Looking for a good 'green chicken chili' recipe

I love chili and make it a couple of times a month during the fall and winter months, but it gets redundant after a while so I like to switch things up. I love a good green chicken chili. Years ago I worked in a hospital, and the chef in the cafeteria was a cool (and extremely heavy) guy who made some really good stuff (for instance, I learned about mixing ranch dressing with bbq sauce and making the best-tasting damn salad topping I've ever had … well, for a bbq chicken salad, anyway). He made this green chicken chili one time that was the best. Don't laugh—yes, it was a hospital cafeteria, but I'm telling you this stuff was perfect. That poor guy eventually got fired, and I've been trying to duplicate his recipe ever since.

I've tried a few recipes, but they tend to come out with the flavors not melded together very well, and often with a consistency that is more like soup than chili. So, specifically, I'd like something that meets these criteria:

-It should include salsa verde, perhaps a hatch chile sauce, or even require fresh-made from tomatillos

-It should have a slightly thick/creamy consistency. I notice most recipes include cream cheese, and that's fine, but the overall color should come out somewhat green. And I don't mean green broth—I don't want to make soup.

-White beans (cannellini, navy, whatever), and maybe some other kind of darker bean for contrast. Corn is usually good in this dish as well. Definitely some canned green chiles, and maybe some chopped jalapeno.

I guess this is really about a recipe for the liquid portion of the chili. Once I have that, beans or whatever else can be added. Cilantro and cheese topping can be added per serving. I'll add that I'm an Instant Pot user, so I'd be amenable to trying an IP recipe, but shortcuts like that aren't the most important thing here. When I make my red chili, I like it to simmer most of the day, and in the interest of getting the flavors to blend I'd happily do the same for a good green chicken chili.

Be-all and end-all app for recipe management

Ok, so I have a collection of recipes on Google Keep that I would want to transfer to recipe management app. I need a few things from the app:

  • web-based version and Android app in sync
  • possibility to check/uncheck ingredients
  • recipe scaling

I have tested:

  • Paprika 3 - Windows app, not web-based. Very expensive to unlock sync on both devices.
  • CopyMeThat - scaling is a paid feature (and not cheap) and the app is just a web wrapper which I don't really like
  • Pepperplate - best of all three except that it doesn't have the check/uncheck ingredients feature

Do you have any other recommendations or maybe I am missing the option for ticks in Pepperplate?

Looking for a proper muffin recipe

Ive been searching for ages and i mean ages for a proper muffin recipe and i for the life cannot find a proper one. Ive been obsessed with finding a proper recipe after tasting one a while back. Im basically looking for a recipe which is soft and fluffy in the middle and has a yogurty tang to it.

All the recipes ive tried so far give mixed results.

1.e too much like a cupcake, too bready, too hard etc

The Most Delicious Butter Chicken Masala Recipe I've Ever Had

About 6 months ago I had wanted to try something new and something I had never tried to cook before. I didn't even know what Butter Chicken WAS.

I have never been a fan of Indian food in the few experiences I've had with it, and as a result I have not experimented very much. So this was very much out of my comfort zone.

Made coconut chicken yesterday in the crock pot but it just feels like boiled food. I want to be able to make tasty food in the slow cooker.

Any recommendations on healthy Asian recipes for a gym goer?

I'm big into Asian food such as Vietnamese, Korean, Japanese, Chinese and so on. I have a few recipes that I can cook at home. But I'm curious if there is anything out there that I may not know about that can be considered healthy or could be slightly altered to be healthy.

By healthy I mean low in fat. I have a non stick pan to help keep fat and oil intake low. And low in sugar.

I eat plenty of carbs, protein and veg.

I can currently make egg fried rice with kimchi

A quick noodle broth of low sodium chicken stock with ginger, garlic, shiitake mushrooms and green onions. This is usually topped with roasted chicken breast, egg and veg.

Oyakodon is also a go to.

Looking for a smoked tomato sauce recipe

I'm looking to replicate a recipe for a dish I had a Cajun/Creole restaurant. It was a linguine dish with blackened chicken, andoullie sausage, onions, some other vegetables, but the star of the dish was the sauce. It was smoky and rich, not overly spicy since the chicken was blackened.

As much as I'd love to actually smoke some tomatoes, I dont have the means to. I have liquid smoke, spices, a stove, and an oven. What can I do?

How can I take my pasta to the next level?

I frequently make a simple penne pasta with red sauce--it's good, but wondering how I can make it better. Currently I sautee garlic and onion in olive oil, then pour a little red wine on that, cook it down. Then blend up a can of Hunt's whole tomatoes, add it to the pan, and then blend it all smooth. Then put back in the pan, add basil, mozzarella, and halved cherry tomatoes. Then put penne in. Any suggestions to make it better?

Chocolate Chip Cookies (high-quality, low sugar)

Ingredients:

115g of unsalted butter, room temperature 50g of white sugar 120g of light brown sugar vanilla pod 1 egg 185g of flour 1/2 tsp baking soda 1/4 tsp baking powder 1/4 tsp salt 1 bar of milk chocolate (250g)

Mix the butter with sugars. Add egg and the vanilla's inside. Mix in flour, baking soda, baking powder and salt. Chop up chocolate bar into 4 pieces for each piece. Divide into 9 cookies. Bake at 180°C/350°F for 11 minutes.

Dairy free chicken potpie

posted in r/cooking as well but I wanted to make sure to get all the opinions I can.

One of my favorite things to make is chicken/turkey pot pie because a) my husband loves it, b) the people around me haven't heard of it and usually end up liking this "salty pie" (as in not a sweet pie. not that it's over salted) and c) I unknowingly entered a competition with another potpie maker.

The problem is that my husband found out he has a dairy allergy (not lactose intolerance for clarification) so no more potpie until I figure out a good recipe.

The hardest part is figuring out the flaky crust. So far, I have margarine, coconut oil, and duck fat (I definitely want to try adding a small portion of this) to use but I'm not sure of the proportions or better options.

As for the filling, I was thinking coconut milk because I've made a dish and covered the coconut taste before so I think it should be ok. Also, husband is allergic to peas so the only substitute I can think of is mushrooms but I feel like there may be something else I can try.

I would love to hear if you guys have better suggestions or can help me out with this. I've been trying to make dairy free versions of everything but this one is a bit intimidating because the original is so delicious.

Mexican Chorizo SCOTCH EGGS! - Recipe Video / How-To

Hey Everyone! I decided to put a spin on classic Scotch Eggs (hard-boiled egg wrapped in sausage). I replaced the hard-boiled egg for a soft-boiled one and nixed the breakfast sausage for Mexican Chorizo. Here's a how-to video that will go into detail about the technique and ingredients. Of course, I'll add more notes below. I hope you enjoy!

Mexican Chorizo Spice Blend:

---> ”toastables” (toast for 3-4 minutes in 350F oven)

- Ancho Chili Powder, 3 tbsp *deseeded for less spicy

- Cumin Seed, 2 tbsp

- Black Peppercorns, 12 whole

- Coriander Seed, 2 tsp

- Whole Cloves, 10 cloves

- Bay Leaves, 3 medium leaves

---> “Non-toastables”

- Ground Cinnamon ½ tsp

- Mexican Oregano Dry, 1 tsp

- Fresh Thyme, 1 tsp

- Paprika (hot or sweet), 5 tbsp *Use hot paprika for more of a kick

- Cayenne, 1 tsp

- Kosher Salt, ½ tsp and more to taste

- Fresh Garlic, minced 2 cloves

- Apple Cider Vinegar 3 tbsp

- Garnish - ½ cup loosely packed chopped cilantro

Chipotle Lime Crema:

- Creme Fraiche or Sour Cream, ¼ cup

- Chipotle in Adobo, 1 tbsp

- Fresh Lime Juice, ½ small lime plus more to taste

- Kosher Salt, ½ tsp plus more to taste

Soft-Boiled Egg Tips:

- Bring water to boil, then GENTLY add in eggs. Cook for 6.5 minutes. Shock in ice water for 3-4 minutes.

- “Fridge cold” eggs, aka eggs directly taken from the fridge, are fine. No need to bring to room temp.

- I find eggs are easier to peel under running water or completely submerged. The water seeps in between the cracks of the eggs to help the shell come off the egg.

I need help identifying a cookie recipe my great grandmother used to make.

Hello! Apologies if this isn’t the right place for the question, but I figured it was a good starting point.

My great grandmother is 94 at this point and unfortunately cannot remember the exact list of ingredients, much less the entire recipe. Due to this, I only have descriptions from my memories of helping her make them. It would mean a lot to me if I were able to recreate them.

I recall rolling out the dough and cutting it into strips with a ravioli cutter? And then rolling the strips up to look like roses. Then, they would be fried in Crisco (she was very insistent on that much). Afterwards, they were covered in honey, chopped walnuts, and shaved chocolate. She would only make these cookies around Christmas.

Seeking a gingerbread recipe that will knock my socks into another dimension

A bit of backstory: in middle school, right before winter break, our history/English teacher had us make a colonial (?) gingerbread loaf recipe in class. I don’t have that recipe, and the teacher has since retired. I remember it being so, so good, and I began thinking about gingerbread again this fall as the weather began to turn. I love it, but I have never been able to recreate the rapture.

I’ve tried a few recipes for gingerbread lately and found them to be quite lackluster: too dry, too light, too bland. Does anyone have a recipe for gingerbread that meets the following criteria?

A) Is very moist.

B) Is very aromatic and flavorful.

C) Is loaf- or cake-style. No cookies.

D) Will knock my socks off into another dimension (is very good!)

Yes, I could easily try google, and continue to work my way through innumerable options but I’m kind of tired of buying water towers worth of molasses and my family is getting sick of mediocre gingerbread. So if you’ve got one squirreled away somewhere, help me out! Let my tireless quest come to an end!

Making recipes easy to read with RecetteTek

Been looking for a good recipe app and I have to say this is the best one I've found yet.

You can import recipes from blog links and it's VERY accurate at scraping the different parts of the recipe. I've added 25 recipes so far, all from. Different sources and it's only failed to properly pull in one.

I HATE trying to read a blog recipe with ads and pop ups and a bunch of extra garbage on the page and this app solves that. I love it.

It also offers both cloud and local back up.

Gotta say I'm loving it and I thought you guys might like it too.

Looking for a recipe where you pour hot oil onto fresh ingredients to make sauce.

It’s a long shot, I only made it once and now can’t find it again. Tired of making the same thing

I've been eating the same basic thing lately, and I've just been tired of it, does anyone have any ideas to do different foods?

I've been eating stuff like pizza, cheeseburgers, sloppy joes, burritos, and other very similar meals.

I've done breakfast for dinner before and like it, but would rather have a different idea then that, if at all possible.

I'll admit I'm rather picky on my fruits and vegetables, though I do like, green beans, fruit cocktail, apples and bananas.

I'm not allergic to any meals or drinks either. Though I'm not a shrimp eater.

If anyone has any ideas, or maybe fresh ideas on an ordinary food that you eat, please let me know!

Looking for an impressive easy recipe to make.

My grandparents are coming into town on Wednesday only be here for a day, I haven’t seen them in almost two years and I want to make them an awesome meal. I have one in mind but I’m wondering if y’all can give me some other inspirations. Nothing particularly spicy and they do not have food allergies.

The dinner I’m thinking of now is chicken in a spinach cream sauce over rice with a side of broccoli.
