Ingredients:
Oil: 1Tbs
White onion : 1 small
Garlic Cloves : 2-3
Red Bell Pepper: 1 small
Cannellini beans : 1 Can ( Washed and Drained)
Blended Tomatoes : 2 medium
Salt : 1/2 Tsp
Black Pepper : 1/2 Tsp
Cumin Powder : 1/4 Tsp
Water : 3 Cups
Soy Sauce : 1/2 Tbs
Basil : 5-6 Leaves
Chopped Cilantro
Instructions:
Prepare vegetables, Chop Garlic Cloves, Onion and Bell Peppers.
Heat the oil in a saucepan and stir in the chopped garlic.
Add Chopped onion and cook until softened.
Now add Bell peppers and cook for another minute or two.
Add in Blended Tomatoes.
Season to taste with salt, black pepper and cumin powder.
Add Cannellini beans and water and bring the mixture to boil. Reduce the heat and simmer for 10 minutes.
Add soy sauce and simmer for a further 5 minutes.
Stir in the Basil leaves and chopped cilantro. Cook until basil leaves begin to wilt, serve immediately.
