What’s your go-to risotto recipe?

I saw an arancini recipe on this sub and it dawned on me that I’ve only know how to make “red” risotto (rice, garlic, red wine, chicken stock, and homemade marinara). It’s what I grew up on and never really tried anything else. I’m sure that arancini uses a different type. What are some variations of risotto that are your go-to for arancini OR just the risotto itself?
