Hi all. We a few times a year have lunch at a friend's who makes the best potato salad. It's dry, probably some mixture of oil, lemon juice, mustard, shallots or green onions, salt, pepper, and maybe a hint of vinegar? Maybe not. Anyway, whatever mix they use is magic. It's just great. And my friend sadly can't be convinced to share any of his recipes :( .
All of my attempts at recreating it have been pitiful. Many dry potato salad recipes I find online are hyper-ethic, with many specific Russian or German ingredient or style flourishes that I'm not looking to emulate. Do any of you have favorite dry potato salad recipes that you'll be willing to share? Thanks!
