Creamy Broccoli and Spinach Soup

Ingredients 2 leeks, chopped 4 tablespoons unsalted butter kosher salt and black pepper 6 cups low-sodium vegetable broth 1 bunch broccoli, chopped 1 small russet potato, peeled and chopped 5 ounces spinach sour cream

How to Make It Step 1 Cook the leeks in the butter with ¾ teaspoon salt and ¼ teaspoon pepper in a large pot over medium-high heat, stirring occasionally, until softened, 4 to 6 minutes.

Step 2 Add the vegetable broth, broccoli, and potato. Simmer until tender, 18 to 22 minutes.

Step 3 Stir in the spinach until wilted. Transfer the mixture to a blender and puree until smooth. Top with the sour cream and black pepper to taste before serving.

Black Bean & Corn Salad

I notice this recipe hasn't been posted in a while, and I wanted to share because it has become a staple for me when trying to eat cheap and healthy, especially during this long, dreary, Canadian winter.

Hope you enjoy it as much as I do!

Ingredients

  • 2 cups black beans, rinsed
  • 2 cups whole kernel corn, rinsed
  • 1/3 cup diced red onion
  • 1/4 cup chopped cilantro
  • 3 tbsp lime juice
  • 1-2 tsp olive oil
  • Salt & pepper to taste (about 1/2 tsp)
  • 1 tsp cumin (I use 2 tsp 'cause I love it!)
  • 1/8 tsp cayenne pepper

Method

  • Combine beans, corn, onion in a large mixing bowl
  • Add lime juice and oil to beans/corn; mix well
  • In a small bowl, combine spices
  • Add spices to beans/corn; mix well
  • Lastly, add chopped cilantro; mix well.
  • Store in airtight container in fridge 7-10 days. Mine gets eaten within the week!

Note: I find this "order of operations" works best to ensure even distribution of dressing and seasonings.

How can I improve my jerk chicken?

Okay so I’ve tried loads of recipes and my favourite by far has the following ingredients in the marinade: peppercorns, whole allspice, nutmeg, cinnamon, scotch bonnets, soy sauce, lime juice, brown sugar, spring onions, fresh thyme & salt. But it’s not quite right. Great jerk seems to be a little sweeter/lighter as well spicy with deep flavours. This seems to be a bit too savoury if that makes sense, or a bit too deep! Have tried just upping the sugar but doesn’t really help. I’m missing something! What’s in your marinade?

The recipes on r/GifRecipes are (often) disgusting

Dear r/recipes, I felt the need to make this post as a way off venting after I browsed the top posts of GifRecipes.

Is it just me, or are an unusually high proportion of the recipes incredibly repulsive? I noticed this phenomenon when I stumbled upon a popular recipe that involved deep frying an entire block of brie cheese, and from browsing the top posts realised this was a common theme. Recipes typically start by making what would be a lovely meal, then halfway through, the recipe becomes perverted, usually by smothering or stuffing with cheese, deep fat frying or just doing something bizarre for the sake of it.

Don't get me wrong, the majority of the recipes that get upvoted look great, and overall I think it's a good subreddit, just I wondered if anyone else shares my observation.

Christmas Salad

Ingredients

  • Kale (chopped)

  • Raspberries

  • Mandarin oranges (canned or fresh)

  • Pomegranate

  • Oil

  • Salt

  • Lemon or OJ

Directions

Fill your salad bowl with kale, in another dish drizzle oil, a couple shakes of salt, either a few drops of lemon juice or a couple spoons of OJ, mix together then drizzle on salad. You should make just enough to lightly coat all the kale when tossed. let sit 10-20 minutes while tossing occasionally. Finally peel your fruit and add pomegranate seeds, mandarin slices, and raspberries (halve them if you feel they are too big), toss lightly and viola!

Dumb question for a picky eater

Is it possible to make chili with a powder chili mix with just the beef? Directions call for diced tomatoes, not drained and other stuff. I just want the beef by itself. Like do i add water sort of like making prepackaged taco seasoning?

I know, I know, veggies and whatnot are a big part of what makes chili, chili. I'm just a picky eater and really not a fan of onions or tomatoes.

Looking for good Pasta salad recipes for nightshifts

So i am going to have some full night shifts these coming weeks so i been thinking of making some food that i can eat without needing to heat it. the first thing that came to mind was pasta sallad and i have some basic idea on what i need for it but want others opinion.

For meat i plan on using some chicken that is spiced in chili or koriander and or salami sausage.

For the veggies i think i will use: Cucumber, Tomatoes, Bell Pepper, broccoli, red onion.

Pasta would probably be some spiral pasta. not sure on if i should go for some rye rich or not

Also to note is that i don't like things like olives and cheese

EDIT: Also all things mentioned with exception of the chicken and pasta is normally just raw veggies. Anything there that would taste better if i fried it beforehand or something?

"Grapefruit Dish" (recipe from the Special Period in Cuba translated by me)

During Cuba's Special Period, people survived in any way they could - including by preparing grapefruit rinds like meat. Here's one such recipe from the pages of Con Nuestros Propios Esfuerzos - a DIY-type book from Cuba's Special Period. Because of the nature of the book, the recipes are not exact but if anyone attempts this recipe, it would be great to hear about what worked for you!

GRAPEFRUIT DISH

Peel and boil the grapefruits, submerge them in cold water for at least 4 hours to remove bitterness then squeeze them until dry. Prepare a sofrito and mix the grapefruits in (literally: "throw it on top").

COMPUESTO DE TORONJA

Pelar y hervir las toronjas, sumergirlas en agua frƭa mƔs de 4 horas para quitarles el amargor y luego exprimirlas hasta dejarlas secas. Preparar un sofrito y echƔrselo [sic: echƔnrselo] por encima.

Note: It's not entirely clear which part of the grapefruit is being used. It could be:

  • 1. Peel off the grapefruit rinds, boil them then submerge them in cold water...
  • 2. Peel the grapefruit skin leaving the pith and fruit, boil the peeled grapefruits then submerge them in cold water...
  • 3. Peel the grapefruit skin, remove pith from fruit, boil pith then submerge it in cold water...

Based on other recipes, I would guess #3. However, the word "exprimir" is usually associated with squeezing citrus juice so #2 seems possible though "exprimir" can also refer to squeezing/ringing out in other contexts.

The boiling and soaking steps are to remove bitterness. There are many different methods of doing this one might try - one online recipe says to soak grapefruit rinds in cold water for 24 hours then blanch them three times.

Does anyone remember the "Dave's Favorites" burgers from Wendy's in the early 90s? I want to find out what went into the Spicy Cajun Burger.

I worked at a Wendy's back then and had them all at some point or another and I've wondered what went into the cajun mayo that was on the burger so I could duplicate it.

The Spicy Cajun burger consisted of "cajun mayonnaise" whatever that was, lettuce, tomato, patty, cheese(?) and salsa and some banana peppers. on a toasted kaiser bun.

I can't remember what the cheese was, if it was processed cheddar or swiss.

It's kind of disappointing that they don't have kaiser buns anymore and they don't toast their buns either. But that's a separate issue.

Question: how to prepare this soup?

Hi, I have recently visited London, and I bumped into one of those 'ready-to-eat' places, in this case 'Pret a manger' or just 'Pret' ad they say it there. Tried several things, but the smoky chorizo chicken soup really got my attention. [Request] Wife is taking a trip to Venezuela and needs to cook with non-perishables only.

I’ve got a challenging question /r/askculinary. My wife needs to go to Venezuela for work and was told that she would need to bring all the food that she wants to cook. The only problem is that she can’t bring any produce and everything has to be non-perishable. Ideally, she wouldn’t be bringing any liquids so she doesn’t need a checked bag. Chocolate Dipped Peanut Butter Eggs

  • Ingredients
  • 8 oz Cream Cheese
  • 1 C Peanut Butter
  • 1/4 C Butter
  • Pinch of Salt
  • 4 C Powdered Sugar
  • Melting Chocolate (about 1 1/2 to 2 Lbs)
  • Instructions
  • In a large bowl cream together the butter, peanut butter, and cream cheese, then add a pinch of salt and mix in the powdered sugar one cup at a time.
  • Lay out several cookie sheets lined with parchment or wax paper.
  • Using a 1” cookie scoop, scoop the dough and form a ball into your hand.
  • Shape the ball into a small egg and then place on cookie sheet.
  • Repeat with rest of dough.
  • The recipe should make 50 to 55 eggs.
  • Refrigerate eggs for 18 to 24 hours. You need to do this to let the eggs dry out a bit. Otherwise when you go to coat the eggs in chocolate they will be too soft and fall apart.
  • After time is up melt chocolate over a double broiler. I used a milk chocolate.
  • Also, melt chocolate as you need it not all at once. This will help with chocolate possibly ceasing up or getting the dough in it.
  • Don’t bring eggs out of fridge until you are ready to coat them in the chocolate.
  • Coat the eggs in chocolate. I used a spoon to cover then and then lifted them out with a fork, shaking off the excess.
  • Lay them out on a cookie sheet and decorate with sprinkles if desired. * Wrap individually with plastic wrap or in plastic container once chocolate has cooled.

Butter chicken-Punjabi dhaba style Murg Makhni

Ingredients Marinade: 400 g chicken,curry cut 1 tbsp ginger-garlic paste salt as per taste 1 tsp red chilli powder 1 tsp lemon juice 1/2 cup yogurt 1 tsp garam masala 1/4 tsp turmeric 2 tbsp oil, for brushing Sauce: 4 medium tomatoes 2 tbsp ghee/oil 1 tsp ginger garlic paste 1/2 tsp coriander powder 1/2 tsp cumin powder 1/2 tsp garam masala 1/4 tsp turmeric 1/2 tsp red chilli powder 1 tbsp butter 50ml cooking cream 1 tsp kasuri methi/dried fenugreek leaves Chopped coriander, to garnish Instructions Marination: Mix all the ingredients for marination and add chicken to it. Keep it aside for 4-6 hours. Grill it in an pre-heated fan-forced oven at 160 deg C(180 deg C for convection) for 10 minutes. Brush oil on thechicken and turn them over and grill again for 10 minutes. Sauce: Steam the tomatoes,de-skin,puree and sieve it. In a pan,heat oil,add tomato sauce to it. Add spices to it and let it cook for 5 minutes. Now,add the grilled chicken to it and let it come to a boil,cook for 5-7 minutes. Add cream,butter to it and stir well. Ramen broth recipe, please?

For one reason or another every time I try my hand at ramen it tastes like chicken noodle soup.

I’ve started with chicken broth and chicken stock before and even after simmering with ginger, garlic, and green onions the final product always tastes like chicken noodle soup broth.

I know how to make all the other goodies that go in the ramen, just having trouble with both. So, reddit, I have all day tomorrow, Id like to try making my own broth, I can simmer for 6+ hours if needed, what do I do to make a delicious broth for my ramen?

Chili Black Bean Sauce

INGREDIENTS:

8 ounces fresh red bird's eye chillis, stemmed and finely minced 1/3 cup fermented black beans, rinsed and chopped 2 tablespoons peanut or vegetable oil 1 tablespoon yellow rice wine 2 teaspoons dark rice vinegar 1 tablespoon sugar

1) Cook the chillis and black beans in the oil over medium heat for 1 minute. 2) Add the rice wine and vinegar and simmer for another 3 minutes. Stir in the sugar. 3) Remove from the heat and let cool before transferring to a storage container. The sauce can stored in the fridge for up to 3 weeks.

Best friend just got the bad news that she can no longer eat gluten or dairy! Seeking gluten and dairy free recipes we can tackle

We celebrated her last hurrah with copious amounts of Queso, hamburgers, and ice cream last night, but now she must begin her new diet. I love to cook, so I'm excited for the challenge!
