Happy weekend, party people!! For LDW, I ended up making some fried pickles from scratch. I think it was my first time actually doing anything fried, come to think of it (that can't be right... Lol). Anyways, I seemed to have a bit of an issue with my eggwash seeming to be a little too "goopy" in my mind. I found that there seemed to be an issue with the egg adhering to the pickle, which led to an issue with quite a bit of egg being left in the flour mixture.
I did only use 2 eggs (and a couple squirts of Tapatio, cuz... duh), no milk. Was this the issue? I whisked with a fork, and did so for a good minute or two, and everything looked uniform. I left the pickles out to dry on a paper towel for a few hours to remove some moisture prior to starting in hopes of a better outcome.
In the end, these homemade pickles were thebomb.com, I must say, especially for no recipe. Can't wait to make them again, just hoping for a little better result with the eggs. Sorry for no pic, they didn't last long enough :)
