Ingredients
- 4 x Chicken breasts
- 2 x Onions
- 2 x peppers
- 1 x Chorizo sausage
- pack of cherry tomatoes
Seasoning
- 1tsp Rosemary
- 1tsp Salt and Pepper
- 1/2 tsp Chilli flakes
- 1tsp Garlic granules
Method
- Cut the onions and peppers into quarters (remove seeds from the peppers!).
- Cut the crap bits off of the chicken breasts.
- Cut the chorizo sausage into bite size pieces.
- Put all of the above into a roasting tin along with the tomatoes.
- Pour a generous amount of olive oil over the lot along with all the seasoning items.
- Put it in the oven at 180 degrees for 50 minutes or so (this was done in a fan oven)
Barely any tidy up and tastes delicious, pretty damn healthy as well. Cooked it a couple of days ago for my partner and it's all she'll go on about.
