Fried chicken creamy pasta

  • Leftover fried chicken using Chef John's recipe. Ranch dressing powder in the flour makes it awesome.

  • Onions and garlic, rosemary cooked a bit, deglazed with some white wine (I used some random fruity Reisling, which shows it doesn't really matter).

  • Finished with more wine, a couple splashes of pasta water, heavy cream, pesto, butter, parmesan, salt, crushed red pepper.

The only technique I use is from 'Cookin with the Blues'. This guy's food isn't super authentic, but I love how he just has the flames on full blast and he's really cooking. When I make this pasta dish I like to do as he does in the end, which is don't mix it all together until you drop in the noodles at the very end. https://www.youtube.com/watch?v=8xOvU6GHkFY

All those creamy/crunchy bits of fried chicken batter all through it was great. I think using refrigerated fried chicken here is key, too. It's more set up to handle the toss.
