[REQUEST] These peanut-butter chocolate-chip GF granola bars from my hometown

There's an upscale grocery store in my hometown that makes amazing granola bars. Every single time I head back to visit family or friends, I go buy a dozen of them. I would love to be able to make them myself-- there's nothing magic about the ingredients list, and it should be pretty simple to figure out a copycat recipe, but the few times I've tried, I've never gotten close.

The ingredients list, as printed on their in-house label:
* oats
* agave
* salt
* cinnamon
* almonds (ground, I'm pretty sure)
* semi-sweet chocolate mini chips
* vanilla
* canola oil * maple syrup
* coconut
* peanut butter
* dates

Like I said, nothing magic, but I can't figure out how to recreate them. They're clearly made by pressing the mixture ~1 inch (2,5 cm) deep into a full baker's sheet, baking, then slicing into bars for individual packaging.

They're quite dense and moist (no crunch); they take a good bit of chewing thanks to the oats, dates, and coconut, but it's more like the density of a semi-hard cheese-- not super dense like a Clif bar. The cinnamon flavor is pretty prevalent; the maple and vanilla are there if you're looking for them but not overwhelming otherwise. The agave adds indiscriminate sweetness, and I'd probably want to tone that down just a bit if I can recreate these. I can't taste or feel the canola oil, but I'm pretty sure it's responsible for these bars staying moist despite all the dry ingredients and how dense they are. I can't taste the coconut, but I can definitely feel the resistance it adds when chewing; it's a bit of a workout for the jaw.

Does this help? Can anybody point me to a recipe or at least a starting point?
