What other ingredients does my local Habchi use on their chicken?

I have a local Hibachi that uses a Hibachi Grill to cook their chicken. I realize that they use some sort of white marinade for the chicken and I'm assuming that is cornstarch after researching about different Chinese cooking techniques. I know why they use the cornstarch but I'm confused as to what other ingredients they might use to marinate the chicken that they use and get the texture that they want. Does anyone have any idea as to what other ingredient in addition to cornstarch that are used for chicken when habachi grilling?
