Today I was lucky enough to pick 5kg of gourmet kalamata olives. I've been researching some methods of curing them but wondering whether anyone could suggest a method they have had success with? Also seeking recipes for marinating the olives after they're cured (counting my eggs before they hatch haha) Thanks!
