So I bought a pair of lamb hearts because cooking it seemed fascinating, but all the recipes I find call for braising them. I know that hearts are pure muscle and extremely lean, so I have trouble believing that you can get them tender. So this is kind of a mixed question, can anyone confirm that lamb hearts can be braised tender, and does anyone have some good recipes for them?
