Best Jambalaya I ever made or ate.

2 -4 celery sticks, 3-4 bell peppers, 1-2 onions, 3-5 jalapenos, 6 cloves garlic (chopped super fine) saute in a couple tbsps of peanut oil or olive oil or clarified butter for about as long as it takes you to cube 2-3 chicken breast and cut a pound or so, three links,of this sausage I get at Costco, into 1/4 inch rounds. Dump the chicken and sausage into the wok, and yeah, you're gonna need a big wok, and keep sauteing it until the chicken is like 3/4 cooked. WHile that is happening, make 4 cups of chicken broth, get that boiling, and then add 3 cups of that to the wok (The fourth cup is in case the mix goes dry before the rice cooks). Add 14 ounces of crushed tomatoes, like half a big can, a cup and a half of white rice, a bay leaf, 3-4 tbsps of cajun spice, tbsp thyme, thbsp or 2 of cayenne. cover and simmer until the rice is cooked, stirring occasionally. Like 1/2 hour, 45 minutes or so, keep an eye on it. Also grab the sriracha bottle and squirt some in, to taste, i usually shoot a line around the whole wok, and add a tbsp black pepper, pinch of salt. Peel a pound of shrimp while it's simmering, and then add the shrimp after the rice is cooked through, the shrimp will cook in under five minutes. This is seriously the best thing I have ever ate or made, it's straight amazing.
