Serves 2 for lunch, takes about 20 minutes
Ingredients for a quick ravioli salad:
- 250 gr ravioli
- 2 handfuls of lettuce
- 125 gr cherry tomatoes
- 2 grilled bell peppers (home made or store bought)
- 40 gr Parmesan cheese
- 4 table spoons red pesto
- some pine nut trees (about 1 to 2 tablespoons)
- olive oil (* lentils, optional)
Directions:

Prepare the ravioli per the instructions on the pack

Roast the pine nuts in a dry pan until they’re browning, then let them cook off.

Cut the cherry tomatoes in half, and the bell peppers in chunks.

Grate the Parmesan cheese

Mix the lettuce, tomatoes, bell peppers, olive oil, and ravioli together.

Sprinkle with the Parmesan cheese and pine nuts.
Optional: to make the salad more filling and suitable as a main for dinner, add cooked lentils.
This salad can be eaten both warm As well as cold.
