Question re Thai basic eggplant! My wife and I got hooked on Trader Joe's frozen version so I want to try cooking it in bigger batches. A recipe on Epicurious uses Hoisin and Tamari and other ingredients the TJ's one doesn't. Do you have a recipe you like or tips? More details below...

The TJ's one uses only rice bran oil, soy sauce, and water as liquids. I don't have that oil, but I did pick up hoisin, and tamari.
Also online recipe says you can use Italian eggplant and regular basil, which I picked up since they were available locally... I'll head to Chinatown for Japanese or Thai eggplants and Thai basil after trying it with these ingredients. I do know from other recipes the Thai basil is awesome.

Anyhow, any tips appreciated if you've made it before and liked the results!

I'll try cooking it up tonight or tomorrow and report on results if anyone is interested.
