I've got a few 100 two sided recipe cards I'd love to digitise (using my Android phone), OCR, and tag - so that I can find things easier. But how do I go about doing this!?

Title.

I've a LOT of recipe cards from HelloFresh and Gousto that I've collected over the years. They're beginning to deteriorate (food splatter..) and they're a complete unorganised mess. I want to be able to scan them in using my phone (I know Google Drive has this feature) into a .. PDF? .., and then OCR them and tag them (by ingredients or style) so that I can search for, say, 'courgette' or 'asian' and they all come up in a list.

But I have no idea how to easily do this.

Are there any software or any ideas that people have?

Pumpkin and chickpea curry

Ingredients

1 tablespoon vegetable oil 1 brown onion, chopped 550g butternut pumpkin, peeled, cut into 2cm cubes 2 garlic cloves, crushed 2 1/2 teaspoons ground cumin 1 1/2 teaspoons garam masala 2 cups vegetable stock 400g can Coles Brand Italian Diced Tomatoes 400g can Coles Brand Chickpeas, rinsed, drained 1/4 cup chopped coriander, plus extra sprigs to serve 1/3 cup Greek yoghurt 

Method

Step 1 Heat the oil in a large saucepan over medium heat. Cook the onion, stirring, for 2-3 mins or until softened. Add the pumpkin, garlic and spices. Cook, stirring, for 1 min or until fragrant. Step 2 Add the stock and tomato. Bring to the boil. Reduce heat and simmer, uncovered, for 10 mins. Add chickpeas and simmer a further 10 mins or until pumpkin is just tender. Add coriander and season. Step 3 Spoon the curry into bowls. Top with yoghurt and extra coriander.

Chicken & Gnocchi With Burnt Sage Butter

Chicken and gnocchi are a great combination to provide a wonderful comfort food and hearty meal. This dish can be prepared and made in around 20 minutes or so. So when you are looking for something quick and easy to make, try this dish. The chicken and gnocchi are bathed and soaked in a rich browned butter sauce with crisp fried sage leaves. Served with a liberal sprinkling of pepper and parmesan cheese provide a wonderful peppery undertone with a lovely creamy finish.

Ingredients:
• 3 Chicken Fillets breast fillets cut into bite size pieces
• 125 g Butter chopped
• 20 Sage Leaves I used large sage leaves and chopped in half
• 500 g Gnocchi
• 1/2 cup Parmesan cheese grated, more if required
• Black Pepper to serve

Instructions:
1. Cook chicken in a large frying pan over medium high heat until browned and cook through. Remove from pan and set aside. Using paper towel wipe the pan to try to remove any chicken bits remaining.
2. Cook gnocchi according to packet instructions. Drain and set aside.
3. In the same frying pan over medium high heat, add butter and cook until melted.
4. Add sage leaves to pan and cook for 3-5 minutes or until sage leaves are crisp and butter has turned a dark brown colour. The length of time required will depend on how hot your pan is.
5. Add chicken and gnocchi to pan and stir to coat with butter and heat through.
6. When serving, sprinkle liberally with black pepper and parmesan cheese.

Chicory-guacamole snack

Some time ago I prepared a snack that I liked a lot. I liked the bitterness of chicory and the fact how you can combine it with different ingredients to get a tasty snack. This time I combined it with some home-made guacamole. Chicory leaves are in a shape of a boat; perfect to be filled with dips, salsas, fruits and other things. If you prefer a more fruity version, you can jump to one of my previous recipes, where I used the grapefruit.

The ingredients for this snack are:

chicory (ca 8 leaves) salmon (raw smoked, 8 medium slices) 1 egg (optional) 1 avocado 1 tomato cilantro 1 lime salt and pepper Take circa eight leaves from the chicory head, wash them and leave them on a paper towel to dry. In a small bowl prepare the guacamole. Cut the avocado in half, remove the pit and with a spoon take the tasty green fruit out of the shell. With the help of a fork smash it so that you leave some nice avocado chunks. Wash and dice the tomato and put it in the bowl. Stir it and add the chopped cilantro and the lime juice. Season well, give it the last stir and put aside.

Next place the chicory leaves on a big plate and fill them with the guacamole dip. I like guacamole a lot, so I was quite generous with the portions. On top of each filled leave place a nice salmon slice. Squeeze some lime on top of each chicory “boat” to give an extra taste.

Serve as a snack or side dish. I served it with a boiled egg. I played again a little bit and I've made a heart shaped egg.

Jalapeño-bacon egg cups

Egg cups are perfect for a party, a picnic, breakfast or for a snack. You can see that there are endless possibilities. If jalapeños are your thing, this is the right chance for your tongue buds to go crazy. If you get watering eyes just thinking about jalapeños, you could use a regular bell-pepper or olives or any other vegetable. There is also a variation for fish lovers; egg cups with salmon. The nice things about this fluffy egg cups are that they look good, taste amazing and they are the easiest thing ever to make. All you need is a muffin tin.

This is one of those recipes where you can play around and follow your taste.

Well I followed mine and these are the ingredients that I used:

5 eggs (M) 1 small onion or ½ of a big onion 2 garlic cloves 3 Tbsp of coconut milk (in a can, it is creamier) ½ bell-pepper 2 jalapeños 8 slices of bacon or prosciutto salt and pepper

Spicy-bacon egg cups Take the eggs out of the fridge and leave them at room temperature for 10-15 minutes. In the meantime wash the veggies, chop the garlic, dice the onion and the bell-pepper and slice the jalapeños.

In a small bowl beat the eggs and combine them with coconut milk, salt and pepper. Turn on the oven to 190º C. The egg cups will be in the oven in 5 minutes. Take a muffin tin (mine has 8 muffin cups) and cover each muffin cup wall with a slice of bacon or prosciutto. No worries if the bacon goes slightly over the edge. Fill each cup with the egg mixture, stopping half a centimetre from the top. Add to each cup the chopped garlic, then onion and bell-pepper and on top of that add the sliced jalapeños.

Place the muffin tin in the oven on the middle rack and bake for 20 -25 minutes.

Serve warm or cold, with some salad on a side. Make this recipe a classic dish and use it for everyday occasions or for a special one.

Any recipes for dietary restrictions (see comment below)?

I need to eliminate soy,diary,and anything acidic. My son has a sensitivity to milk and possibly soy and has acid reflux. I need to eliminate my food so he doesn't flare up in reflux symptoms. Trying to find recipes is a task in itself. Low fat foods will help. I can't even eat ground turkey that's 85% lean because it's too much grease for him. Any advice is appreciated. Thanks!

[Request] Help me save butter and flour I mistakenly mixed together (maybe involving blueberries?)

I started baking a cake before having my morning coffee and creamed together my butter and my flour. Yep. I started over for that recipe, but now I have 3 cups flour mixed with 1.5 cups butter. What can I make with this mistake mix? I also have a bunch of blueberries so I was thinking a muffin or quickbread maybe? Obviously the recipe can't involve creaming the butter with sugar. -_-

Slow cooker ideas for summer

I depend on the slow cooker a lot due to my schedule, but most slow-cooker recipes I know are pretty heavy for summer. I've done a few types of sandwich meats and a Mexican mole stew that worked okay. What do you make in your slow cooker during hot weather? Have you had luck with curries, pho, or other light soups and sauces?

[Request] Savory dough-based foods that can be made in a very limited kitchen, preferably with yeast.

Hi, r/recipes!

Tldr, moved to China relatively recently and I'm already missing American food hardcore. I'm especially missing the savory yeast-risen doughs like hot pepper bread, pizza, and the like, but also the sweet ones like cinnamon rolls and donuts.

You can get some of those things here, but they're rare, hard to get to, very expensive, and just not the same quality-wise. The pizza in my city, for example, is just plain awful (as far as I've found so far).

I fear this will culinary isolation will get to me much faster and harder than any other aspect of the transition to living here.

Here's the problem, though: I don't have an oven yet, and I won't be able to get one for at least another month or so. I only have a single burner and a microwave (and an electric kettle, which doesn't really help in this case) for the time being.

And all of the breads I grew up with in my youth were obviously baked, save fry bread and donuts (which I've never made by myself before, and seem a little intimidating). But fry bread alone does not really sate my appetite for the bread-y food of my upbringing.

So here's what I need: give me your best breads, preferably yeast-based, that can get me through this slump.

I don't care if they're shallow or deep fried or something else. I don't care how expensive or hard to find the ingredients will be here. I just need American-style bread-based foods that don't require baking to get me through this month -- I can't overstate how much these foods were the basis of my upbringing (mom's from Wisconsin, beer bread was more common in my house than white bread).

It's my mom's birthday and she's cutting back on the sweets. What seasonal fruits are good candidates for Summer fruit dessert recipes?

I live in California and plan to stop by the farmer's market tomorrow morning. I was thinking a fruit fool or trifle might be a nice alternative to a cake, since my mom and dad are both watching their diets a little more closely these days. And in individual glass cups it could be super cute to stick a candle in.

Does anyone have any favorite fruit-based dessert recipes they wouldn't mind sharing that make the best of what's in season at the moment (early July)? The supermarkets are bursting with raspberries currently, but I can't recall ever tasting a raspberry that was truly out-of-this-world (the way that some strawberries, peaches, etc., truly are out-of-this-world delicious). Cherries are also very good right now, but surprisingly, I can't recall any Cherry desserts that aren't baked or flambeéd. I'm not opposed to cooking with farm-fresh fruits. It's just that the cooked preparations I'm familiar with tend to be more decadent and have a lot of added sugar.

I'll be making 4-5 hours in advance, which should be enough time to chill a refrigerated dessert but probably not long enough to set anything propped up by gelatins. I'd really appreciate your suggestions!

**Recipe Request** Hidden seafood

I'm not sure if this is the correct sub, but hopefully someone can help me out here. I was challenged by my friends to make a seafood dish in which you couldn't tell or taste the seafood in it- like really, indistinguishable, small pieces of fish in pasta sauce (but you can't taste it), or even something like ground-up whatever sea creature in like, chocolate cake (gross but I really want to catch them off guard). Anyone have any 'trick' seafood dishes I could try out?

Marinated Skirt Steak With Chimichurri Sauce

Ingredients
For the Marinade and Grilling:
* ⅔ cup olive oil
* ½ cup fresh orange juice
* ⅓ cup fresh lime juice
* ¼ cup soy sauce
* ¼ cup Worcestershire sauce
* 3 tablespoons apple cider or red wine vinegar
* 4 garlic cloves, minced
* 1 pound Skirt Steak
* Salt and Pepper to taste
For the Chimichurri Sauce:
* 1 cup fresh parsley
* 1 cup fresh cilantro
* ¼-1/3 cup olive oil
* ½ medium onion, diced
* 3 garlic cloves
* 3 tablespoons fresh lime juice
* 2 tablespoons red wine vinegar
* ½ teaspoon salt
* ½ teaspoon pepper
* Optional: ¼ teaspoon red pepper flakes

Instructions:
For the Marinade and Grilling:
1. Whisk all of the ingredients together and pour into a large ziploc bag.
2. Add skirt steak to ziploc bag with marinade and allow to marinade overnight preferably.
3. When ready to grill, liberally season with salt and pepper.
4. Grill until golden brown and perfectly charred then allow to rest before slicing on a cutting board.
For the Chimichurri sauce:
1. Add all of the ingredients to a heavy duty blender or food processor and blend until everything is chopped up and smooth then serve. Seriously that easy.

[Request] Any recipe suggestions for a lot of beans?

I am a student, on a budget and I chose beans as my main source of protein in my meals. This means I eat a lot of it, around 1.5 kilograms (3 pounds) every week, so obviously I want it to taste very good. Also I prepare my week's meals on one day and I usually get dried cranberry beans. Jalapeno BBQ Beer Burgers

The made-from-scratch BBQ sauce really ties this whole burger together. I love the standard Kraft Single, frozen patty, and grocery store bun as much as the next guy, but why not try and blow their socks off with this sweet and spicy burger. It's almost the 4th of July after all. Ingredients

1 Cup Lager

3 Jalapeños, finely chopped

1/2 cup white vinegar

1/3 cup brown sugar

1/4 cup ketchup

1 tablespoon honey mustard

1 teaspoon soy sauce

Salt/pepper

1 tsp garlic powder

For everything else

Hamburger Buns

1 lb groundbeef

1/2 red onion cut into ribbons

4 Slices smoked Cheddar Cheese

4 slices bacon

Salt/pepper

1/2 bag cole slaw mix

2 tbsp sour cream

1 tbsp chipotle sauce (or 3 whole pureed canned chipotle peppers)

1 Head of lettuce

2 jalapenos, sliced into rings

For the sauce:

Finely dice 3 of the jalapeños

Heat up a small sauce pan to medium heat, add diced jalapenos and sweat.

Once the Jalapeños have devloped some color add the beer, and reduce for about 3 minutes.

Add ketchup, brown sugar, vinegar, honey mustard, soy sauce, garlic powder, salt and pepper.

Reduce until the sauce thickens and can easily coat a spoon, aprox. 12 minutes.

For the burger

Slice half a red onion into shreds and cut the 2 jalapenos into rings, discarding the stem.

In a small frying pan, add 1 teaspoon oil, and apply low heat. Add onions and slowly cook for 20-30 minutes until brown and caramelized.Remove from pan and set aside

In the same pan, fry 3 slices of bacon over medium heat. Once cooked, remove the bacon and add the jalapeno rings and fry until they just start to brown.

Drain Oil and set aside.

In a medium bowl, mix cole slaw mix, chipotle sauce (or peppers) and sour cream. Set aside.

Clean oil out of frying pan, and add a pad of butter, heat to medium. Add buns and toast until golden brown.

Form 2 patties from the ground beef approx. 4 inches in diameter, and 1/2 an inch thick.

Season with salt and pepper, and either grill or fry until medium. Add cheese once the burgers are almost finished, approx. 10 minutes. Allow the burger to rest for 5 minutes.

To Stack

Lay the burger down on the bottom half of the toasted bun,

Place the bacon, fried Jalapeños and caramelized onions.

Drizzle with homemade BBQ sauce

Add piece of lettuce, and spread slaw ontop of lettuce.

Top burger with the other half of the bun, and eat that burger up.

Who can recreate a recipe?

What would that person be called? A food scientist? Someone who can taste a dish and then figure out how it's made. Or figure out the composition scientifically.

Maybe that's two different professions? One more scientific, where they analyze the dish and figure out the components. The other where they can rate it and have such a good palate that they can figure out the ingredients.

I have a discontinued sauce that I am desperately trying to figure out how to recreate (seriously, so desperate I made a blog about it) and I want to look into getting someone to recreate it.

Who do I call? (Do not say Ghostbusters.)

My dad's horseradish potato salad

My dad passed away in 2008. He never wrote this recipe down but my mom was able to reverse engineer it after some experimentation. This recipe means a lot to me and this is the first time I've ever shared it. I hope you enjoy. it. <3

Ingredients:

  • Russet potatoes x 2.5 lbs
  • Eggs x 3
  • Dill x 1/4 tsp if dried. More if fresh or season to taste. Fresh is better. I usually put more in when I make it.
  • Scallions (one rubber banded cluster from the grocery store is more than enough)
  • Mayonnaise x 3/4 cup
  • Horseradish x 2.5 tablespoons (you can usually find this in the mustard aisle, but you want straight horseradish not mustard with horseradish in it). Inglehoffer is a good brand.

Directions:

  1. Wash potatoes.
  2. Boil potatoes for 18-20 minutes, or until they slide easily off a knife.
  3. Drain water. Do not let them sit in the water they boiled in or they will get mushy.
  4. Allow the potatoes to cool enough to handle and then remove the peels. I use a knife instead of a peeler. The skin is too mushy to use a peeler in my opinion. Dice them into bite size pieces.
  5. Place potatoes in the fridge. Preferably overnight so they are nice and chilled the next day.
  6. Hard boil three eggs. Cover them in water in a pot and bring them to a boil and then turn off the heat and keep them in the water for 9 minutes and then drain the water. Place them in the fridge to chill. The next steps are best if done the next day.
  7. Peel the eggs and dice them into small bite sized pieces. Take potatoes out of the fridge and put eggs in with them in a large bowl.
  8. Cut off white ends of scallions and discard. Cut the green stems so you have a modest handful of them. They have a mild onion flavor but you can always put more in but can't take any out! These are for flavor and color.
  9. Put mayonnaise, dill, scallions, and horseradish in with eggs and potatoes.
  10. Salt them to your preference.
  11. Gently mix everything together. I'd suggest s taste at this point to see if you need more of any of the ingredients.
  12. Keep chilled until ready to serve. The colder the better.

The end result should have a noticeable but not overwhelming horseradish flavor. Light and fresh.

How do I get crispy skin like a porchetta?

One time I was able to roast a couple chicken thighs and I got the skin amazingly crispy like that porchetta. It was amazing. It was easily the most delicious chicken I've ever eaten. I've tried recreating it since but I can never get it right.

Here's what I do remember: I stuck the thighs in a marinade of olive oil, garlic, some spices I get from my mother, and some vinegar I think. It might have been lemon juice, but I think it was vinegar. Some kinda acid. Then I put them in a foil tray and covered it in aluminum foil. I remember I had it in the oven for a long time at a low heat (I think 375) then I turned up the heat (450 I think) because I thought it wasn't cooking and I was hungry. Eventually I figured it was cooked all the way through so I took it out. When I took of the foil, I realized the skin had that amazing crispiness and when I ate it, it was so juicy and flavorful.

Like I said, I've tried doing this again but I can't get it right so clearly I'm missing some steps. What the hell am I missing?

Vegetable Croquettes

Ingredients: vegetable croquettes

1/2 cup of milk 1 cup of flour 1 onion 1 pepper 1 carrot 1 zucchini 2 garlic cloves 100g spinach 100g cheese or tofu bread crumbs Procedure:

Chop the onions and the garlic cloves delicately and put them in a pan with a bit of oil. Chop the carrot, the pepper and the zucchini into small pieces and add them to the pan. Season and cook everything together for about 5 minutes. Clean the spinach and remove hard stems. Chop them up, mix them up with the previous ingredients and cook briefly. Add the milk to the flower (if vegan use vegetable milk or broth) little by little continuously stirring the mix. Add two pinches of salt and pepper and cook the dough with low heat for 15 minutes. Cover the surface of a wide platter with a very thin layer of oil and let it cool. Lay the dough over it. Grate the cheese or the tofu (for vegans) on top of the dough and mix well. Shape the croquettes to the desired length and width. Roll the croquettes over batter eggs and bread crumbs. Pre-heat the over to 350 degrees. Cook in the oven until golden. Make sure that you place the croquettes in a thin oiled up film. Enjoy!

Mint Cheesecake Mousse

If you are looking for a dessert that looks great and tastes great and provides a very impressive finish to a dinner party of meal with friends, then you should definitely try this Mint Cheesecake Mousse. This dessert need to be made in advance to give the mousse time to chill and firm. The crushed Oreos form a great biscuit base for the dessert. The mouse filling is a sensational peppermint flavoured cheesecake, thickened cream and icing sugar mixture. The mousse is further enhanced through the chopped milk chocolate that is blended through. Refrigerated and topped with whipped cream before serving and you have a silky rich, decadent dessert.

Ingredients:
• 200 g Oreo Biscuits about 21-22 biscuits
• 50 g Butter melted
• 2 tbsp water cold water
• 1 1/2 tsp Gelatin
• 1 1/2 cups Thickened Cream
• 500 g Cream Cheese
• 1 1/2 tsp Peppermint Essence
• 1 1/2 cups Icing Sugar separated into 1/4 cup and 1 1/4 cup amounts
• Green Food Colouring optional
• 100 g Milk Chocolate finely chopped
• Milk Chocolate grated for topping
Sweetened Whipped Cream
• 1 cup Thickened Cream for cream topping
• 4 tbsp Icing Sugar for sweetened cream

Instructions:
1. Using a food processor, crush the Oreos into crumbs and mix with the melted butter.
2. Divide the Oreo crumbs into 6 small glass jars or cups. I use 345ml capacity tumblers as my mousse containers. Press the Oreo crumbs into the bottom of each jar to firm up the base. Place in refrigerator to help set the Oreo base.
3. In a small glass container, add water and gelatin powder. stir to mix, then all to set over the next 5-10 minutes.
4. While gelatin is setting, pour thickened cream into a medium bowl and beat until soft peaks form.
5. Add 1/4 cup icing sugar and continue beating until stiff peaks form. Set aside.
6. In a large bowl add cream cheese and beat until smooth and fluffy.
7. Add remaining 1 1/4 cups icing sugar and beat until smooth and fully combined.
8. Add peppermint extract and mix to combine.
9. Continue beating while adding green food colouring (optional). Start with a small amount of colouring and continue adding until the desired colour is achieved.
10. Heat gelatin mix in microwave for about 30 seconds.
11. Remove from microwave, stir to ensure it is fully dissolved and set aside to cool for about 2-3 minutes.
12. Add gelatin to cream cheese mixture and mix to combine.
13. Add thickened cream mixture and mix slowly or fold through until evenly combined.
14. Add chocolate and mix slowly or fold through until evenly combined.
15. Add mousse mixture into jars over the Oreo layer. You can spoon the mixture into the jars, however I find it easier to put the mousse mixture into a piping bag and pipe the mousse into each jar. Use a spoon to smooth the mousse after it has been piped into each jar.
16. Place jars into refrigerator for a minimum 2 hours to allow to set before serving.
Sweetened Whipped Cream
1. In a small bowl beat 1 cup thickened cream until soft peaks form.
2. Add 2 tbsp icing sugar and continue beating until stiff peaks form. Add additional icing to achieve the desired level of sweetness.
3. Place cream in a piping bag and pipe cream into each jar over the mousse.
4. Sprinkle with grated chocolate and serve.

Long shot question but... do you think the actual sauce packet in Samyang Ramen (spicy Korean noodles) is full of carbs and sugar?

Ok hear me out, spicy Samyang Ramen noodles were one of my favourite go-to comfort foods before keto and after not eating it for a few months I've got such a hankerin' but not for the noodles themselvves, I just want that sweet sweet (spicy) sauce flavour.

I'm wondering... if I could make it with shiratakyi noodles instead. I was trying to work it out, and it looks like a full packet, with noodles included, is 87g carbs... and a large packet of ready to cook dry ramen is around 80g carbs. Sooo... I'm hoping the sauce it's self isn't actually that carby - especially as it's spicy asf, surely there can't be too much sugar in it, can there?

I dunno guys, I'm just so hungry for some samyang.

Searching for a true Hungarian recipe...

My childhood nanny was Hungarian and I ADORED the food she made. Lots of meat which I loved since my folks were vegetarian (and we were at home). She used to make a dish that was my absolute fave - it basically translated to "pepper stew" but I don't know the Hungarian name. I've googled, tried recipes, but nothing is quite right or the same. Request: Pizza Crust Recipe

Anyone have an amazing pizza crust recipe? The current one we use is meh. My husband loves thicker crusts - his favourite frozen pizza is dr. oetker's rustica line.

He likes thin crusts too, but it's pretty much all we get in Sweden, unless we find an "American" pizza place, or a Pizza Hut (but then the crust is so oily!).

Any recommendations would be super appreciated!

Steak With Creamy Green Peppercorn Sauce

Whenever I eat out and choose steak, my favourite sauce to add is always peppercorn sauce. This sauce is usually a standard at most respectable steak venues. For an impressive meal that is easy to cook, a barbequed steak with a creamy green peppercorn sauce is the answer. The peppercorn sauce is a perfect accompaniment to your favourite steak by adding a peppery tang in a smooth and lush cream sauce. The result will make you feel indulgent as though you have ordered at your favourite steak house. The green peppercorn sauce is quick and simple to make and a great idea for a weeknight meal.

Ingredients:
• 4 Steaks choose a good quality cut of steak and size to your preference.
• 1/2 Brown Onion diced
• 1 clove Garlic crushed
• 1 tsp Butter
• 1 tin Green Peppercorns approx 55g (30g drained)
• 1 cup Chicken Stock use stock cube
• 1 splash Brandy
• 1/4 cup Thickened Cream
• 3 tsp Corn Flour
• 1/4 cup water cold water

Instructions:
1. Cook steaks on BBQ to your preference.
2. Remove steaks from BBQ, cover with foil and let stand for 5 minutes before serving.
Green Peppercorn Sauce
1. In a medium saucepan on medium heat, add butter, onion and garlic. Cook until onion softens (about 5 minutes).
2. Add peppercorns and cook a further minute.
3. Add chicken stock, splash of brandy and any meat juices and simmer for about 1 - 2 minutes. Stir regularly.
4. While sauce is simmering, add corn flour and water into a small jug and stir to mix fully
5. Reduce heat to low setting and add cream and mix through
6. While stirring gradually add corn flour mixture to thicken the sauce to the required texture.
7. When the required thickness is achieved, spoon sauce over steak and serve.

Homemade Challah Bread Recipe

Foolproof recipe for amazingly soft challah bread.

Recipe makes 2 loaves:

  • 500 grams AP flour
  • 200 grams water
  • 7 grams instant yeast
  • 100 grams sugar
  • 40 grams vegetable oil
  • 1 egg
  • 7 grams salt

Proof yeast in 1/4 of the amount of water until it bubbles. In stand mixer add all ingredients and mix on slow to bring together, then increase speed to medium and kneed for 5 minutes until dough pulls away from sides of mixer.

Let proof (rise) in a covered bowl for 90 minutes or until doubled. After dough has doubled, split into 2, and each half split into 3 equal size dough balls.

For each loaf of Challah you'll roll each of the 3 small dough balls into long strands about 12 inches long. Braid the 3 strands (watch above video for details) and let rise for 2 hours until doubled in size.

Brush on egg wash and top with sesame seeds.

Bake at 350 degrees F for 25 minutes.

Best Bloody Mary Ever

With July 4th coming up, this seemed appropriate. Now, I'm not opposed to hard liquor by any means, but by habit I'm mostly a beer drinker. However, a Bloody Mary is actually good for you. I mean, it's got vegetables in it, right?

Ingredients:

  • 4 oz of V-8 (much better than bleh tomato juice)
  • 2 teaspoon Worcestershire
  • 3/4 teaspoon prepared horseradish
  • 1/4 teaspoon celery salt
  • Pepper, to taste
  • 2 dashes Tabasco
  • Juice of 1 fresh lemon or lime
  • 3 oz decent vodka
  • Ice
  • Celery stalk, to garnish
  • Lemon or lime wedge, to garnish

Directions:

  • In a mixing beaker or small pitcher, stir together the V-8, Worcestershire, horseradish, celery salt, Tabasco, pepper, citrus juice, vodka, and a few ice cubes. Let stand a bit to chill.

  • Place several ice cubes in a tall glass and pour the Bloody mixture over them. Moisten the tip of the celery stalk with water and dip it into a bit of additional salt to coat. Place the celery stalk into the Bloody and garnish with a lemon or lime wedge as well.

(Help) Supermarket Fruit Cake!

Hi guys, this is my first Reddit post and I'm not sure I'll get any replies but it's worth a shot: My brother's birthday is in a few days and I wanna bake him a fruit cake BUT not the traditional one like the coffee cakes, nope, I want a recipe for a specific one we once got at Kroger I think and it was suuuuper moist I think it was basically bathing in this sweet milky syrup (condensed milk maybe?) and my brother absolutely loved it. Now, I could make anything else but I really want that one cake so if anyone has a recipe for it please help! I would appreciate it a lot <3 thank you!

fried potatos and saute'd cucumber and red pepper w fried eggs

quarter 2 small/medium potatos, boil untill almost done then fry in skillet with a bit of oil. dice cucumber, toss in a bit of vinegar and sprinkle with salt, dice bell pepper, remove potatos and saute vegs in leftover oil. remove vegs and maybe add a bit of oil, spread around and crack eggs into pan. after a few minutes add some water and cover with lid to cook yolks. and eat.

I know that the BP's white sangria recipe on the menu now is white wine (Moscato), raspberry vodka, peach puree, blackberries, mint and 7-UP. Does anyone know amounts of each that BP uses? I've played around a bit and haven't been able to get it quite right yet. :)

Looking for a recipe of Chicken and Wild Rice from the restaurant Grizzly's

Title says what I'm looking for, I really want to make this soup at home as the closest Grizzly's is 8 hours from where I live. Their chicken and wild rice soup is the best I've ever had and I've tried my hand at making it but just can't get the taste just right. I'm thinking it's something in the rue that I'm not getting right but if anyone has any info id appreciate it or even if you have a recipe you think would be better!

That classic dessert from the 1970s- Watergate Salad!

I'm bringing this to my family's July 4th grill-out for a fun trip down memory lane. It's also known as Pistachio Fluff and Green Goddess. No one really knows how came to be known as Watergate salad.

1 package of instant Pistachio pudding (can use sugar free variety) 1 tub of Cool Whip 1 large can of crushed pineapple with juice 1 cup of mini marshamallows.

Fold all the ingredients together and chill for one hour.

Calico Beans is my go-to dish for potlucks and parties. And it all starts with a pound of bacon.

Ingredients

  • 1 lb Bacon
  • 1 lb Lean Ground Beef
  • 1 Onion, chopped
  • 1 C Ketchup
  • 1 C Brown Sugar
  • 1 Can Red Kidney Beans
  • 1 Can Cannellini Beans
  • 1 Can Pork and Beans
  • 1 Can of Baked Beans
  • Salt and Pepper, to taste

Instructions

  • Preheat oven to 350F.
  • Cut up a pound of bacon and cook until crispy.
  • Drain the bacon on a paper towel and remove all but a tablespoon of the bacon grease from the pan.
  • Cook a pound of lean ground beef in the pan with the bacon grease.
  • Be sure to scrape up all of the brown bits.
  • If you use ground chuck (or the like) you may need to drain the beef at this point.
  • When the beef is almost finished cooking, add a chopped onion and a little salt and pepper.
  • Once the beef is good and brown, add the ketchup and brown sugar.
  • Mix well.
  • Rinse the Red Kidney Beans and Cannellini Beans in a colander to to remove that metal can taste.
  • In a big bowl, mix together the ground beef and all of the beans.
  • Gently stir on the bacon.
  • Pour the beans into a casserole dish and bake for one hour at 350F. It doesn’t always take a full hour so keep an eye on it.

I'm trying to increse my ability to cook and improve being able to help my elderly parents with meals. So I thought, why not trade recipes! This has been in my family since my mother's step-father Dee made it. I usually add some Kalamata olives into the dough along with rosemary but those are optional. 1 1/4 cups warm water 1/2 tbsp sugar (Optional to add to the water before adding yeast) 1tbsp active yeast 1 tsp salt (I like sea salt but any works) 1tbsp olive oil. Personally, I always use extra virgin. 3-4 cups of flour. Add the yeast to the water, and add sugar once yeast starts to bloom (Unless you added it before yeast) Then add salt, oil and any additional adds you want, such as garlic, olives or rosemary. Then add to a processor/KitchenAid until dough is not very tacky. At this point, you want to make sure if you need to add more flour you do so now. Put it on a flat, lightly floured surface and begin to knead. Do so until it feels like a firm, but bouncy baby's butt. Don't question it, you'll know a baby's butt when you touch the dough. Preheat oven after an initial rise of half an hour to an hour. Depending on your location. Colder climates need more time to rise. I punch it down and repeat to get fluffier. Oven should be preheated at 375 F 190 C for 40 minutes. punch little finger dents in it, brush it with garlic oil (Just minced garlic in oil) Or with a beaten egg. (I don't eat eggs so I use oil as a substitute) Spray the baking sheet with pam, or equivalent and put a bit of corn meal if you have it. Let rise another 5 mins. Slap it in the oven and wait till it's golden brown on top! Enjoy! Looking forward to seeing your recipes!

Fresh Berries with Mascarpone Cream is my go-to dessert when entertaining.

Ingredients

  • 8 oz Mascarpone Cheese
  • 1 C Heavy Whipping Cream
  • ½ C Powdered Sugar
  • 1 tsp Vanilla Extract
  • Strawberries, blueberries, raspberries (or any berry combination)

Instructions

  • Whip the mascarpone.
  • Add the heavy cream and whip.
  • Add the powdered sugar and vanilla extract.
  • Whip until thick.
  • Taste and add more sugar or vanilla, to taste.
  • Alternate the cream and berries in individual glasses or bowls.
  • This will make about 4-5 individual desserts.
