This was inspired by Ken Rollins YouTube channel where he showed how to make Cowboy Sloppy Joes. I used ground chicken and made some other changes.
Ingredients
1 lb. ground chicken
1 15 oz can Rotel diced tomatoes with green chilles, partially drained
3 oz roasted red peppers chopped up
8 oz of whatever BBQ sauce you like
3 Tbsp brown sugar
Directions
- Brown the ground chicken til no longer pink in a skillet, drain the liquid
- Pour in the BBQ sauce, mix it in well. Put some more in if you like it sloppier
- Put in the red peppers, diced tomatoes, and brown sugar. Mix well.
- Simmer for 25 minutes until thickened.
Put it on whatever buns you like, I prefer potato with some dijon mustard.
