I hope this is the right sub to ask this-- I was looking to make BraveTart's cheesecake, but didn't want to have to spend an additional $35 for a tall cake pan that won't see too much use. I will likely have to use a 8x3 or 10x3 pan instead of the taller 8x4 that the recipe describes. Has anyone done this? Does anyone have an estimate on how this might change the cook time of the cake, and if/how much I might need to readjust the amount of filling I make? Thanks!
