Cheap, simple, healthy, low-cal tuna sandwich recipe for lunches

I LOVE tuna but don't like how tuna sandwiches usually contain mayo, which is obviously not that healthy. I created this recipe to replace a lot of mayo and tuna with low calorie greens but to maintain consistency and flavor.

In a large bowl, mix:

  • 1/2 red onion

  • 1/2 green pepper

  • 2 celery stalks

  • 4 cans of tuna (drained of water) (12 oz total)

  • 25ml balsamic vinegar

  • 25ml dijon mustard

  • plain yellow mustard to desired consistency

Add to desired bread.

Should make approximately 8 sandwiches for just under $5

  • Note: Green peppers can be substituted for more celery, but do not substitute plain yellow mustard for any other mustard, or the taste will overpower all other ingredients

  • Note: Skipping either the Dijon mustard or the balsamic vinegar will make the recipe taste bland.
