriracha mix). Process until smooth and mix with the rest of the sauce (if using the small processor method).

Take chicken out of oven, let cool for 5 minutes or so, drizzle sauce over and serve.

What can I make with a big milk chocolate bar?

Baked Ziti

Ingredients:

1 pound dry ziti pasta 1 onion, chopped 1 pound lean ground beef 2 (26 ounce) jars spaghetti sauce 6 ounces provolone cheese, sliced 1 1/2 cups sour cream 6 ounces mozzarella cheese, shredded 2 tablespoons grated Parmesan cheese

Directions:

  1. Bring a large pot of lightly salted water to a boil. Add ziti pasta, and cook until al dente, about 8 minutes; drain.

  2. In a large skillet, brown onion and ground beef over medium heat. Add spaghetti sauce, and simmer 15 minutes.

  3. Preheat the oven to 350 degrees F (175 degrees C). Butter a 9x13 inch baking dish. Layer as follows: 1/2 of the ziti, Provolone cheese, sour cream, 1/2 sauce mixture, remaining ziti, mozzarella cheese and remaining sauce mixture. Top with grated Parmesan cheese.

  4. Bake for 30 minutes in the preheated oven, or until cheeses are melted.

[Request] Following a tomato sauce recipe, any way to puree whole peeled tomatoes w/o blender/food processor?

Following this recipe below but I have no blender or food processor to puree these san marzano whole peeled tomatoes. Anyone know someone else i could use to get close? I don't want to just chop them up and use diced tomatoes.
