I could do with a name for this thing. If anyone's got any ideas, let me know.
Serves 4 (Or 1 if you're like, really hungry)
Stuff You Need:

Some sort of wheat bread, 8 slices

Some turkey, deli slices or chunks, roughly 1/2 lbs

Provolone or similar easily-melted, mild cheese, 4-8 slices (basically enough to make a layer on your four sandwiches)

One medium-sized sweet onion

1/2 lbs mushrooms, sliced

Olive oil
-
1 1/2 tbsp balsamic vinegar
-
1 tbsp soy sauce
-
3/4 tbsp Dijon mustard
-
Salt
-
Pepper
Notes:
The balsamic and soy sauce amounts may be slightly too high. I kinda just eyeball them. If this recipe seems like too much, just add to taste.
If you're doing full deli slices of turkey, I suggest browning that first in the pan with a little bit of oil or butter, as well as some salt and pepper. Make the onions and mushrooms as per normal, and then lay the turkey on the sandwich and top that with the onions and mushrooms.
This is by no means intended to be a healthy sandwich.
Make the onions and mushrooms:
Start with a lightly-oiled pan on medium. Dice up the onion. Throw that in the pan with the mushrooms, and add half of the balsamic vinegar and soy sauce. Saute that until the onions are caramelized and the mushrooms are tender. You can stir in the Dijon here, or just put it on at the end.
Alternately: after adding the soy sauce and balsamic vinegar, add some water to about half-cover everything. Cover the pan with a lid for about 3-5 minutes. Uncover and stir to prevent burning, and let the fluid reduce into a light sauce.
Add the turkey:
Start toasting your bread. After the mushrooms and onions are done, chop up the turkey and just toss it in. Now add the rest of the balsamic and soy sauce and stir everything in until it's all evenly coated.
Put it together:
Take about 1/4 of this mixture and put it on your sandwich. Top with cheese to evenly cover. Keep the sandwich open to allow it to cool a bit (and melt the cheese). Once it's cooled to an edible temp, add some salt and pepper to taste, put the top slice on and eat.
