I tried making kettle corn at home yesterday and it didn't turn out too good. Kinda burnt even though I was really careful. So today I decided to try caramel corn and add some honey to the mix. It came out DELICIOUS!
Ingredients

1/2 cup unpopped popcorn kernals (I used an heirloom variety)

1/4 cup raw unfiltered honey (I used local hive's wildflower)

1/4 cup of brown sugar (I used dark)

1/4 cup of vegetable oil

1/2 cup butter (I used salted but unsalted would work too, just add more salt later). You can use less butter if you'd like but I think this is a good amount to ensure perfect coverage

pinch of kosher salt

1 tsp vanilla extract

1/2 tsp baking soda
Instructions

Pop popcorn in large saucepan using 1/4 cup of vegetable oil. Place a couple kernals in the oil while it heats and when they pop the oil is hot. Keep covered with lid and shake vigorously until popping slows way down. Place a couple kernals in the oil while it heats and when they pop the oil is hot. Move popcorn into large mixing bowl.

Take butter, honey, brown sugar, and salt and melt together into small saucepan. Keep on low heat and bring it to a simmer. Once at a simmer, stir continuously for 5 minutes. Remove from heat.

Take baking soda and vanilla extract and quickly mix it with the sugar and butter mixture. It will start to foam up.

QUICKLY begin to pour the mixture over the bowl of popcorn, mixing it quickly and thoroughly to coat all the popcorn before it cools.
Now you're done! Let it cool for a bit so it isn't so sticky, then enjoy.
Makes like 3-4 quarts of honey caramel popcorn
