How to store garlic once the head is ‘broken’?

I have a head/bulb of garlic, but only need a couple cloves off of it for a recipe today. How is one supposed to store the rest of it to preserve until more is needed?? We’ve been keeping the bulbs in a bowl in a slightly darkened corner of the kitchen counter, with the little mesh baggy they came in. Can it just stay in there, does it need to go in the fridge, or what??

Desserts with Apple Cider?

In charge of making dessert for Thanksgiving and wanted to try and stray from the typical pumpkin or cranberry dessert. I was thinking of doing something lighter with apple cider, like a Swiss roll or trifle, but have been having trouble finding recipes. If I can't find one, is my best bet to use a spice cake recipe, incorporate a little cider into the batter, and then use it predominately in the filling?

The way i cook an omlette

I love a nice runny yolk in my eggs. So I devised a way to cook an omelette with the yolks intact. I have a small amount of oil in the pan. I heat the pan and the oil to smoking. I crack a couple eggs directly in the pan and the first side cooks fast. Then I flip and once the second side firms up I turn the heat down to cook the whites through. I put some cheese on top and flip one half of it over on top. The result is an omelette with a runny center and firm exterior. Getting that French omelette taste with the yolks intact.

My question is. Is there a specific name for cooking eggs like this or would it just be an over easy fried egg flipped on itself with cheese?

Planning a dinner; any ideas of what desserts I can do?

Having my boyfriend’s colleague and his wife over for dinner, and whilst I’m very good at coming up with starters and main course, I can’t think of any dessert!

Starters/nibbles to begin with: 1- Stuffed mushrooms 2- Onion Bhaji (as I’m from Pakistan and everyone loves my onion Bahajis here in Ireland)

Main course: 1- Chicken curry with rice 2- A side of salad

Dessert??

I used to make a mean apple pie before I became gluten intolerant, and I haven’t had very good luck with GF baking so far, so I’m quite nervous of trying to bake. I also thought of cheese platter for dessert, but not sure if a usual cheese platter with grapes, crackers, chutneys and nuts will work or is a dessert platter completely different?

Looking for potato alternatives

Hi Reddit,

I'm looking for some easy sides to accompany a whole range of meals. I don't like potatoes (yeah I know it's weird, I get told so frequently) and don't eat them in any form, chips, mash, roast, crisps etc. I usually do rice or pasta as an alternative for myself if I'm doing potatoes for everyone else, but I'm getting a little bored of them.

Does anyone have any alternatives that I could begin doing? I'm especially looking for something low effort, as on busy days when I'd just put in some oven chips I don't want to spend an extra 20 minutes prepping pasta and a sauce for myself. Even if I can pre prep and freeze something and then finish it off on the day that would be useful. I'm really running out of ideas

Amish Shoo Fly Cake

  1. 4 C Flour
  2. 2 C Brown Sugar
  3. 3/4 C Butter
  4. 2 C Hot Water (Almost Boiling)
  5. 1 C Molasses
  6. 1 1/2 tsp Baking Soda

Instructions

  1. Preheat oven to 350°
  2. In a large bowl mix flour, brown sugar, and butter with a mixer until small pebbles form
  3. Take out 1 Cup of mixture and set aside
  4. In another bowl combine molasses, hot water, and baking soda (add baking soda to water then to molasses to create a reaction)
  5. Add wet ingredients to dry and mix
  6. Place batter in a 9X13 greased pan
  7. Sprinkle flour, sugar, and butter mixture that was set aside from earlier on top of cake
  8. Bake at 350° for 40-45 minutes

Creamy Lemon Herb Garlic Naan Pizza

Serves 2

Ingredients

2 Garlic Naan

1/4 Cup Ricotta Cheese

1/4 Cup Goat Cheese

1 Cup Shredded Italian 5 Cheese Blend

14 Cherry Tomatoes or Grape Tomatoes Halved

1/2 Cup Crispy Cubed or Torn Prosciutto or Bacon

1/3 Cup Portobello Mushroom Cubed

1/4 Cup Spinach Chopped

1/4 Cup Fresh Basil Chiffonade

1/2 Small Lemon Zested

1-2 Tbsps Balsamic Vinegar

1 Tbsp Extra Virgin Olive Oil

1/2 Tsp Lemon Juice

1 Tsp Fresh Chives Minced

1/4 Tsp Dried Thyme, Rosemary, and Oregano

1/2 Tsp Salt

1/4 Tsp Black or White Pepper

Preparation

1. Zest half a small lemon into a bowl with the olive oil and add half a teaspoon of the juice then allow your dried herbs to rehydrate in it for five minutes.

2. Add your ricotta goat cheese, chives, salt and pepper to your lemon herb oil and combine the mixture well.

3. Smear each naan, flat side down, with half of the cheese mixture and top with half of the shredded cheese, chopped spinach, halved tomatoes, mushrooms, and prosciutto.

4. Bake on the middle rack of your oven at 400 Degrees for 10-11 minutes, broil on high for an additional minute or so if extra browning is needed.

5. Remove from the oven and sprinkle with the chiffonade of basil and swirl a drizzle of balsamic vinegar over the top.

Beer for crockpot meatballs?

So I was gonna make the usual crockpot meatballs with bbq and a porter style beer, but I found a recipe using ketchup instead of bbq sauce and it calls for 24oz of beer. The type of beer used wasn’t specified, so I was wondering what type of beer would go well mixed with ketchup and sitting with my meatballs in a crockpot for a few hours?

Chicken and Tarragon w/ Egg Noodles Recipe?

First I’d like to apologize for the format, I’m on mobile. The other day I went to a new restaurant and decided I wanted to try something new. I ended up ordering chicken tarragon with egg noodles, egg plant, and tomatoes and I instantly fell in love. The sauce was very interesting because it definitely had turmeric and possibly a small amount of curry in it. The friend I was with mentioned that the sauce was a bit thinner than what she is use to for this dish.

I’ve looked at quite a few recipes since then and I can’t find any that come close to what I had. Does anyone have any recommendations for a recipe that comes close to this or could be altered to emulate it? Any advice or recommendation is much appreciated!

Best non-installed (web app) recipe manager?

I'm looking for a good way to manage a recipe collection that doesn't require installed software.

Things that I'm looking for:

  • Web app. I'd really like to avoid having to install an app on every device I use when looking for recipes or cooking (several different Windows/Mac/Chromebook laptops, iPad, Android phone, etc.)
  • Ability to grab recipes from a website. I don't actually care if it does fancy OCR/interpretation. A screenshot of the website would be plenty. I'm mainly concerned about websites going away, so I'd really prefer that it somehow keeps a separate copy of the content. Ideally, I could do this on my phone (copy URL, open web app, paste URL, done.)
  • Ability to add recipes by picture. This could be as simple as choosing a picture and giving it a title.
  • Ability to type in a recipe. Plain text is totally fine.

It would be nice to be able to add plain text notes to a recipe, but that's not a deal-breaker.

Does anything like this exist? I'm even willing to pay money for a decent product.

Alabama Fried Bass - Soaked in Saltwater First

Ingredients

  • 2 Bass freshly caught
  • 2 cups of cornmeal
  • 3 cups of brackish water for soaking
  • 2 tsp flour
  • 2 tsp salt
  • 10 cups of vegetable oil or as much as necessary

Directions

  1. Clean the fish - descale and leave the skin on. The flavor is in the skin.
  2. Soak the fillets - gets salt all the way through the fish. It also tenderizes larger fish which might be tough.
  3. Heat the vegetable oil - use enough to cover the fish.
  4. Make the batter - cornmeal, flour, and salt. A couple of cups of cornmeal, a couple of tablespoons of salt and flour.
  5. Test the oil for hotness - drip some water on it and see it dance.
  6. Batter each fillet and drop them in the oil.
  7. Cook the fish - it shouldn't take more than a couple of minutes. They should float when done.
  8. Drain the oil by using a paper towel on a plate.

Now you're ready to eat the fish with a side of hushpuppies, french fries, coleslaw, and homemade tartar sauce.

Splitting dinner prep AM/PM

Good afternoon r/recipes! I’m hoping you all can help me out a bit. I work 10-6pm and get home from work around 6:40. My husband gets home at 5 and spends that time wrangling our toddler. I do the grocery shopping/meal planning. I’m wondering if you all have any dinner ideas that can be mostly assembled in the morning, and finish up cooking in the evening. Here’s an example: Whenever we make beef stew, I chop all the meat and veggies, put all the containers in a drawer in the fridge, and then when my husband gets home, he basically just has to throw everything into a pot and make sure it doesn’t burn. Another thing I do is make sloppy joes entirely in the morning, so all he has to do is warm things up a few minutes before I get home. It’s working really well for us, but I’m running low on ideas. I’ve got 4-5 recipes this works really well for, and that’s about it. Anyone else make 60% of dinner in the morning, and finish it up when you get home?

Actual Indian Recipe

For traditional Old World Hindu treat during the holidays (beats the hell out of egg nog). Labor intensive.

Bhang. 2 cups water 1 ounce sweet leaf trimmings (or 1/4 oz of nugs, or 1.5 gms of hash). 4 cups whole milk 2 tablespoons blanched and chopped almonds 1/4 tsp Garam Masala (GM = pinch of clove, pinch of cinnamon, pinch of cardoman) Small piece ginger root Splash of rosewater 1 cup of honey.

Bring the water to a boil. Add trimmings and cover. Boil 10 minutes. Strain through cloth, squeeze sweet leaf to extract liquid. Save both leaf and extract.

Heat milk until warm. Put trimmings in a mortar add a bit of milk, slowly grind together, adding more milk, until paste like. Squeeze paste to get extract. Repeat, until you have close to a 1/2 cup. Put leaves back in mortar. Save milk.

Add chopped almonds to the mortar, with the remaining leaves add more warm milk, grind slow, until paste, squeeze paste. Save extract. Do the same with the ginger.

Add all collected liquids together, including water leaf was boiled in and additional milk, add honey, garam masala, and a small splash of rose water.

Chill and serve.

4 to 6 servings. Use small cups. Don't drive.

Filling Ingredients

  • 1 1b lean ground beef
  • 2 - 3 Italian sausages, hot or mild (take out of casings)
  • 1 tbsp olive oil for frying
  • 1/4 cup bread crumbs
  • 1 egg
  • 3/4 tsp salt
  • 1/4 tsp pepper
  • 2 green onions, chopped
  • 1 tsp oregano
  • 1/3 cup Romano or Parmesan cheese
  • 1 cup Italian ricotta cheese
  • 1/4 cup fresh Italian parsley
  • 1 package of 14 manicotti noodles
  • 1 cup fresh grated mozzarella cheese

Preparation

  1. Fry ground beef, Italian sausage together until browned, set aside to cool.
  2. Mix following nine ingredients together in large bowl.
  3. Mix in ground beef mixture using your hands.
  4. Gently drop manicotti noodles in boiling water (7 at a time for 3 min.)
  5. Drain and rinse in tepid water to stop from cooking.
  6. Gently stuff each noodle, being careful not to split.
  7. Place in 9 x 13 baking dish.

Sauce Recipe

  • 2 tbsp. extra virgin olive oil
  • 1 medium onion, chopped
  • 3 large garlic cloves, minced
  • 1/2 green pepper, chopped in small cubes
  • 1 small can tomato paste
  • 3 tomato paste cans of water
  • 1 28 oz can tomatoes, or 4 cups home canned tomatoes
  • 1/2 cup or 1 small can tomato sauce
  • 1 tsp salt
  • 1/4 tsp pepper
  • 1 tbsp. Romano or Parmesan cheese
  • 1/3 cup fresh basil, chopped

Sauce Preparation

  1. Saute onion, garlic, green pepper in oil for 4 min.
  2. Stir in tomato paste, fry for 3 min, stir in water, tomatoes and sauce.
  3. Add in salt, pepper, fresh basil and 1 tbsp cheese.
  4. Simmer sauce for 1 hr.
  5. Preheat oven to 350 degrees
  6. Cover manicotti with prepared sauce.
  7. Sprinkle mozzarella cheese over top.
  8. Cover with tin foil.
  9. Bake for 30 min, removing foil for last 10 min.

Prep time: 50 min.
Cook time: 30 min.
Serves: 6 to 8

Old family recipes

I hope I'm in the right place.

So, years ago, I started writing down my family recipes from my mother, grandmothers, cousins etc.
I never gave all that much thought to where I wrote them down and it kind of ended up being this massive collection of loose sheets and re-edits, spills and stains (everyone who cooks will recognise the plight)

A couple of months ago my beloved grandmother died while I was in the States. I never got to say goodbye or attend the funeral. It hurt, especially since a few years, I do not live in my native country. I am pretty far from all I've ever known and with the loss of my grandmother, the family recipes have been on my mind more and more. I feel like it'd be a great way to create a nice legacy possibly for my daughter/son if I should have them. Even if not, I really would like them not to be lost.

I guess I am wondering:

  1. How do you keep your family recipes?
  2. I've been toying with the idea of having a custom made cookbook where I would write them down but some people think I should just shove them all in onenote? What are your experiences?
  3. Any ideas/ suggestions would be very welcome

An impressive recipe to show dominance over my coworkers

Hello reddit! So I'm looking for suggestions for an impressive but not too expensive recipe. Next week my office is having it's annual Thanksgiving potluck party. I haven't been working there for very long, but I really enjoy the work and the people I work with. The thing is, what I'm just starting to realize about myself is I'm very competitive and I make up arbitrary things to compare myself to others with when I don't have any other outlet for it. I didn't realize this until my friend, who just got hired at the company, told me he wanted to make something great from scratch to impress everyone, and I realized I must also do the same thing.

I haven't been out of school for very long, and before I used to get out my competitive streak by getting good grades. The work I do doesn't really lend itself to comparison and ranking, though we did recently have a company field day which hit the spot.

Not a lot of people have signed up to bring vegetables, dips, or starches, so one of those would probably be best. My friend wants to make something breakfast or dessert-y, so I wouldn't be outshining him. But making something better than all of my other coworkers would be ideal. I want to show dominance over the office, but they will just be too distracted by the deliciousness and my impressive cooking skills to realize they have been ground into dust, metaphorically speaking.

I have a solid amount of technical skill with cooking, so difficult recipes aren't a problem. I'd prefer not to buy any ingredients crazy ridiculously expensive or decadent. This is about skill, not buying my way to the top. Each dish is supposed to be able to serve 8-10. Thanks in advance for the recommendations!

TL;DR: Need an impressive and/or technically difficult vegetable, dip, or potato/pasta recipe to bring to a party so that I can outshine the people I work with. Thanks!

Help on what my brother and I should cook for the next week while our parents are away when we have no prior cooking experience

Hello! I apologize in advance if this isn’t the right place to post this. For some background info, my brother and I (ages 14 & 15) are going to be staying home alone for the next week meaning we will have to be cooking all our meals.

Both of us have very little experience in the kitchen since both of parents are fairly advanced cooks. I do bake a lot if that helps.

I’m posting here to ask for some easy recipes for beginners or even tips that we can try throughout the week. We do not have any dietary restrictions and are not very picky either besides both of us not liking cheese.

I’ve already picked two recipes that interested me for dinner that I’ll link but I am very open to any more suggestions. Thank you all!

Ingredients

• ⁠8-9 bone-in, skin-on chicken thighs

Marinade Ingredients

• ⁠1/4 cup extra-virgin olive oil • ⁠2 tbsp lemon juice • ⁠2 cloves garlic, minced • ⁠1 tsp dried thyme • ⁠1 tsp dried red pepper flakes • ⁠sea salt and pepper

Vegetables

• ⁠baby potatoes • ⁠sweet potatoes • ⁠shallots • ⁠zucchini • ⁠1 Honey crisp apple (or other sweet apple) cut in 3/4 inch slices • ⁠fresh or dried thyme and rosemary • ⁠sea salt and pepper • ⁠4 slices thick-cut bacon Instructions

  1. ⁠Preheat oven to 425°F.
  2. ⁠Whisk marinade ingredients together. Pat chicken dry and place in a Ziplock bag. Pour marinade over all, close bag tightly and massage the marinade into all the chicken pieces. Set aside.
  3. ⁠Prepare a large sheet pan (with sides) by either lining it with foil or lightly coating it with oil or cooking spray.
  4. ⁠Chop vegetables so they are of uniform sizes. Leave apple unpeeled, remove the core and slice into 3/4 inch chunks. If they are thinner, they cook too quickly and become too soft.
  5. ⁠Arrange vegetables on sheet pan. Drizzle with olive oil and sprinkle with salt and pepper.
  6. ⁠Chop bacon into 1-inch pieces and arrange randomly on the vegetables.
  7. ⁠Place chicken pieces on top of the vegetables and drizzle with remaining marinade.
  8. ⁠Bake at 425°F for 30 minutes or until chicken registers at least 165°F on a meat thermometer.
  9. ⁠Garnish with fresh herbs and serve.

You can easily substitute your favourite fall vegetables in this sheet pan chicken supper, like

The marinade

Instructions:

  1. ⁠In a large bowl, combine the steak strips with soy sauce, olive oil, pepper, and hot sauce. Set aside to marinate while you cook potatoes.
  2. ⁠In a large skillet over medium-high heat, mix 1 tablespoon olive oil and 1 tablespoon butter. When butter is melted, add potatoes. Cook for about 4 minutes, stir and cook an additional 4-5 minutes until potatoes are golden and fork tender. Transfer to a plate and set aside.
  3. ⁠Keep the same skillet over medium heat and add remaining 2 tablespoons butter, garlic, red chili pepper flakes, and fresh herbs. Lay the steak strips in one layer in the skillet, keeping the drained marinade for later. Cook on each side for 1 minute each, until nicely browned – adjust timing depending on how you like your steak.
  4. ⁠Right before the steak is done, you can stir in the reserved marinade if you like, and cook for one minute. Add the potatoes back to the pan and heat through. Adjust seasoning with salt and pepper if necessary.
  5. ⁠Remove from heat and serve immediately, garnished with more crushed chili pepper, fresh herbs, and a sprinkle of parmesan cheese over the potatoes if you like. Enjoy!

Tsaziki and Mint

OK, tsaziki to me is quite simple. I make it with Greek yoghurt (the real stuff not Greek style), grated and drained cucumber, lemon juice and sea salt. I got this simple tsaziki from a resident of corfu.

Everywhere I go I see everyone putting mint in theirs, I know everyone has their own tastes, but why would you destroy a really good thing like that!

Take the mint out, the best tsaziki I've ever had there was no mint in it. It was simple went well with all bbq food and just made me melt with flavourful pleasure with only the 4 ingredients I listed above.

OK rant over...whats your thoughts on the matter?

I want to make those delicious mushrooms from the Whole Foods salad bar

I lovvvvve those delicious roasted mushrooms from the WF salad bar. Whole mushrooms, very meaty, very flavorful, very juicy but not wet. is there balsamic involved? I always load up on them but it occurred to me they might be easy to cook myself. Does anyone have any suggestions?

What are some recipes that pair hot with cold?

So it's one of my favorite combination of... "flavors"... when a hot food is paired with cold food. Like sour cream and borscht, ice cream and warm brownie, and slightly warmed sushi with cold soy sauce.

BBQ Chilli ideas?

There is the best BBQ joint down the street from my house that makes the best chilli I've ever had. They use left over trimmings from the smoked brisket/pulled pork/hamburgers and make a BBQ no bean chilli that's just amazing. I have a crock-pot, sous vide, dutch oven, oven, a grill, and access to a grocery store (US). I'm sure I could just grab a bunch of ingredients and throw them in a crock pot and call it a day, but I want to see if we can get a little creative with it. Ideas?

Burrito salad recommendations

I've been really enjoying burrito bowls over the last few months, and want to incorporate that into the salads I take to work. Trouble is, I'm really struggling finding a decent recipe - or even a base for where to start!

My salads usually have a base of cucumber, tomato, celery, and some kind of lettuce or rocket or spinach. Then I'll throw on some (Quorn) chicken, or sweetcorn, or croutons, or plain vinegar dressing or whatever I'm feeling.

  1. 1 15oz Can of Pumpkin
  2. 1/2 C Shortening
  3. 4 Tbsp Unsalted Butter

  6. 2 tsp Vanilla

Dry Ingredients

  1. 3 C Flour
  2. 1 tsp Baking Soda
  3. 1 tsp Baking Powder
  4. 1/4 tsp Cloves
  5. 1/4 tsp Allspice
  6. 1 tsp Cinnamon

Cinnamon Cream Cheese Icing

  1. 8 oz Cream Cheese
  2. 8 oz Unsalted Butter
  3. 2 tsp Vanilla
  4. 2 1/2 C Powdered Sugar
  5. 2 tsp Cinnamon

Instructions

  1. Preheat oven to 400°
  2. Set out Cream cheese and butter to soften for icing
  3. In a small bowl combine all dry ingredients and mix with a whisk
  4. In a large bowl cream together wet ingredients using a mixer
  5. Add dry ingredients to wet ingredients in 1/2 increments
  6. Once all ingredients are combined scoop batter, using a 1 inch cookie scoop, onto parchment lined cookie sheets
  7. Bake for 8 to 10 minutes
  8. While cake is baking make icing
  9. Cream together butter, vanilla and cream cheese
  10. Add powdered sugar one cup at a time
  11. Add cinnamon last

Has anyone on this sub ever made anything out of bear?

Like steaks or absolutely anything! I’m not limiting this to just the meat either - could be any of the organs or anything. I’m going to start teaching myself how to hunt soon so I can get access to gamier meats, such as bear so I’d love to hear recipes!

Is there anything I should know specifically about cooking exotic meats like this? I know some gamely meats can give off very strong smells so finding a way to hide that is essential.

And on the opposite end of bear, what about squid? I know tons of Asian recipes for making calamari and soups/noodles and whatnot but what are some Western/European dishes that use squid? I feel like it’s very underutilized.

Hi Reddit!

So I have cream of potato soup and brocolli florets, how can I make this into a better broccoli potato soup?

Not sure if I should puree the brocolli first or just some of it and have some full broccoli idk

Other ingredients I have is butter, milk, colby jack cheese slice, garlic, turkey bacon, salt, pepper, other spices.

No onins or chicken broth which is what most recipes call for.

Any advice could help thank you in advance! :)

Green Tomatoes EVERYWHERE!

Posted on r/cooking but nobody tried it. Brought it here for anyone tripping over green tomatoes. Hope you like it! More of a pickle but you could reduce the vinegar to taste. Enjoy!

Yep, our dodgy summer hasn't let them ripen too well and lots of people are harvesting them this week because they reckon the frost will kill them off. So I made a pretty interesting chutney which is tasty. I've seen lots of conflicting recipes so thought if anyone else has lots to use; they may wish to use this one. Let me know how it goes, hope you like.


Tangy Green Tomato and Apple Chutney/pickle, whatever:

1.4 KG Green tomatoes- Diced

4 Bramley Apples (900g) - Diced

3-400g Onions - Chopped

4 Tiny chillies from my plant, Explosive Ember. Or one good sized Red Chili - Finely chopped.

2-3 Tsp of ground ginger.

1 Tsp each of: Cinnamon, Corriander seed and Nutmeg.

1 Clove (trust me).

2-3 tablespoons of Jam Sugar. - Cheating, but a failsafe. Honestly just save yourself this way.

Around 300ml of white wine vinegar, plus a good squirt of malt vinegar.

500g Light muscovado sugar

3-4 handfulls of Sultanas. - Lightly chopped but some left whole.

2 Pinches of Salt

2 grinds on the old Black Pepper grinder


Add everything BUT the Sugar and about a third of the Vinegar to the preserving pan and heat on medium. Slowly bring the heat up adding in and stirring the sugar, then the rest of the Vinegar after. I find this helps any last sugar crystals to dissolve, and keeps the vinegar tangy.

Bring to a boil, stirring well. Keep it rolling a short time like 4-5 mins. Then bring down to a simmer.

Cook for around 1 hr 45 Mins, or more until thick.

As it cooks stir often and check it's not sticking to the bottom.

Maybe some more spices to your taste for the finish.

Jar it up and enjoy!

It took some boiling down so you could reduce the vinegar amount, but Tomatoes are pretty liquid anyway. Also the sugar could be lessened I'm sure, but not too much because it needs it to set!

Hope this inspires you lot get some use out of those green Tomatoes!

Is it possible to make sugar free/ low sugar cereal bars?

I want to make some cereal bars, for snacks and my little sister's (very picky) lunchbox and the like. Thing is, just about every recipe I look at contains a ton of butter or syrup or sugar and I want to make something healthy that will actually be eaten. A little honey or a few dark choc chips are fine but ultimately, I'd like something with a minimal amount of sugar/butter. Which is pretty hard seeing as these ingredients are usually what stops cereal bars from crumbling apart and what makes them taste so damn good. Sweetners are usually used in replacement for sugar but let's admit it- they usually don't taste fantastic in larger quantities. I'm open to the wackiest ideas you throw at me and if my sister ends up eating some fruit or something while we're at it- bonus.

Jalapeno Popper Bacon Cheddar Ranch Stuffed Chicken

Ingredients

- 4 chicken breasts/8 chicken thighs
- 2 Jalapeno peppers
- 1 pkg cream cheese
- 1 1/2 cups shredded cheddar cheese
- 1 pkg ranch dressing powdered mix (ranch seasoning etc etc)
- 4 slices of bacon crumbled (or diced and then cooked)

Directions

Bring cream cheese to room temp (it's easier to mix that way and better not to put something cold inside chicken and cook). Preheat oven to 400F.

If using boneless skinless chicken thighs, nothing needs to be done with the chicken to prep. If using breast, filet them so that you can stuff them.

Remove seeds and ribs from jalapeno and dice. Combine jalapeno, bacon crumbles, ranch mix, cream cheese and cheddar cheese. I usually mix by hand or with a big spoon. Separate cheese mixture into 4/8 equal amounts. Stuff inside chicken and fold chicken in half. I usually just place it open side down in the pan, but sometimes I use skewers to hold in place.

Place chicken in greased baking pan. Cook for 30 min. or until chicken juices run clear.

Simple recipe manager for older lady?

I'm looking for a simple recipe manager for my aunt. She is 72 years old and grew up in a time when women kept recipes on file cards in a little box in the kitchen. She wants to be able to organize her recipes on her computer in a similar way.

She uses her computer daily and is very good with it but she does not want a complicated or fancy recipe database. She's just at a point in her life where she doesn't want to learn a whole new software program and interface.

She is looking for something that would give her basic categories and subcategories. She wants to able to to look up recipes by title, category, or ingredients. Also, she wants to be able to print recipes on 5"x7" cards. I will do all the data entry for her (she has boxes and boxes) so she'll only be using it to locate and print recipes. She has a PC with Windows, so we're not looking for phone apps. Since it's something simple we're hoping to find one that's free.

She is a fantastic cook and cooks for everyone: family, friends, the guy who comes to repair her dishwasher. It's her way of showing love and appreciation. I would really like to help her get her recipes organized the way she wants, something simple and easy for her to use.

Any suggestions?

What are your most unique Thanksgiving recipes?

I mean dishes that are absolutely different from the standard Thanksgiving feast but still fits the Thanksgiving/Fall vibes!

I'm talking double chocolate pumpkin spice pies served in individual-sized pumpkins; roasted butternut squash lasagna; wild mushroom and hazelnut stuffing - you name it!

The recipe normally calls for pork (which I can't really eat) but I want to do a Thanksgiving twist on it and make personal-sized Thanksgiving entree pies while steering away from the chicken pot pie territory. 1 red onions

1 tbsp ginger garlic paste

1 tsp kasoori methi

1 tsp garam masala

2 tbsp (a bit less) sugar

1 tbsp chilli powder

5 tbsp butter

3 tbsp cream

1.5 tbsp White Vinegar

Vegan thanksgiving

Soup Recipes

Hey everybody, I am looking for a good recipe for an asian-style soup. My wife is sick and shes asking for some. I saw one for oxtail soup that looked amazing but it required a bunch of ingredients I can't get where I'm at currently. I was hoping someone has a great soup recipe that's not too difficult or time consuming. I am also up for recipes for things like Caldo de Costilla, etc.

I don't generally like chicken in my soup, but if you've got a great recipe that uses chicken, I will take it.

Cheap and readily available proteins to cook with?

I'm a medical student on a budget so I've been making a lot of chicken, pork chops, ground beef, and cheap fish (only salmon & tilapia, other cheap suggestions welcome) for my bf and I for dinner... it's getting a bit boring working with the same 4-5 proteins on a weekly basis and I was hoping to switch it up a bit.

Any ideas on new proteins I could try working with without breaking my bank?
