I worked in a restaurant a few years back during uni and the chefs made a staff curry that was nothing like the food that they served to the punters. I've searched high and low but can't find it. Basically they fried onion, garlic/ginger with cinnamon and cardamom pods for the base then added the chicken with only cumin powder, coriander powder and turmeric powder, I have tried to replicate it but I can't get the spice ratio right. Does anyone have any pointers? Thanks
