My neighbor was recently widowed and is caring for 2 children on his own. He is settling into life and managing the best he can. Kids are mostly subsisting on frozen foods and spaghetti. Thought it would be nice to give him a collection of easy dinner recipes. Sunday meal prep is way out of his league right now. Kids are pretty picky, corn and peas etc as vegetable mainstays. Avocado would be a shocking foreign food, as would anything with spice like chili.
I am adding poached chicken, fast chicken pot pie, smoked sausage hash, broccoli cheese soup, sheet pan chicken and vegetables, oven London broil, taco salad. Would love any ideas you have!
