My mom's best friend is getting married soon and I was planning on baking them some goodies as an engagement gift. I'm a broke college kid so baking people stuff is usually my go-to gift! The fiance has just been diagnosed with a TON of food intolerances, so my mom's friend has been struggling to find recipes that he can safely eat that are the kind of food that used to be his favourite (bread, comfort food, sweet treats). I was hoping to make them some sweet treats they could both eat together, and send them the recipes so my mom's friend can make them again in the future.
The list of his food intolerances: all grains, all dairy, rice, all nuts, all yeasts, potatoes, and eggs. I'm fairly sure at this point that he can eat chickpeas, beans, and coconut.
Does anybody know of recipes that he could eat? I was thinking of doing chickpea flour thin mints and chickpea flour cardomom-chai sugar cookies. I was also hoping to find a vegan meringue recipe, if that even exists; meringues are my specialty. Do vegan eggs get peaks??? No idea.
I shop at Whole Foods and a Korean grocery store so feel free to give recipes with really obscure ingredients, if they fit the restrictions. I would really appreciate some help because I am struggling and I really want them both to be able to enjoy their gift :)
