Cake
- Wet Ingredients
- ½ C Shortening
- 1 C Sugar
- 3 Eggs
- 2 tsp Vanilla
- ½ C Hot Water
- Dry Ingredients
- 2 C Flour
- ½ tsp salt
- 1 tsp baking soda
- ½ tsp baking powder
- Icing Recipe
- 1 Tbsp Vanilla
- 1 C Shortening
- 4 C Powdered Sugar
- 1/4 C + 2 Tbsp milk
Cake
- Pre heat oven to 425°
- In a large bowl combine and mix all wet ingredients EXCEPT HOT WATER
- In medium size bowl combine dry ingredients
- Add ½ dry ingredients to wet ingredients and mix. Repeat with 2nd half of dry ingredients.
- Add Hot water and mix
- I used a 2” cookie scoop for the whoopie pies. Use a lightly greased or parchment covered cookie sheet.
- Bake for 6 to 8 minutes.
Icing
- Using a mixer combine shortening and powdered sugar
- Add powdered sugar 1 cup at a time, add milk and vanilla a little bit at a time after each cup of sugar
- On med/high speed mix icing until incorporated
- Scrape sides of bowl with spatula
- On high speed mix icing for another 2-3 minutes
- Fluff with spatula
