Looking for suggestions for vegetarian congee

I have a couple of toppers chosen such as bell peppers, fried onions, green onions, fried eggs if they would rather not have the onions, and I wanted to try umeboshi. I'm going to add mushrooms and ginger to the congee for flavor. I'm looking for suggestions for what else to add for good flavor.
