I'm in NC and facing a bit of adverse weather tomorrow, so I'll likely be working from home. The good part about this is I can make breakfast!(also I luckily have a gas stove in case loss of power) I love southwest style omelets(anything spicy and cheesy) but I dont have any of the "normal" breakfast meats. I have leftover pulled pork, smoked sausage, and ground turkey. Does anyone have any good recipes involving any of these meats? I have lots of frozen or canned veggies that I can use with it depending the recipe. Thanks in advance!
