How to make fufu (West African dumpling)...

This is the easy Americanized way. If you were making fufu in any West African country, it'll take you hours to prep, cook and pound in a mortar.

Thankfully, you can find fufu flour at your local African grocery store and prepare them in a microwave like I did here.

1) Add fufu flour to a bowl (preferably a glass bowl), add twice the amount of water. So for 1 cup fufu, add 2 cups water.

2) Mix using your hands or a wire whisk until the you achieve a smooth consistency.

2) Microwave for 20-30 minutes. Remove from microwave and pound at 5-6 minute intervals.

 2.1) If you overcook before pounding, it becomes too hard, pound in 5 minute intervals. 

3) Form into a shape you like (usually a ball) and serve with your favorite soup or sauce. ......

Try fufu with okra sauce, peanut soup, palm butter soup or palava sauce. It's incredible!
