Smoked gouda creamed Spinach recipe help

I once made smoked gouda creamed Spinach that was absolutely amazing.

It was so cheesy, stringy like picking up a slice of pizza. Creamy too.

It was also a beautiful color that plated very well as a bed for the filets to be served on.

I have not been able to find the recipe again, nor recreate it.

So far it is runnier and the sauce is green.

I'm thinking blanching, ice bath, and way more cheese would fix it. Figured I'd ask you all first!
