Need vegetarian dinner ideas

I am having a vegetarian couple over to dinner Friday. Normally this would not be an issue but due to some medical issues I’m a bit food restricted. Right now I can’t eat tomato, anything very acidic, spicy foods like Mexican or things with peppers, beans, any vegetable that is not well cooked.

Help with menu ideas please! If all else fails maybe homemade Mac and cheese.
