What can I use to tone down super extra sharp velveeta cheese?

The grocery store had a bunch of velveeta on discount, mostly the extra sharp cheddar. I love me my sharp cheddar, but it’s too strong with too harsh of a bite. I’ve got a freezer full and I’m going to the store tomorrow to get some rice and veggies to melt it for, but what can I do to take out such a sharp bite? A kind of white cheese right? Sadly don’t like Colby jack. Do I also just stick the cheese in the crockpot on low?
