I'm looking for a recipe for this type of Fruit Bar.
A local bakery had these when I was a kid in west Ohio and I can find them now near that location but the bakery won't share the recipe.
Characteristics: - Baked as long slabs on a cookie sheet (maybe 2-3 "slabs" spread across the width of the sheet extending the length of the sheet). After they come out of the oven they are glazed and cut into rectangular bars. The one in the photo is broken in the middle but should give you some idea. They are more like big rectangular cookies cut into slices than a traditional "bar" cookie. - The consistency is soft and somewhat chewy but more "cookie-like" than "bar-like". They firm-up with time and if left out to dry. - Cookie has a great, spicy taste - probably with some combination of cinnamon, ginger, nutmeg, all-spice, etc.. The dough is pretty brown so likely that brown sugar is used. - The "fruit" appears to be raisins but is almost date-like. If raisins, they are well-soaked and good quality. They are very soft and chewy with none of the typical raisin chewiness or grittyness. As I said, almost like dates but with out any grittyness or date skin texture.
They don't appear that complicated. With enough trial and error I could probably come close by starting with some kind of ginger/spice cookie but a recipe would be a big help.
