The best brownies I've ever made

I've experimented a lot with brownie recipes, and this is the best one I've done.

Ingredients:

• 400g/14oz 70% cocoa solids chocolate • 250g/1 cup + 2tbsp unsalted butter (plus extra for greasing) • 300g/1 1/2 cups granulated sugar • 300g/1 1/2 cups dark brown sugar • 6 eggs • 1tbsp vanilla extract • 1tbsp freshly brewed coffee • 50g/1/2 cup dutch processed cocoa powder • 150g/1 1/4 cups flour (plus extra for greasing) • 1tsp salt

Method:

  1. Set the oven to 180°c/350°f and grease a 33x23cm/13x9 inch baking pan.
  2. Melt the butter and chocolate in a heatproof bowl over a pot of simmering water. Once melted, if you have one, transfer to the bowl of a stand mixer. If you don't have one, then you can keep it in the same bowl.
  3. Add the sugars and mix them until completely incorporated.
  4. Add in the eggs one at a time and beat until ribbons form
  5. Add the coffee and vanilla extract and beat until fully incorporated
  6. Sift in the cocoa powder, flour and salt, and fold them in until completely incorporated. Make sure the air that has been beat into the eggs hasn't been deflated. This is also the point to add any mix-ins, like chocolate chips, fruit etc.
  7. Transfer to to the pan and bake for around 35 minutes. If you insert a toothpick, some mixture may still come up, but that's ok. It probably is fully cooked. Just use your common sense and you should be ok.
