Tonkatsu Pork

Tonkatsu pork is a dish that is often found in Japanese restaurants. This is a fairly easy to make version that provides a good substitute to make at home. The pork loin steaks are initially coated with egg & breadcrumbs, then fried to a golden brown colour. They are then oven baked to finish the cooking process. The Tonkatsu sauce is a delightful blend including tomato sauce, soy sauce, white wine, mirin & Worcestershire sauce. These flavours blend superbly and really enhance the dish. Served with Jasmine rice and shredded cabbage and you have a very tasty Japanese inspired meal.

Ingredients:
• 4 Pork Loin Steaks about 600g-700g, so may be more steaks depending on size
• 2 Eggs whisked
• Plain Flour to coat pork steaks
• 1/2 tsp Salt
• 1/2 tsp Pepper
• Breadcrumbs to coat pork steaks
• Vegetable Oil
• Jasmine Rice to serve
• 1/2 Green Cabbage shredded
• Spring Onions to garnish
Tonkatsu Sauce
• 1/2 cup Tomato Sauce
• 1/2 cup White Wine
• 2 tbsp Worcestershire Sauce
• 2 tbsp Soy Sauce
• 1 clove Garlic crushed
• 1/4 tsp Ground Ginger
• 1 tsp Curry Powder
• 1 tbsp Mirin
• 1 tbsp White Sugar

Instructions:
1. Pre-heat a fan forced oven to 200°C (400°F).
2. Whisk 2 eggs together in a small bowl.
3. Add flour, salt and pepper to a separate bowl and mix together.
4. Add breadcrumbs to a third bowl.
5. Coat each pork steak in flour, then dip into the egg mixture and finally coat with breadcrumbs. Set aside on a plate.
6. Heat vegetable oil in a large frying pan on medium high heat and cook each the pork steaks until golden brown each side. This will take about 2-3 minutes each side.
7. Place steak on a baking tray line with baking paper and cook in oven for about 7 minutes or until pork is cooked through.
8. While pork is cooking make the tomkatsu sauce.
9. Add tomato sauce, white wine, worcestershire sauce, soy sauce, garlic, ginger, curry powder, mirin & sugar to a small saucepan, stir to mix through and bring to boil.
10. Reduce heat and simmer for about 5 minutes then remove from heat.
11. When pork is cooked, remove from oven and slice into strips.
12. Divide pork among bowls and serve with shredded cabbage on a bed of jasmine rice.
13. Drizzle tonkatsu sauce over the pork strips. Drizzle remaining sauce over the rice in each bowl.
14. Garnish with spring onion and serve.
