The Quest for the perfect Tikka Masala

My favorite curry will always be Tikka Masala. For years I have tried many different recipes and none of them have done it for me. Out of all the recipes I've tried, I took certain elements from each one to come up with this one below. I am always trying to improve it so if anyone has any suggestions please let me know.

Lamb Marinade:

2 lbs lamb cubed

1 cup full fat yogurt

Juice from 2 lemons

1/2 tsp turmeric

2 tbs spoons of fresh garlic ginger paste

2 tsp Kashmir chili powder

2 tsp paprika

2 tsp coriander powder

2 tsp salt

Gravy:

4 tbs Ghee

8 cloves of garlic, grated

2 Birds eye chili/thai chili

2 small white onion or 1 large one, minced finely

2 cups heavy cream

16 oz of tomato sauce

4 tsp ground cumin

4 tsp paprika

1 tsp fresh made garam masala

1/2 cup fresh cilantro, minced

2 tbls fresh mint, minced

1 1/2 tsp salt or to taste

1 tsp freshly ground black peppercorns

2 tsp honey

1 tsp red Kashmir chili powder

Instructions:

Let lamb marinade sit for over 4 hours

Broil lamb until done

Add ghee, onions, and chilies into hot sauce pan. Cook until onions and chilies have reduced and softened.

Add garlic, cumin, paprika, and garam masala. sautee for another minute.

Add cream and tomato sauce. Simmer until sauce has thickened

Add the cooked lamb, cilantro honey, and remaining spices.

Let simmer for another 30 minutes
