Cubano Recipe question

Hey all, I'm prepping to make Cubanos using Babish and Chef as a source. However, I have a question regarding the pork shoulder, is it possible to cook with the bone? Recipes that I see recommend boneless, however I've heard that the bone adds more flavour. Has anyone cooked with the bone? Or is it not needed for this particular recipe? Thanks!
